Sardine Varuval (Dry Style)

Tuna or Sardine? Sardine mostly. Fresh sardine or canned sardines? Both goes strongly and tremendously (Mathi Achar & Nadan Sardine Curry). But stocking up canned sardines has become a habit I can't let go. Basically like if I don't stock up, seemingly my grocery doing is not complete. How about you? You are like me? You must have sardines in cans in your pantry? Actually, its a good thing because canned sardines will never ever let us down (Sardin Masak Lemak & Sardine Rolls). Unlike our husbands who sometimes can drive us up the wall? Even canned tuna as well (Tuna Thoran, Tuna Burgers & Tuna Cutlets). I mean, canned tuna being our cooking saviour. What's the story to me making this Sardine Varuval (Sardine Sambal & Sardine Potato)? The same food story in fact. Always a favourite (Jeera Aloo/Potato & Meen Puttu) and imagine sardine varuval alongside rice soaking or fully flooded by rasam or sambar. Heaven called easily fab meal right? I know (Udupi Sambar & Pepper Garlic Rasam). We Indians and our fingers to eating for happy tummy sardine varuval meal? What more should I possibly say? Nothing. Mapo Tofu

Mapo Tofu! As far as I know, Mapo Tofu is Sichuan coming and calling dish. Most probably. Me and Sichuan dishes (Sichuan Chilli Prawns & Sichuan Noodle Soup)? In fact, Chinese food on the whole for the matter (Fried Prawn Wanton) and do I have speak about tofu? A favourite in my house. Always and forever. Any which way will do for tofu which comes in different made these days (Tofu Manchurian, Tofu Green Beans Stir Fry & Tofu Scambled Eggs). For Mapo Tofu, I actually opted for Japanese Tofu instead of the white ones. Why, are you asking me? No particular reason. I just thought I want to show you that you can make Mapo Tofu from Japanese egg tofu (Tofu Katsu) and this my version is a totality on it own. Basically different and outstanding due to me wanting to use my at home ingredients instead of? Why buy ingredients when you can make do with what you already have stocked up? Potentially. Mapo Tofu? Tad bit of spiciness, tad bit of saltiness, spring onion garnished and soft tofu (Chinese Tofu Soup, Spinach Tofu Stir Fry & Indian Tofu Curry).

Jeera Aloo

Jeera Aloo, or Aloo Jeera Nava-K's style. Yes. Of course. I have my style to my cooking. Proud Nava K. Why not? After all, cooking is also about your own style right? Tell me about it. That's why, most probably you would noticed that my Jeera Aloo is different and a stand out amongst the rest. What is Jeera Aloo by the way if you still can't comprehend? Basically, potatoes stir fried alongside cumin (Jeera Rice) and of course, we need the spicy beat from chillies as well. Potatoes on the whole by the way, as I have repeated myself donkey times (Sukhi Aloo Sabzi, Tari Wale Aloo, Chilli Aloo, Dum Aloo & Aloo Gobi). Just mention potatoes and you yourself will know what I mean. So many dishes out of potatoes (Aloo Gosht, Navaratan Korma, Egg Potato Curry, Indian Potato Balls, Baked Cheesy Potatoes & Bonda).  What about Jeera Aloo? Simplicity and simplest. Loud aroma of cumin seeds, garam masala, coriander leaves and a dry style Jeera Aloo.

Maggi Goreng Mamak

Maggi Goreng Mamak. The number fried noodle selling. In fact, each time we head to the mamak stalls, its like a habit or food lingo we must call for a plate of Maggi Goreng Mamak. My knees too can wobble for this style. Quickly fried on the spot, there and then noodles (Mee Goreng Udang, Char Kway Teow, Anchovies Fried Mee Hoon & Malaysian Fried Mee). Maybe not always, yet, I do yearn for and I usually request for lotsa veggies in Maggi Goreng Mamak. Can be a satisfying mind you even when we make it in our kitchen and of course, without compromising on cleanliness and according to our taste (Nyonya Mee Siam, Malaysian Fried Mee Hoon & Hokkien Mee). Whichever and whatever ingredients we prefer, regardless, the essentials have to be Maggi instant noodle or noodles, chillies, soy sauce, and like I have already told you, throwing in lotsa vegetables.

