Vegetarian/Plant Based Bak Kut Teh: Veggie Bliss Feast


Hey there, beautiful souls! I hope you're all doing splendidly. Me? Well, I just celebrated my 57th birthday a few days back. Can you believe it? How does it feel? Let me tell you, it feels absolutely fantastic. Unlike when I hit the big 5-0 seven years ago, feeling like the world was crashing down on me because, you know, half a century and all. Back then, I was filled with this unnecessary dread, all thanks to the voices around me whispering that life post-50 is just about serving your family. You know, the whole shebang about being the devoted wife and mother.

Those whispers? They came from everywhere - from my mum, my aunts, my in-laws, and even from random encounters. It seemed like everyone had the same script: an Indian woman's destiny is to be married off and become a selfless servant to her husband and kids. But you know what? Over the years, I've learned that I don't have to conform to those outdated notions. I'm breaking free and forging my own path (VEGETARIAN BAYAM MASAK LEMAK).

Keeping your culinary journey vibrant and exciting is key to discovering new flavors that delight your taste buds. While comfort food holds a special place in our hearts, embracing the diversity of global cuisines can open up a world of gastronomic pleasure. Indonesian cuisine (YOGYAKARTA CUISINE) isn't just about meat dishes; it offers a plethora of vegetarian options that are equally satisfying. Take, for instance, Indonesian Potato Tauhu (Kentang Tauchu), a dish that exemplifies this culinary versatility. It's a creation born out of my perpetual quest to innovate in the kitchen, blending potatoes with chili tauhu (fermented soybean paste) to create a dish that's hearty and full of savory goodness.

Urap Kangkung (Water Spinach Salad) - Vegetarian


When you think of kangkung, also known as water spinach, Kangkung Belacan probably comes to mind. It's a beloved dish among Malaysians and a staple in Chinese restaurants. This tasty treat is also a hit in Indonesia, where it's called "Kangkung Tumis Belacan" or "Cah Kangkung Terasi." Terasi, the Indonesian version of belacan, is something I've learned from my Indonesian friends, and I'll share that recipe with you too.

In both Malaysia and Indonesia (MOUNT MERAPI JEEP RIDE), kangkung is enjoyed as a raw salad, boiled and paired with sambal belacan. During my time in Indonesia, I discovered Urap Kangkung and brought the idea back to Malaysia, creating my own vegetarian version. This will be the highlight of today's recipe (YOGYAKARTA TASTES). Nava K's Palak Paneer & Spinach Tofu Variations

Paneer, made from milk, is more of an occasional treat for me. Unlike in India (CHENNAI DISCOVERY & NEW DELHI REVELATION), where paneer is very popular, tofu, made from soybeans, is my go-to as a Malaysian Indian. It's a favorite in my house, no matter what dish it’s used in. In India, as far as I know, people make paneer at home. I did try making paneer once, but considering the time involved, why bother when you can buy paneer from Indian grocers? We can debate until the cows come home about whether store-bought or homemade paneer is better. You do you! For me, cooking is about saving time, not impressing others.

No matter how many times I've attempted to master Chinese-style stir-fried veggies, the results have been less than stellar. Sure, they’re edible, but they lack that restaurant-quality crunch and flavor. Ever wondered why? Here’s the secret: in Chinese restaurants (CHINESE HERBAL SOUP), vegetables are stir-fried over blazing high heat, a technique known as "wok hei" or "the breath of the wok." This involves constant stirring and tossing, which imparts a distinctive flavor and keeps the veggies crisp. They also use large cast iron woks and the right seasonings to achieve this perfection.

Mughlai Style Vegetarian Korma: A Taste of Royalty

With the mushrooming of Indian stores (VARANASI GANGES & NEW DELHI REVELATION) these days, it's amazing to see the wide variety of spices and sugar available. Beyond the diverse spice mixes, these stores offer ready-made products that simplify our cooking. Each visit to these stores leaves me eager to try something new. Recently, I came across a Mughlai Korma spice mix that piqued my interest. The best part is, the recipe is conveniently listed on the box. You can choose your preferred vegetables, such as potatoes, carrots, eggplant, long beans, French beans, and more.

