Tandoori Chicken

Honestly guys, if you thinking that you can't make tandoori chicken at home because you don't own a tandoor oven, you are definitely outrightly wrong (Grilled Chicken Wings). Who told you so or you yourself have concluded? Ask me and I will tell you that you can bake tandoori chicken in your oven, (Baked Lemon Chicken) or grill over a BBQ pit, and for those of you can't possibly do both, you can use the portable over the stove grill. Yes you can. I know what I am saying. In fact, I initially thought I will use the grill, then again, unless you cut chicken to small pieces, most probably you will be spending much time in being concern if tandoori chicken is cooked inside, of course, the outside char won't be an issue. Alright, so much for the cooking technic (Moroccan Chicken Stew & Chilli Chicken), can we get down to the recipe. Sure.

Sambal Terasi

Is it possible, can we possibly or should we put our Malaysian Sambal Belacan side by side to Sambal Terasi (Sambal Belacan), aka Indonesian Belacan Sambal? If you are asking me, I won't deny. Why shouldn't we by the way (Kangkung Belacan & Ikan Belacan)? After all, belacan is terasi and terasi is a popularity for our Malaysian local dishes (Stingray Sambal, Nyonya Fish Sambal, Sambal Sotong & Sambal Kentang Ikan Asin)? Moreover, you are now speaking to a belacan queen. Yes me alright. I so love  belacan into savory dishes and sambal belacan by itself, trust me, I can have sambal belacan every day for my rice meals (Nyonya Steamed Fish, Sardine Masak Cili Padi, Asam Pedas & Sambal Udang Petai). Alright guys, enough said I suppose on belacan and lets now move on to Sambal Terasi recipe. Pretty much the same ingredients as our sambal belacan and its not like a magical or out of this world recipe. Those ingredients listed below, mainly birds eye chillies and terasi being the central ingredients and then, we need the seasoning from palm sugar, lime juice and salt (Ikan Balado, Dried Shrimp Sambal & Gado Gado).

Lemon Butter Salmon

So, a different kinda fish recipe today though fish is still the central ingredient. Yes foodies. Looks like there will be no end to my fish story and fish supposedly will forever be trended in my house (Nyonya Steamed Fish, Malabar Fish Curry & Thai Crispy Fish). Regardless, I broke free from those traditional and typical Asian style fish recipes. Yes I did. We need the change right? Of course. And the change in this form of a Western style dish (Tuna Burgers, Batter Fried Fish, Fish Sandwich & Baked Cornflakes Chicken), I decided to do Lemon Butter Salmon. Lemon Butter Salmon (Butter Prawns) baking basically (Baked Lemon Chicken). Of course when we put together salmon especially (Indian-Spiced Salmon & Grilled Salmon) alongside lemon (Thai Lemonade & Lemon Cashew Rice) and butter, we must include rosemary for the beautiful smell as well right? I know. As if these four ingredients must be in tandem? You bet. What else did I do? Pairing gorgeous and mouthwatering baked lemon butter salmon alongside baked potatoes and coleslaw. What a perfect, complete and simply inviting salmon platter food right?

Kiri Hodi

We spoke about coconut milk, didn't we. Of course we did, if you can recall (Masak Lemak Cili Padi) and I also mention that coconut milk is one of the favourites for Asian cooking? Me too. I can be said as a fan of cooking milk, though I don't go overboard mind you.(Hyderabadi Vegetable Biryani, Goan Prawn Curry & Palakura Pappu) and do I have to actually mention the popularity of cooking milk for Sri Lankan dishes? Especially for this Kiri Hodi, aka Sri Lankan Coconut Milk Gravy/Stew which can be eaten alongside string hoppers and even rice. For us rice is the best food deal and when we drench Kiri Hodi on our rice, oh-so-food-diviners while also adding a scoop of Tomato Chutney (Tamatar ki Chutney) prior to tucking in. As usual, I must say that there's various types of Kiri Hodi? Then again, how different can each be? Either a, actually mostly vegetarian version, but some do add some dried fish. Not for this my version though. Instead I added boiled egg. Acceptable right? Sure, stop disputing. Why should we not by the way into this creamy, tangy, attractive and mouth watering Kiri Hodi/ Sri Lankan Coconut Milk Stew? Coconut milk, like I have already told you is the central ingredients and the rest are pretty much I can say as our pantry friendly ingredients (Sodhi, Prawn Spinach Sodhi & Tanni Saar).

