Maggi Goreng Mamak


I'm back to square one (what else is new ah?). Where to start with the intro? Killer-lah. But you can't blame me. Hundreds of recipes already chunked out, I can't get it up (oppsie), I mean, how can someone possibly be so-street smart in writing a catcha-gotcha intro continuously. Okay, okay-lah, quite smart I consider myself for coming this far. Growing up in a poor Indian family, then disaster struck in marriage, then, literally depending on education loan which I had to pay back with interest, and exhausting my savings for my more than hundred thousand education. Sense of biggest achievement though, I secured a stable career but the solid career is now shaking worst than a rocking chair due to rocking massively office politics. Sigh!

Aha! I manage to grab your attention with my sob story right? Done with a teary intro, come, lets fry (Mee Siam, Fried Prawn Mee, Cantonese Seafood Yee Mee & Lam Mee With Sambal Belacan) this Maggi Goreng Mamak. Into the noodles, I added tofu pok, green veg, scrambled eggs (omit if you're vegetarian) and other ingredients as listed below. Maggi Goreng Mamak is definitely a convenient one complete meal which obviously is the number grab at mamak stalls. Alright, story ended. Recipe time.

Ingredients
2 packets Maggi instant noodles (alternatively, yellow noodles) - blanch in hot water to soften.
2 eggs
5 tofu pok/or any tofu will do - cut into two pieces
4-5 stalks sawi/mustard green (or any leafy greens)
3 shallots - chopped
5 garlic - chopped
1/2 tbsp sweet soy sauce
1/2 tbsp light soy sauce
1 tsp (more or less) curry powder 
3 tbsp oil
Salt for taste (use sparingly/ only if needed)
Sliced red chillies (for garnishing)
Method
Heat oil, break in eggs, scramble, remove and keep aside.
In the same oil. saute shallots and garlic.
Add curry powder and quickly stir.
Pour in sweet sauce and light soy sauce.
Stir. Add mee, Maggi seasoning (from mee packet), tofu, mustard green and scrambled eggs. 
Quickly stir over high heat for 2 to 3 minutes.
Dish out and serve with calamansi lime, cucumber and red chilli slices. 
Don't forget to trend alongside "cook with nava-k" on every other social media please!