Using this spice mix simplifies the entire process of making a Mughlai Style Korma Curry. It's straightforward and easy to follow. The key, as highlighted in the instructions, is to fry shallots until crispy, crush them, and add them to the curry (MYSURU VIBES & CHENNAI DISCOVERY) base for a rich, dark golden color and thickening. Yogurt adds lusciousness, while ghee imparts a nutty, slightly caramelized taste with a hint of sweetness, enhancing the depth and complexity of the dish. Vegetarian Bayam Masak Lemak (Spinach Coconut Stew)


Isn’t it fantastic when you have people like Ms. Nava who can convert even Malay dishes to a vegetarian version (VEGETARIAN ASAM PEDAS)? I can’t tell you exactly how many among the Malays are vegetarians, though within the Malay community, dried shrimp, dried anchovies, and eggs might be considered vegetarian and added into their cooking, such as in masak lemak. That said, they do enjoy a lot of raw salads with sambal belacan, which I love too. 

Among the Chinese, more people are becoming vegetarians, and among Indians, it's quite common. For religious occasions or specific days, many Indians choose to be vegetarian as a way to honor their gods. It’s like a trend - one person becomes vegetarian and influences another. There's also a belief that being vegetarian makes you more religious and that you'll go to heaven, unlike Ms. Nava, who humorously says she might head to hell. But? You can decide what to say after the "but" because I’m done talking.

Something that I repeat regularly is that I love eggs. They sort of complete my meals. Enough said, I suppose, because I have nothing more to say about eggs, and today, eggs will be featured in curries. I will share with you two types of egg curries, both with potatoes, and also give you another option for how you can elevate your egg curry with vegetables.

That is not all. Let's do it up to a complete egg set meal, including a rice dish and a veggie dish that you can consider pairing with your egg curry. The final day of my 5-day, 4-night escapade has arrived (BOROBUDUR ETERNAL LEGEND & YOGYAKARTA REGAL WONDERS). Tomorrow morning, I’ll  be heading back to reality, back to the daily grind. As much as I'd love to keep traveling forever, the truth is, it's time to return home. But not before I embark on my last adventure in Surakarta, also known as Solo.

Yogyakarta: Regal Wonders and Indonesian Tastes

It's time to talk about the buffet breakfast at Harper Mangkubumi, and trust me, you're in for a treat! I haven't yet introduced you to this culinary delight, and now is the perfect moment (JOGYAKARTA EXPOSURE). By now, you probably know how much I adore Indonesian cuisine and our local Malay Malaysian food. Oh, yes, please! The buffet breakfast at Harper Mangkubumi was a feast for the senses during my stay (COLOMBO DISCOVERY & NEW DELHI REVELATION). 

The variety was astounding, even featuring different Jamu concoctions, those traditional herbal drinks. Although I’m not a big eater and not usually a breakfast person, I couldn't resist sampling the array of dishes. Such a sensational meal, including the desserts that left me in awe. I know I'll miss this breakfast spread (HOKKAIDO WANDERLUST) once I leave, and I'm sure you'll agree with me after seeing it for yourself.

After an action-packed morning filled with thrilling adventures (MOUNT MERAPI JEEP TOUR), lunch was a much-anticipated respite. With a sparse breakfast and energy spent, I eagerly looked forward to a hearty meal. Finally (SEOUL THROUGH MY EYES & CHENNAI DISCOVERY) we arrived at Restaurant Timbul Roso, albeit a bit later than planned. The stunning rustic ambiance, highlighted by rich wood tones, made me feel as if I had walked into a luxurious home in Jogjakarta. I longed to sit outside amidst the mini nature jungle, but our group of four opted for the comfort (OSAKA SUNSETS) of the indoor dining area.