Nyonya Steamed Fish

Back to fish and steaming. Yes foodies. However its not another same style to steaming and fish. Nope. Not at all. Today, I am sharing with all of you how to make this Nyonya Steamed Fish. Nyonya cuisine? Much has already been spoken about before (Nyonya Lam MeeNyonya Curry LaksaNyonya Assam Fish Curry)? Furthermore, I also mentioned the concept to steaming and also fish by itself is a food familiarity in my house due to my other half-half and fish is the food for him mostly (Ikan BaladoMalabar Fish CurryUnagi KabayakiThai Crispy FishKerala Fish Fry & Chilli Lime Fish). Alright foodies, let's now get down to making this Nyonya Steamed Fish. A sambal style whereby you need to ground or blend the needed ingredients as listed below before frying sambal and then tipping it over fish which has already been steamed with ginger. Nyonya Steamed Fish? A revelation of the customary and much needed Nyonya loud and bold tastes (Vietnamese Steamed Fish, Thai Steamed Fish, Teochew Steamed Fish & Hong Kong Style Steamed Fish).

Tamatar ki Chutney

To tell you the truth, I can count the number of chutneys I have already shared. In fact, there's only the other, the Indian Mango Chutney, though tomatoes are a must for most of my savory dishes produced in my kitchen. Tomatoes (Thai Tomato Soup)? They just so complete our dishes for the burst of tanginess and sweetness (Tomato Rice), don't they? Of course (Turmeric Tomato Soup & Tomato Spinach Soup) and if you are asking me. I sometimes even do away with lime juice or even tamarind juice if the tomatoes I use can produce the same result. Having said that, there's no assurance all those tomatoes we buy can pack up tanginess? Henceforth, tasting is crucial for balancing the tastes to tanginess and sourness (Pavakkai Puli Kuzhambu & Navaratan Korma) and you got to do the same as well  for this North Indian Tomato Chutney, known as Tamatar ki Chutney, which by far can be an accompaniment for anything for the matter (Creamy Avocado Yogurt Dip). Of course, for us, tangy and absolutely inviting and vibrantly attractive Tamatar ki Chutney was our side dish for our rice meal. Wow!

Hu Tieu Nam Vang

Hu Tieu Nam Vang, aka Phnom Penh Noodle Soup. How do I know about this Cambodian Noodle Soup? Remember, I did my tour to Vietnam and Cambodia (Ho Chi Minh City, Siem Reap & Hanoi)? Though I didn't explore till Phnom Penh, but pretty much those Vietnamese and Cambodian food I tucked into did justice to my palates (Vietnamese Steamed Fish, Shrimp PhoVietnamese Fish Soup & Vietnamese Noodle Soup) and the noodles dishes in these two countries? Of course their origin must be highly regarded, yet, don't you think we do have the liberty to modifying and tweeting recipes without compromising on the much needed quintessential tastes (Ikan BaladoSingapore Laksa & Nyonya Lam Mee) no matter where they originate from? We can right? Depending on country specific ingredients and also, considering the type of meat we eat? Sure, why not? That's why I had to align and adjust Hu Tieu Nam Vang to our preference and like I have already told you before, pork and chicken are a taboo for my other half-half (Prawn Noodle Soup, Penang Assam Laksa & Chinese Chicken Noodle Soup)? So, between between seafood and lamb, I thought lamb should be a good run for Hu Tieu Nam Vang. My version of Hu Tieu Nam Vang? Lamb broth generously ladled over rice noodles assembled alongside crispy fried lamb, fresh herbs and beansprouts, paired with a dipping sauce made from chillies, garlic, soy sauce, sugar and lime.

Thai Lemonade

 
Can you believe it? I am actually featuring a drink recipe? The last two being Orange Sangria an Mango Mocktail and? What shall I say? My mint leaves were ready for plucking and I had the rest of the ingredients as well, including a packet of basil seeds. Basil seeds? I think they are a favourite for Thais ((Thai Crispy Fish, Tom Yum GoongTom Kha Gai & Thai Vegetable Curry) and their drinks? Are we right or we are doing the guessing game? I think we are right because my trip to Bangkok did expose me to basil seeds as well as basil leaves for Thai savory (Shrimp Pad Thai, Thai Carrot Soup & Spicy Thai Noodles) and sweet dishes. So, what else should I say? Thai Lemonade was the outcome and for keeping it sort of healthy, I decided that honey will be a better option compared to sugar and the rest of the ingredients, as you wish as per your taste measurement. Lemon (Baked Lemon Chicken), basil seeds, mint leaves, honey, mineral water and ice for Thai Lemonade.

