Tofu Stir Fry: Indian Style

Cubed fried tofu, stir fried with spices, chili powder, coriander leaves and ginger.
Tofu, the protein-packed ingredient made from soybeans, is suited for both vegetarians and non-vegetarians. These days, it comes in different tyoes. from traditional blocks to sofu and even organic varieties (VEGETARIAN NASI LEMAK). 

For this Indian-style stir fry, firm tofu works best. Otherwise, tofu will crumble apart, unless you’re after a softer, scrambled texture.

This tofu stir fry is cooked with familiar Indian spices, each carrying its own health benefits, while fresh coriander leaves add fragrance and a burst of freshness.

 

It’s a quick and fuss-free dish, wholesome when paired with rice for a complete meatless meal (VEGETABLE KURMA).  Just as delicious on its own as an appetizer or starter.


Ingredients for Tofu Stir-Fry 

1 block of white firm tofu - cut into small pieces

15 French beans - strings removed and sliced to 1/4 inch

4 shallots - chopped

1/4 inch ginger - chopped

1 1/2 tsp curry powder

Spices - 1 tsp cumin seeds, 2 cinnamon sticks, 2 cloves and 1 star anise

2 sprigs coriander leaves - sliced

4 tbsp oil

Salt to taste

 

How to Make Tofu Stir-Fry

Heat oil, and quickly stir fry tofu pieces until light brown on both sides. 

Set aside.

In the same oil, fry ginger, shallots, and spices. 

Add curry powder and French beans. 

Stir and sprinkle some water.

Cook until the beans soften.

Add in tofu squares, salt, and coriander leaves.

A couple of quick stir fry, remove from heat. 

Tofu Stir Fry, cooked with spices, chilli powder, fried cubed tofu, and coriander leaves.
