Mee Rebus (Vegetarian)

Vegetarian Mee Rebus, made with yellow noodles, atop with a spicy sweet potato gravy, green chilies, boiled egg, fried fritters, bean sprouts and spring onions.
What makes or breaks a Mee Rebus dish? It’s the gravy, or kuah. Made with the right balance of spiciness, sweetness, aroma, and thickness, it becomes the best Mee Rebus. The gravy is the central star of this beloved Malay noodle dish, which is also part of Indian-Muslim food (MALAY STYLE MEE UDANG) and Malaysian street food.

Yellow sweet potatoes are an important ingredient, giving the gravy its rich texture and subtle sweetness, even for the vegetarian version.

There is also an assortment of fried spicy kueh, added into Mee Rebus. Among these, the crispy fried fritters are a must for adding crunchiness. Dried shrimp is one of the ingredients for the gravy, but for this vegetarian version (VEGETARIAN POTATO SAMBAL), it is not needed.

 

Common toppings include hard-boiled egg, fried tofu, green onions, bean sprouts, and crispy shallots. The best Mee Rebus is usually found at street stalls along the roadside.

 

Noodles are drenched generously with thick Mee Rebus gravy, topped with crispy fritters, garnished with boiled egg, green chilies, fried shallots, bean sprouts, spring onions, and a touch of lime juice for tanginess.

 

Mee Rebus Malaysia is truly a delicious pleasure for the palate.


Ingredients

For Fried Crispy Fritters

1/2 cup plain flour

1/4 cup rice flour

1/2 tsp baking soda

Water - as needed

Salt to taste

Oil for frying


How to Make Fried Crispy Fritters

In a large mixing bowl, combine all the ingredients for the fritters.

Add enough water to create a thick, runny batter.

Heat oil in a frying pan. 

Spoon the batter into the oil and gently spread it out.

Fry until golden brown, remove and set aside to cool.

Once cooled, slice into pieces or gently crush.

Ingredients

For the Gravy

10-15 dried red chillies - soaked in water until softened

1-inch piece of galangal/lengkuas 

1/2 inch fresh turmeric/kunyit hidup 

5 shallots

5 garlic cloves

(Blend/pulse these ingredients together)

3-4 small yellow sweet potatoes - simmered until tender, skin removed, and mashed

4 tbsp oil


Other Ingredients (as needed)

Yellow noodle - blanched  

Boiled eggs, cut into halves

Spring onions - thinly sliced

Green chillies - thinly sliced

Fried shallots

Bean sprouts - blanched 

Calamansi lime juice

 

How to Make Mee Rebus Gravy

Heat oil, and fry the blended/grounded ingredients until aromatic and the oil separates.

Pour in 1/2 liter of water and simmer.

Once heated through, add mashed sweet potatoes.

Stir to combine in. 

Remove from heat or warm up before serving. 

 

Assembling

Add noodles in a bowl/swallow plate.

Pour gravy atop. 

Top up with the ingredients listed as others and fried crispy fritters. 

Drizzle some lime juice atop, or atop with calamansi lime.