Mount Merapi Jeep Tour: Rugged Adventure

Adventure was calling, and I was ready to answer. The Mount Merapi Jeep Tour promised an experience (JOGYAKARTA TEMPLES) like no other, and while my previous travels had already seen their fair share of thrilling escapades (HOKKAIDO SNOW MOBILE & VARANASI GANGES), I was eager to see what this adventure had in store. As we arrived at the starting point, the sun blazed overhead, and the air was thick with dust. Grateful for my trusty scarf- a staple of my travel gear - I wrapped it around my face and prepared for the ride (CAPE TOWN SEAL ISLAND & PRETORIA MOMENTS). 

Mount Merapi, Indonesia's "Mountain of Fire," loomed majestically before us. This active volcano, near Yogyakarta on the island of Java, is infamous for its frequent and powerful eruptions that have shaped the surrounding landscape and the lives of local communities for centuries. Its fiery temperament has caused extensive damage and loss of life, yet it remains an integral part of the region's culture and spirituality. Those brave enough to hike its slopes are rewarded with breathtaking views and a profound appreciation for the raw power of nature.

Our day began at the crack of dawn in Borobudur (BOROBUDUR ETERNAL LEGEND), capturing the essence of our journey to Jogjakarta. This iconic site, the highlight of our trip, was just the beginning (SOUTH AFRICA PRETORIA MOMENTS) of our temple exploration in Central Java. A short 2 km trip brought us to Candi Pawon Temple, a lesser-known but equally fascinating Buddhist temple. This small yet impressive structure, believed to be a royal tomb, remains a mystery (MYANMAR FROM MAE SAI) as to who might be buried there.

Borobudur - Yogyakarta: The Eternal Legend

With barely four hours of sleep (Jogyakarta The Kickoff), I was were up and ready, heading to the lobby by 4 a.m. A packet breakfast awaited me - two sandwiches and some cut fruits, enough to tide us over since we'd miss the hotel's breakfast service. By 4:45 a.m., we arrived at the entrance of Borobudur Temple.

Borobudur Temple, located in Central Java, Indonesia, is a monumental Mahayana Buddhist temple and the world's largest Buddhist monument. Built in the 9th century during the reign of the Sailendra Dynasty, this UNESCO World Heritage Site is famed for its intricate stone carvings, stunning architectural grandeur, and unique design that symbolizes the Buddhist cosmology with its three tiers: the world of desire, the world of forms, and the formless world (Pretoria South Africa Moments).

Yogyakarta - Indonesia: Just The Kickoff

Joining a group of five friends, one of whom took charge of all the arrangements (Pretoria Moments & Cape Town Nature Stunner), including our sightseeing, I embarked on a five-day, four-night adventure to Indonesia. Despite the person’s planning, I still made it a point to contact the travel agent to ensure I had a single occupant room (Korea Through My Eyes). With a mid-morning flight, I was up by 5 am and arrived at Kuala Lumpur International Airport by 7 am. After a flight delay, we finally took off, landing at Adisutjipto Airport.

Upon arrival (Osaka Sunsets & New Delhi Revelation), we were greeted by our tour guide, Pak Adi. Lunch at Sekar Kedhaton Restaurant set the lovely tone for our trip. The rustic, woody ambiance complemented the delicious spread of achar (pickled veggies), stir-fried vegetables, fried chicken, sweet and sour fish, fresh fruits, and buah salak for dessert. The highlight for me was the sambal, which I couldn’t get enough of, especially with the keropok (fried fritters). Wow! The spicy power of Indonesia, which I had heard about from the helpers who come over to clean my house, was now validated after tasting it.

Malacca: Magnetic Sightseeing Trail

Taking a pause from sightseeing in Malacca (PORTUGUESE SETTLEMENT) or Melaka, the historic gem of Malaysia, we found ourselves diving into local cuisine and switching hotels, all while giving our legs a much-needed break. Our adventure resumed with renewed energy, revealing meaningful and captivating sights that made us feel like explorers from a distant land, in this state.

