Asam Fish With Chilli Dip

Those who utmostly love sourness or asam taste, brace yourself, oh please, not sadly but joyously. Can't you see? I am sure you can see where we are today. We are here with this Asam Fish Chilli Dip (Fried Fish/Kembung Assam SauceAsam Pedas, Belimbing Sambal Bilis & Nyonya Asam Curry). Bang! Mouthwatering right? Saliva literally dripping down right? I know. I feel the same way too. Remember, I am one of the number one, truly and sincerely, a major number one fan of sour notes. Trust me, I  just so love it (Spaghetti Tom Yam Soup, Indian Fish Achar, Seabass Apple SaladPepper Garlic Rasam & Ayam Masak Masam Manis). And this Asam Fish With Chilli Dip is not a con job. Its actually an easy job. Are you asking me why? I'll tell you. Soak fish in tamarind/asam juice, while you are at frying it, make the no cook chilli dip. Birds eye chillies, fish sauce, soy sauce and sugar. No need for salt please, unless you purposely prefer your pressure to go it. See, I told you. Nava K is always a food darling (Indian Fish Curry, Prawn Mango Curry, Sour Fish Soup, Fish Chilli Lime & Thai Steamed Fish). Her recipes are uncomplicated? I am done. Nothing more to say. Let's just keep it short and sweet today (Turmeric Fish Oyster Sauce, Mango Pickle, Yogurt Curry &  Pepper Mango Fish Curry). Take care everyone. We will be in touch with other. 

For the fish
2 or 3 ikan sela/yellow tail scad – clean, leave the head on and score 3 times on both sides.
½ cup thick tamarind/asam juice
A little salt.

For the dip (as needed)
Sliced birds eye/chilli pad/fresh red chillies
Soy sauce
Fish sauce 
A little sugar

Marinate fish with tamarind and salt
Set aside for at least one hour.
Drain off the juice and deep fry the fish
Combine the ingredients for the dip and serve with fish.