Kacang Buncis Goreng Belacan (French Beans With Shrimp Paste)

Goreng-Goreng and our Malaysian goreng. Our goreng, especially if its a Malay style goreng must be a belacan goreng. What is belacan by the way (Sambal Belimbing Ikan BilisSambal Terasi, Belacan Fried Rice & Sambal Belacan Ikan)? Belacan is definitely an ingredient seller for me. In other words, I so love belacan which can be overwhelming for some people. I really can't understand or don't know why these people cannot digest the smell of belacan, but myself? No problem. Belacan naturally will kick in when added into our Malaysian savory dishes or for the matter, when you stir fry vegetables (Sweet Potato Leaves Belacan & Kangkung Belacan). Also, when we speak about stir frying on the whole primarily, its about quickly frying in a jiffy (Mee Goreng Udang). Similarly, that's how we do it for Kacang Buncis Goreng Belacan (Kacang Buncis Tempeh Goreng). French beans, bilis/anchovies, home made belacan chili paste and of course, lime juice and a tiny bit of Gula Melaka for the spectacular savoury Malaysian tastes (Kerabu Kacang Botol, Sayur Lodeh & Taugeh Ikan Masin) in Kacang Buncis Goreng Belacan.

Sukhi Aloo Sabzi

Potatoes! Tell me please? The kilos and kilos we buy most probably every week and any dish for the matter made from potatoes I think will be a total sell-out the moment it hits our dining table? If you are asking me, oh-yes. We just so love potatoes any which way they are cooked (Tari Wale Aloo/Vegan Potato Curry), plus I can go on and on and quote a whole string and list of potato dishes I have already shared with all of you, but off hand, these are the few I thought I will link (Fried Potato Balls, Dum Aloo, Chilli Aloo & Aloo Gobi) for the benefit of staying within the context of vegetarian dishes. What is Sukhi Aloo Sabzi by the way (Kashmiri Vegetable SoupTamatar ki Chutney, Aam ka Achaar, Shahi Gobi Baingan Bharta)? Obviously, a North Indian dry style potato dish which requires boiled potatoes stir fried alongside the ingredients listed below and my style is perhaps different. Usually I think green peas are not one of the ingredients? I on the other hand decided I will because, to each our own preferable ingredients instead of like blind leading the blind? Of course. Sukhi Aloo Sabzi? Your vegetarian and vegan side dish for a rice meal (Tomato Rice Pilaf & Hyderabadi Briyani) or how about tucking in alongside bread, chapati or tosa (Punjabi Sabut Moong Dal & Navratan Korma)?

Nyonya Mee Siam

Upgraded and updated. The simply fried Mee Siam heightened and enlivened to another style for the birth of Nyonya Mee Siam. Moreover, in between I also gave a good run to my cooking knowledge by making the gravy/kuah Singapore Mee Siam. Nyonya Mee Siam, aka Mee Siam Goreng personally for me, I think you know it. Me and my Nyonya cooking I picked up by lending my ears to my friends, watching cooking programs (Siamese Laksa Lemak) and of course, my own experience of testing and trying and making those Nyonya dishes. Also, when we speak about the Nyonya community, we have the Malacca Baba Nyonya and Penang Nyonya clan (Penang Acar, Penang Curry Mee & Penang Assam Laksa).

Sambal Goreng Teri

What is Sambal Goreng Teri? Sambal Goreng Teri basically is an Indonesian Ikan Bilis/Anchovies Sambal. That's right. Says it all right? The popularity of crunchy and dried in the sun, salty tiny fish in Indonesia (Sambal Terasi & Ikan Balado) and we Malaysians? Oh-my, ask this typical Malaysian and she will unveil all of it (Malaysian Fish SambalAsam Pedas Ikan & Sambal Sotong) on ikan teri, or ikan bilis and sambal too (Sambal Petai Ikan Bilis, Nasi Goreng Ikan Bilis, Ikan Bilis Mee Hoon & Sambal Udang Petai). Of course, even salted fish/ikan asin/ikan masin is an undisputed love for Malaysians and I think must be the love for Indonesians as well.  However, if you are expecting a typical Sambal Goreng Teri, either you will be disappointed or you will truly fall in love for my version. Different, unique and spicy power packed, some kacang panjang/long beans as well, and scented by serai/lemongrass Sambal Goreng Teri (Salted Fish Soup, Masak Lemak Ikan Masin & Sambal Kentang Ikan Asin).