Christ Church
Christ Church Malacca is a notable historical landmark in Malacca, Malaysia, showcasing Dutch colonial architecture. Built between 1741 and 1753, this red-bricked church commemorates a century of Dutch rule and serves the local Protestant community. Its Dutch design, original handmade pews, and an early 18th-century brass Bible add to its charm. We spent time inside, offering prayers and absorbing the serene atmosphere. The church’s tranquility provided a reflective pause, though our exploration soon continued. Don't miss the nearby clock tower, a significant historical feature connected to Christ Church.

Casa del Rio Melaka: A Night of Decadence and Daydreams

In the middle of our Malacca adventure (MALACCA'S FOOD FIESTA), we got this wild idea to switch hotels. No, nothing was wrong with our current digs, but the explorer in us just had to see what else was out there. So off we went, strutting down Jonker Street, popping into hotels and homestays like we were on some kind of luxurious treasure hunt. Spoiler alert: none of them clicked with us.

After looping around Jonker Street and finding nothing that screamed 'home away from home, I had a lightbulb moment. "Why not Casa Del Rio?" I suggested. The place had a fancy ring to it, but my wallet groaned at the thought. Still, curiosity won, and we waltzed into Casa Del Rio, inquiring about the rates. After a quick huddle, we took the plunge and booked a "Deluxe Lago/River Side Room." Two single beds? No problem. We threw in an extra bed, and guess who volunteered for the floor? Yep, that’s me.

Ondeh Ondeh Cenderella (Jalan Hang Kasturi)

What’s the deal with “Cenderella”? We had to find out. We grabbed a packet of ondeh-ondeh, or Buah Melaka, and watched the process of making these treats. Little balls of pandan dough, filled with palm sugar, are cooked until they float, then rolled in coconut. A delicate taste of sweet nostalgia, but it wasn’t the revelation we hoped for - one serving was enough.

Portuguese Settlement Malacca: Food Critic’s Review and Experience

When in Malacca (MALACCA'S LEGENDARY SITES), a visit to the Portuguese Settlement is a must. Established in 1933, this legendary spot preserves the traditions of Portuguese descendants who have lived there for centuries. The settlement stands as a testament to the enduring legacy of Portuguese influence in Malaysia, dating back to the early 16th century when the famed explorer Afonso de Albuquerque captured Malacca in 1511. Albuquerque, a pivotal figure in the Age of Discovery, played a crucial role in establishing Portuguese colonial dominance in Southeast Asia.

Our late evening trip to the Portuguese Settlement was driven by a quest for its renowned food and a desire to experience the area's unique atmosphere. The settlement's historical importance is intertwined with the spice trade, which significantly shaped its local cuisine. The Portuguese, led by Albuquerque, sought control over Malacca as a strategic port in the lucrative spice trade routes between the East and West. This influence is evident in the fusion of Portuguese and local Malay flavors, creating the distinctive Kristang cuisine, a culinary heritage reflecting the profound impact of the spice trade on the gastronomic traditions of Malacca's Portuguese community.

Malacca’s Legendary Sites: A Walk-Through History

After checking into the hotel and stashing our bags, it was time to uncover what Malaysia had in store for us in terms of sightseeing in Malacca, or Melaka. Nestled on the southwestern coast of Peninsular Malaysia and founded in the early 15th century, Malacca quickly became a pivotal trading port, attracting merchants from China, India, and the Middle East. Its strategic location made it a crucial hub for the spice trade, blending a rich tapestry of cultures and influences. The Portuguese arrived in 1511, followed by the Dutch in 1641 and the British in 1824. In 2008, Malacca was honored as a UNESCO World Heritage Site, recognizing its significance as a cultural and historical gem (MYANMAR ACROSS MAE SAI, CHENNAI DISCOVERY & TAJ MAHAL AGRA).

As a history enthusiast, my two friends and I were eager to explore as many sightseeing spots as possible. Without specific destinations in mind, we chose to wander and discover the city’s treasures, agreeing to pause when fatigue set in, and perhaps continue our exploration the next day.

