Asam Fish With Chilli Dip

This simple asam fish (fried kembung with assam sauce and asam curry fish) can be made with various types of fish. But the reasonably priced local catch absolutely the best. Asam fish is sour, such when paired with bird’s eye/chilli padi/fresh chillies in soy sauce and tadbit of fish sauce, its the true Malaysian flavours, a perfect fit for rice.  

For the fish
2 or 3 ikan sela/yellow tail scad – clean, leave the head on and score 3 times on both sides.
½ cup thick tamarind/asam juice
A little salt.

For the dip (as needed)
Sliced birds eye/chilli pad/fresh red chillies
Soy sauce
Fish sauce 
A little sugar

Marinate fish with tamarind and salt
Set aside for at least one hour.
Drain off the juice and deep fry the fish
Combine the ingredients for the dip and serve with fish.