Meen Puttu

Meen Puttu, aka Fish Puttu. What is Meen Puttu? Meen Puttu is basically fish simmered alongside turmeric powder and salt, thereafter shredded/flaked and stir fry with the customary or must have Indian ingredients. Of course when we refer to Indian cooking (Indian Spiced Salmon & Indian Fish Curry), chillies, spices and curry leaves are part and parcel of our cooking, and for meen puttu, we add fresh grated coconut. Pretty much that is the food cooking lingo for Meen Puttu and if you are asking me, I must admit there are other varieties to this fish dish which, do I have repeat myself is a popularity amongst us Indians? Furthermore, sura or shark (Sura Meen Kuzhambu/Shark Curry) is usually the choice, but nothing should stop you from using any other firm fish and even for the Kerala (Tuna Thoran, Malabar Fish Curry & Kerala Fish Fry) or Sri Lankan style (Sri Lankan Coconut Gravy) Meen Puttu, the ingredients are more or less similar. For my version, I opted for tenggiri/Indian mackerel which by far you shouldn't discount against for the outcome of a crumbled and a role play of the favourite Indian tastes Meen Puttu (Tandoori Salmon, Fish Head Curry, Bengali Fish Curry & Meen Kulambu).

Tapioca Poriyal (Stir fry)

What is poriyal? Anyone like to help me out here? Okay, alright, I don't think I can clearly hear you, so let me tell you how would I describe Poriyal. Basically, its a stir fry. That's it. Case close. Lets not talk about poriyal anymore, rather, lets get to the recipe of the day. Tapioca Poriyal (Stir fry). Remember my previous recipe which also showcased tapioca (Stir Fried Tapioca With Anchovies Turmeric). Period. Almost two and more years up the road, I actually bought tapioca/cassava/maravallikkilanku again. I know. Been some time right? I know. Actually, I hardly buy, I myself can't really tell you why, but I still remember how popular eating boiled tapioca alongside fresh grated coconut and palm/white sugar was such a thing during my growing up year. The other mum does, of course, is any kind of spicy tapioca dish.

Cabbage Upkari

Cabbage Upkari (Cabbage Thoran). A simple, Konkani style cabbage stir fry. Konkani by the way is the official language in Goa and Goa obviously being seated on India map (Baingan Bharta, Kashmiri Vegetable Soup, Aam ka Achaar, Andra Sambar & Tofu Manchurian). There's definitely various, hell of lot of cooking style to how you can stir fry cabbage in an Indian style. At the end of it all, its up to you.of course. You can refer to recipes or perhaps you can coin your own (Vegetable Kadhi, Vegan Potato Curry, Indian Mango Chutney, Kurkuri Bhindi, Carrot Poriyal & Beans Thoran) because nothing is brain cracking for stir frying cabbage and you can opt for a couple of ingredients or add other much more suitable ingredients for a lavish kinda Cabbage Upkari which definitely is a vegetarian dish. My this style Cabbage Upkari? Sliced cabbage (Spinach Tofu Stir Fry) alongside chana dal (Chloe Masala & Dhal Rice), cumin seeds, onion, green chilli and turmeric powder. That's it. Tempting vibrant yellow hue and satisfying Cabbage Upkari.

Baingan Bharta

Baingan Bharta! What is Baingan Bharta? Baingan Bharta is a brinjal dish from the land of Punjab. Interesting right? I know (Kashmiri Vegetable Soup, Aam ka Achaar, Andra Sambar, Hyderabadi Vegetable Biryani & Tamatar ki Chutney). In fact, to tell you the truth, though I am aware where exactly Punjab is seated in the world map, honestly, I never knew Baingan Bharta existed until I had to crack my coconut on what should I do with brinjal. Basically which style to cooking. I could have, if I wanted to, opt for the dishes I have cooked before or add brinjal in curry, then again, don't you think it will be nice to scout for recipes for a new kinda dish? Sure. Why not? After all, shouldn't we keep our cooking and food eating interesting too instead of similarities dependable? You are right and I was right in searching for recipes. Popped up a whole list, more than enough actually and among those, me opting for Baingan Bharta (Japanese Eggplant Saute, Eggplant Tikka & Brinjal Stir Fry). But no, not copied exactly. I looked through the recipes and instead roasting or blistering brinjals and cooking till a mushy texture, I invented my own Baingan Bharta. Tadaa!! Why is my Baingan Bharta unique and outstanding? I added saffron strands for exclusive and exotic tastes (Navaratan Korma, Vegetable Kadhi & Tofu Manchurian). Saffron strands, believe me, they can be expensive but worth paying once a while to heighten dishes to another level.

