Not your ordinary lemon bars, yet an easy and effortless recipe. Handmade lemon dessert begins with a buttery crumble pressed into a pan and baked. While the bottom crust is baking, the top lemon filling is quickly mixed.
Once the base is ready, the lemon custard is poured on top and baked. The whiff of fresh lemon is just as refreshing in the kitchen as it is in every soft, melt-in-your-mouth bite (MARBLE CAKE).
1/2 cup softened salted butter
1/4 cup sugar
1 cup
all-purpose flour
Ingredients for Lemon Filling
4 eggs (room
temperature)
1 1/2 cups
sugar
1/4 cup
all-purpose flour
Juice of 2
lemons
1/2 tsp lemon zest
Combine and crumble butter,
sugar, and flour until smooth.
Press into a greased pan.
Bake at 160°C (320°F) for 10 minutes.
How to Make Lemon Filling
Sift flour and mix in sugar.
Beat eggs and mix in lemon juice and zest.
Add flour sugar mixture into eggs lemon mixture.
Fold and ensure there's no lumps.
Pour over the baked butter crumble crust
Bake for 30 minutes.
Once slightly cool down, cut into bars.
Optional: Dust with icing sugar for extra sweetness.
