Maggi Goreng Mamak


Maggi Goreng Satu. Lebih Pedas. One Maggi Goreng please! Spicy One. The common echo we Malaysians are used to at Mamak stalls. Akin everyone just so love it, until packets and packets of instant noodles are stacked up. Speak about instant noodles (Instant Asam Laksa) in Malaysia, I think, most probably, we are trending so close behind our Indonesian counterparts, we just must have instant noodles. Any which way, potentially the best among the rest is Maggi Goreng Mamak. Honestly, I am not a big fan, Maggi Goreng Mamak is just a once a while affair in my house. Of course, when its lazy cooking on lazy days when I lazily wake up or when I have no idea on what to cook in a jiffy.  I actually am fond of soupy noodles (Lamb Curry Noodles, Noodles in Thai Sauce, Thai Salmon Noodle Soup, Lemongrass Prawn Mee & Prawn Mee Hoon Soup), then again, why fuss? No point. Hunger is important, not about fussing on what not. Maggi Goreng Mamak is a fit perfect for vegetarians, stop complaining non-vegetarians. You won't die if you tuck into this noodle dish every now and then. Look, I am not a vegetarian, I still alive and kicking after tucking in. Come, lets cook it right now. Get your Maggi or any other instant noodle ready, we also need the customary ingredients for our Malaysian fried up noodles (Anchovies Fried Mee Hoon, Fried Mee, Fried Prawn Mee, Fried Kuey Teow & Curry Leaves Fried Mee Hoon). Long story cut short, this is it, Maggi Goreng Mamak. Vegetarian. (Shanghai Noodles Vegetarian & Vegetarian Noodle Soup).

Ingredients
2 packets Maggi instant noodles (alternatively, yellow noodles) - blanch in hot water to soften.
2 eggs
5 tofu pok/or any tofu will do - cut into two pieces
4-5 stalks sawi/mustard green (or any leafy greens)
3 shallots - chopped
5 garlic - chopped
1/2 tbsp sweet soy sauce
1/2 tbsp light soy sauce
1 tsp (more or less) curry powder 
3 tbsp oil
Salt for taste (use sparingly/ only if needed)
Sliced red chillies (for garnishing)
Method
Heat oil, break in eggs, scramble, remove and keep aside.
In the same oil. saute shallots and garlic.
Add curry powder and quickly stir.
Pour in sweet sauce and light soy sauce.
Stir. Add mee, Maggi seasoning (from mee packet), tofu, mustard green and scrambled eggs. 
Quickly stir over high heat for 2 to 3 minutes.
Dish out and serve with calamansi lime, cucumber and red chilli slices.