Malaysian Style Fried Mee Hoon (Rice Vermicelli)

Malaysia My! Malaysia Mine! Malaysian Me! Me the typical Malaysian and I won't in any way or no way compromise our Malaysian food. The best food in the world I vouch and trust me, no food in this world can come close to our Malaysian food. Of course because we Malaysians are not short of the various types of dishes and instead of segregating ourselves by mentioning the three main races in Malaysia (Chinese Vegetable Noodle Soup, Chilli Clams, Sayur Lodeh & Malaysian Indian Fish Curry), I must include all of us together when Malaysian food is a concern. Anything for the matter, including our forever and always loved fried rice (Malaysian Fried Rice) and I might as well include this Malaysian Style Fried Mee Hoon because we Malaysian love adding some anchovies (Anchovies Fried Mee Hoon) or dried shrimps for our variety of a simply fried together noodle dish. Moreover, there is limit to Malaysian Style Fried Mee Hoon (Malaysian Egg Benedict, Malaysian Sour Spicy Fish Soup Noodles & Malaysian Chicken Chop). In other words, its a meal for anytime of the day. For breakfast, for bunch, for lunch, for tea time, for dinner and we Malaysians (Malaysian Lamb Stew, Malaysian Pumpkin Soup & Malaysian Fried Mee) sure can extend our eating time till supper. Malaysian Style Fried Mee Hoon! A joyous meal once you fry mee hoon alongside our Malaysian ground found ingredients. Of course, like I have already told you, do not forget for celebrating dried shrimps (Malaysian Chilli Crab & Malaysian Lamb Curry Noodles).

Tuna Thoran

Tuna and Thoran? Synonymous in Kerala (Parippu PradhamanMalabar Fish Curry & Kerala Fish Fry), whether you use fresh catch tuna or canned tuna. For me personally, Tuna Thoran (Cabbage Thoran & Beans Thoran) basically is a stir fry (Chicken Varuval) and can be stir fried with or without grated coconut (Kiri Hodi) or we might as well take the convenience of coconut oil in case we can't run or rush to buy coconut for thoran. My style to Tuna Thoran (Tuna Burgers & Tuna Cutlets)? Aha! I think I told you before, this habit of adding potatoes and looked like I automatically added without even thinking twice its a Kerala Thoran. Then again, there is no right and wrong to ingredients we prefer, especially when you are rushing for time in making Tuna Thoran? Of course. Tuna Thoran is actually a simplified dish though some people love to blow it up as though its a mind blogging dish to make. Basically, all you got to do is get the ingredients listed below ready, mostly our pantry user friendly ingredients right and stir fry to a dry style, worthy tastiness.

Tofu Manchurian

Guys, if you are asking me about the history of Tofu Manchurian or even Manchuria, I really can't say much. But I sure know that Manchuria was the puppet state of the Empire of Japan in Northeast China and inner Mongolia, and Manchurian cuisine seemingly has taken a strong influence in India (Indian Tofu Curry). Why, how and what, please don't ask me. Yet I am aware that somehow Manchurian recipes (Chicken Kebab & Hakka Noodles) have been tweeted to the local tastes in India and one of the most prominent is definitely Gobi Manchurian (Cauliflower Pakora) and I must include Tofu Manchurian as well. Regardless, my Tofu Manchurian is an outcome of my thinking, though I did refer to a couple of recipes which really confused me. Thus, to keep my Tofu Manchurian as my invention, I went ahead and cooked it as how we would appreciate a tofu dish to be (Tofu Green Beans Stir Fry, Tofu Scrambled Eggs & Spinach Tofu Stir Fry). Of course we must not discount spices and chillies for Manchurian dishes? Precisely the ingredients that were cooked alongside tofu and since I had some French beans, I added them as well. The outcome? This mouthwatering burst of Tofu Manchurian (Tofu Katsu & Chinese Tofu Soup).

Nasi Goreng Belacan Ikan Bilis (Shrimp Paste Anchovies Fried Rice)

Who can be a better expert when we speak about fried rice? Anybody you know or will you point to Nava K because her fried rice recipes are heavily trended in the visual world or in this precious space of her's? Fried rice and yours truly? Dang a millions times. Various types and various styles, mostly, in fact all of it her own style (Kampung Fried Rice, Chinese Fried Rice, Lamb Fried Rice & Malaysian Fried Rice) and the list goes on and on, on and on. Can you blame me? No, you shouldn't because even a simple home made fried rice won't you agree is far out hundred times better than eating out and when you can't figure out what to cook for the day? Of course and like I have already repeated myself before, anything goes for fried rice (Cantonese Fried Rice, Belacan Fried Rice, Anchovies Long Beans Fried Rice & Tom Yum Fried Rice). In fact even the basic staples will do a delightful food job for fried rice (Nasi Goreng Ikan Bilis). Today, its another style or maybe a composite of those common ingredients as per other fried rice recipes, I shall now go ahead and share this Nasi Goreng Belacan Ikan Bilis recipe with all of you. As the name of the recipe has already suggested, the ingredients are anchovies and sambal made from chilies and belacan, of course we need garlic and shallots, and for the veg, its long beans.