Pretoria Moments & Insights into South Africa

As I prepared to leave South Africa (Johannesburg Wildlife & Cape Town Nature Stealer) and head back home, emotions were running high. Each moment spent here has been truly fulfilling for my soul. Today, we started with a city tour of Pretoria, the administrative capital nestled in the northern part of Gauteng Province. Founded in 1855 by Marthinus Pretorius and named after his father, Andries Pretorius, a prominent Boer leader, Pretoria has been central to South Africa's history (Hokkaido Wanderlust & Kochi Kaleidoscope).

It served as the capital of the South African Republic (ZAR) and later became one of the capitals of the Union of South Africa in 1910. The city has witnessed pivotal events, including the signing of the Peace of Vereeniging in 1902, ending the Second Boer War, and the establishment of the Union Buildings in 1913, symbolizing the country's political evolution (Colombo Discovery & New Delhi Revelation).

Johannesburg: Wildlife Safari & Exotic Game Meat

The day began with excitement (JOHANNESBURG WILDLIFE ENCOUNTERS & CAPE TOWN THE TRAVEL STEALER) as we headed to Sun City, where the plan was to spend our time at leisure, exploring as we wished. The main highlight was the Open Jeep Safari to Pilanesberg National Park, but the day promised plenty of other adventures in Sun City itself.

Nestled in South Africa's North West Province, about two hours' drive from Johannesburg, Sun City is a premier holiday destination known for its luxurious resorts and vibrant entertainment options. Often referred to as Africa's Kingdom of Pleasure, this sprawling complex offers attractions (JAIPUR TRAVEL MAGIC & CHENNAI AWAIT) like the renowned Valley of Waves water park, world-class golf courses, and a bustling casino.

Johannesburg - Soul-Stirring Wildlife Encounters

From Cape Town (CAPE TOWN: THE MAGICAL MOMENTS) airport, it was a two-hour flight to O.R. Tambo International Airport in Johannesburg. Jo'burg, as it's affectionately known, is the largest city in South Africa and a vibrant economic powerhouse. This city is a dynamic blend of modern urban life and deep-rooted heritage (SOUTH KOREA THROUGH MY EYES & JEJU THROUGH MY LENS) Johannesburg played a pivotal role in South Africa's fight against apartheid, with landmarks like the Apartheid Museum and Constitution Hill serving as powerful reminders of the nation's journey toward equality.

After landing, we traveled for about 45 minutes to The Lion & Safari Park. Situated in the Cradle of Humankind area of Gauteng, this region is renowned for its archaeological and paleontological significance. Recognized as a UNESCO World Heritage site, it's one of the world's most important centers of human evolution, with numerous ancient hominid fossils discovered in its limestone caves. Nestled amidst rolling grasslands and picturesque bushveld, the park offers a stunning backdrop for its wildlife.

Cape Town: The Magical Moments

Our journey from the hotel to Nederburg Wines was quite a trek (CAPE TOWN THE NATURE STUNNER). As one of Stellenbosch's oldest vineyards, we received a warm welcome from the staff and were guided through the grape processing and wine conversion process. Honestly, I wasn't the most attentive listener - more interested in sampling the wines! I took cautious sips, avoiding a rush to my head. Truth be told, I couldn't distinguish between the different wine flavors and varieties. Some guests seemed like experts, while others, like me, quietly enjoyed the experience.

Cape Town: The Nature Stunner

Honestly, I had no clue whatsoever what to expect in Cape Town (CAPE TOWN: THE TRAVEL STEALER). Aside from glancing at the itinerary before I left home, I didn’t read up on the city. As always, I preferred to discover places organically (COLOMBO DISCOVERY & KANDY MOMENTS). In Cape Town, I was swept away by the wonders of this part of South Africa, starting with a morning drive from the hotel to the high slopes of the mountains. The adventure had me standing rather than seated, gripping the bars of the coach as it maneuvered through the mountains. Swinging left and right with each turn, I was captivated by the jaw-dropping views of Cape Town's waters and the stunning scenery that unfolded before me (AGRA: TAJ MAHAL & VARANASI SACRED GANGES).
