Siamese Laksa Lemak

I’ve traveled all over Thailand, from Hyathai to Chiang Mai and Chiang Rai, over the span of 10 years. It’s been an amazing journey of discovery. Along the way, I indulged in Thai cuisine, picking up cooking tips from every dish I tasted and experienced. My love for Thai food runs deep (THAI GREEN EGG CURRY) - so much so that I had already started cooking Thai dishes long before I set foot in the country.

 

Of course, there were a few hits and misses. Take the Siamese Laksa I had at a small Muslim Thai roadside eatery in Chiang Mai - not the best, to be honest. But hey, that’s part of traveling and tasting all kinds of food, right? It’s about discovering for yourself. And if the food doesn’t meet your expectations, it’s all part of the learning curve. Mee Rebus (Vegetarian)

Mee rebus is a well-loved noodle dish originating from Malaysia and Singapore. Its name, derived from Malay, translates to "boiled noodles." This dish consists of yellow noodles drenched in a flavorful gravy that strikes a delicate balance between sweetness and spice. The gravy is crafted from a blend of ingredients such as sweet potatoes, shrimp paste, dried shrimp, and a medley of spices. 


Common toppings include hard-boiled egg, fried tofu, green onions, bean sprouts, and occasionally crispy shallots. I've had the pleasure of trying various renditions of mee rebus, both from restaurants and street vendors. Interestingly, some of the most satisfying versions I've encountered have been from street vendors, often at a more affordable price.

For us, rasam is often the star of the meal, pairing wonderfully with a variety of dishes. Malay Style Prawn Noodles/Mee Udang

Malay Style Prawn Noodles/Mee Udang features prawn and anchovy broth-based noodles, setting it apart from Chinese-style dishes like Penang Prawn Mee or Hae Mee (HOKKIEN HAE MEE & PENANG PRAWN MEE). The inspiration for my version of this dish? It's a mystery to me! One day, while surfing the web, the idea just popped into my head. 

Now, let's be real - the cooking process can get a bit involved, and the ingredient list might seem lengthy. But fear not, everything you need can be found at your local grocery store. And trust me, the effort is totally worth it once you taste the explosion of flavors in every mouthful.

I've even included a recipe for a spicy sambal dip to accompany the dish, adding an extra layer of deliciousness. As a Malaysian, I believe a sambal dip is a must-have, don't you agree? I mean, what's a Malaysian noodle dish without that spicy kick? We Malaysians sure do love our chilies (MALAY STYLE MEE GORENG UDANG).

Portuguese Vegetable Pickle/Achar: A Flavorful Delight from Tradition


In 2020, I whipped up this Portuguese vegetable pickle, or achar, as some may call it. This isn't my first rodeo with it - I've made it a couple of times before. You might be wondering why I'm only sharing it now. Well, the idea struck me as I was browsing through our YouTube channel. I thought, "Why not feature it as part of our Zen Cuisine?" Plus, not everyone prefers video recipes; some prefer the written words. 

Named as vegetable pickle, I've experimented with various veggies like carrots, cabbage, long beans, fresh beans, and even ginger. But after a couple of tries, I've settled on just green chilies, shallots, and garlic because these are what we tend to prefer, not the vegetables. That's what you'll find in the final product.

For those who have visited Verona, it likely feels like a city of love and romance. It’s simply the vibes. During autumn, the weather is cool, although the morning breeze can be overwhelming,  further adding to the sense of love in the air. Verona is a city in northern Italy, located in the Veneto region between the larger cities of Milan and Venice. Travelling from Venice to Verona takes around two hours by coach. Mention Venice, and most visitors will picture a water world - boats, gondolas, or vaporetto boats gliding through narrow canals. This historic city in northeastern Italy is built on more than 100 small islands. There are no roads, only canals, with the Grand Canal as the city’s main waterway. Spending a day in Pisa, Italy, offers just enough time to see its main attractions. Located about 1.5 hours from Florence by coach (WHAT TO DO IN FLORENCE), Pisa is ideal for a day trip unless you're planning to stay overnight or enjoy a local dinner. Starting in the morning, you can easily cover the top five sights by evening. How Does It Begin

Florence, the city of art and design, is located in central Italy in the Tuscany region. It lies along the Arno River, surrounded by hills and vineyards, and is known for its romantic dining, complete with Italian cuisine and local wine. From Rome, it takes about 4 to 4½ hours by car or bus (TOP THINGS TO DO IN ROME).

One of the best things about Florence is that vehicle traffic is limited in the city center. Thanks to traffic control zones, it’s convenient for tourists to walk from one attraction to another. Be prepared to walk a lot, and if you visit during autumn, expect chilly mornings and cold evenings. A day is usually enough to cover the main attractions in Florence, unless you plan to explore more tourist spots or discover hidden gems.