Penang Acar

Penang food? What should I say? I think the best will be saying nothing about Penang Food which of course has tremendously made its name and your truly too is not alien to Penang food. Can you still recall her Penang recipes (Penang Curry Mee, Penang Assam Laksa & Penang Mee Yoke). Of course, there are other recipes which can be trended in the category of Penang Food? More or less (Nyonya Lam MeeYong Tau Foo, Sambal Udang Petai, Nyonya Curry Laksa & Dried Shrimp Sambal)? Today, ladies and gentlemen, its this Penang Acar. Acar (Mango Chutney) or can be regarded as pickle. Now, if you are expecting a spectacular acar, I am certain you will be disappointed. In fact, I must stress that this is the easy and simplified acar. Obviously, showcasing the two central ingredients? Cucumber (Cucumber Yogurt Salad) and carrot (Carrot Soup & Carrot Poriyal)? And the rest of the ingredients  - by far, you must use vinegar, chillies, ginger, shallots, vinegar, sesame seeds, sugar and salt, and I added some cumin seeds for my twist to Penang Acar.

Chilli Clams

Chilli Clams. Chilli Lala. Chinese style chilli clams. Chillies and us? Don't you dare separate chillies from us. Chillies are our best of all friends and we need our daily doze of chillies no matter what. Chillies of course for heat and spiciness, and clams, remember my previous clam dish (Chilli Honey Clams). Spiciness and sweetness and tadbit of saltiness? By far, as far as I now, the burst of tastes for Chinese dishes (Sesame ChickenSweet Chilli Chicken, Sichuan Chilli Prawns & Chilli Lime Fish) or overall, on the whole for Malaysian dishes, spiciness is a must, wouldn't you agree (Sweet Potato Leaf Sambal Belacan, Spicy Grilled Fish, Chilli Crab, Dried Shrimp Sambal, Sambal Udang & Crispy Chilli Fish)? This Chilli Clams? Don't they speak for themselves? Chinese ingredients and curry leaves for the sincerely loved big burst of tastes.

Shahi Mutton Curry

Shahi Mutton Curry, or Mughlai Mutton Curry. Rich, creamy, thick and call it a royal mutton curry (Navratan Korma & Lamb Rogan Josh), Shahi Mutton Curry simply packs bags and bags of  flavours (Mutton Devil's Curry, Masala Mutton Curry & Mutton Parathal) which will wake up your taste buds almost instantly until you most probably will long for more or you just can't stop eating. Believe me. And in my house, can you imagine how it would have been after I made this really attractive and eye popping Shahi Mutton Curry? Eaten alongside Cumin Coriander Rice and Stir Fried Turmeric Cabbage. Oh my goodness! Truly a royal meal and after eating by taking our own time, we could hardly move. Then again, each time I cook mutton (Mutton SoupMutton DalcaIndian Mutton Meatball Soup & Mutton Kurma), mostly of course as a dry or thick masala based curry (Mutton Bone Marrow Curry, Easy Mutton Curry, Mutton Varuval & Mutton Keema) its the same story as well and we love it as well when we actually bite and ripe the meat out of mutton bones and then we will still continue with nibbling the bones and also helping ourselves to rice and stir fried veggie. Sounds familiar? The same thing in your house too?  Shahi Mutton Curry as I have already told you is full of spices and ghee richness, fabulous deliciousness.

Butter Prawns

Herbs (Chicken Herbal Soup) and spices are like forever a must for practically most of the dishes I cook. They can either be from my garden (Curried Lemongrass Fish, Nasi Dagang, Rosemary Cheesy Potatoes) or the other choice is obviously buying (Assam Laksa. Assam Fish Curry, Watermelon Mint Salad & Cumin Rice), I am particularly fond of coriander leaves (Grilled MackerelFish Chilli Lime, Ghee Almond Rice, curry leaves (Spicy Crab Parathal, Prawn Devil Curry, Cili Padi Fish) and spring onion (Bean Sprout Salted Fish & Mutton Ball Soup). Every now and then I also reach out to dried herbs (Lamb Burger), sometimes the powdered spices and sometimes I grind the spice mix (Prawn Mango).