Unagi Kabayaki

You know what foodies? If the front door is not the exit out of our house, there is always the back door in case. Similarly, when cooking is a concern, tell me, do we have to get it perfectly right and be as perfect as others or must our dish be alike, like theirs (Tofu Katsu, Kenchin Jiru  &  Simmered Daikon)? Not necessarily if you are asking me. Look, I wanted to make Unagi Kabayaki, but I don't think I will ever be able to hold the slippery eel, neither, can I bring myself to cleaning it. Thus, I took the other entrance. Call it the back door to (Japanese Eggplant Saute, Teppanyaki Salmon & Egg Fish Roll) Unagi Kabayaki. I actually bought frozen grilled unagi and basically, I gave it my twist for elevating it as my style to Unagi Kabayaki and instead of the sticky sauce atop, I paired it alongside my style Japanese style spicy, tangy and sweet sauce, also some thin strips of cucumber and spring onion. Invention? Wouldn't you agree and food proud moment according to how we prefer? Unless, you feel you should outrightly discount my, my style Unagi Kabayaki? Oh, of course, before I forget, we need a plate or bowl of rice for Unagi Kabayaki.

Thai Crispy Fish

Thai Crispy Fish. Thai again and fish again? Well, what can I say? Thai food forever a tremendous food killer in my house and fish of course, oh-god, do I have to repeat myself again? I think you know it (Thai Steamed Fish, Teochew Steamed Fish, Hong Kong Style Steamed Cod Fish, Steamed White Pompret & Chilli Lime Fish). Obviously too, Thai cuisine is not something new for me. I sort of have not only belted the essential Thai cooking technics, but also the required Thai ingredients for the splattering and profound tastes (Tom Yam Goong, Tom Kha Ghai, Spicy Thai Noodles, Thai Fish Noodle Soup, Thai Vegetable Curry & Shrimp Pad Thai Salad). This Thai Crispy Fish? Another, the other style to how a Thai fish dish should be? Sauce made from the quintessential Thai ingredients like lemongrass, kaffir lime leaves, lime juice, fish sauce and soy sauce, tipped over crispy fried threadfin/ikan kurau fish (Crispy Chilli Fish).

Tom Yum Goong

Tom Yum Goong! The other side of the coin to Tom Yum Soup (Seafood Tom Yum Soup). In fact, I found out that Tom Yum Goong is the most well known variety of tom yum (Tom Kha Gai & Tom Yum Chicken) and usually, make use of prawns or shrimps (Tom Yum Prawn Fried Rice), but I decided I will go for a combo of seafood and I also decided I will tweet the originality of the recipe. Regardless, we still need the customary Thai ingredients (Spicy Thai Noodles, Thai Fish Noodle Soup, Thai Vegetable Curry & Shrimp Pad Thai Salad) and instead of lime juice, it should be tamarind juice or you can use both as well, depending on hour sour you like tom yum goong to be and I also sauteed the herbs for aroma to rise up (Thai Steamed Fish, Thai Green Fish Curry & Thai Carrot Soup). Next was, of course, adding the rest of the ingredients, seasoning, tasting for perfecting the big, bold tastes and coriander leaves garnished before serving. Tom Yum Goong! Gosh! Simply fabulous. Spiciness, tanginess and double doze of aroma. Kaffir lime leaves and coriander leaves.

Kerabu Mangga (Mango Salad)

Kerabu? What is kerabu? Kerabu is basically our Malaysian, Malay style (Sayur Lodeh, Sambal Petai Bilis & Masak Lemak Nenas) raw salad. Nothing much to do actually when this kinda of kerabu is a concern, though for some other types, sometimes a tiny bit of cooking is involved (Gado Gado), but generally we should just look at tossing and mixing the ingredients together (Chicken Feet Kerabu, Thai Mee Hoon Kerabu & Prawn Cocktail). Kerabu Mangga or Mango Salad? Ohlalala! Dang a million times. I bet you are agreeing how attractive and tempting this mango salad is (Prawn Mango Curry)? Of course. I should vouch. Not only temptation to the highest degree, its also a burst of freshness and crunchiness (Shrimp Thai Salad, Watermelon Salad & Cucumber Yogurt Salad). Can you imagine the sweet sour mango notes, spiciness from chillies, appreciated acidity from shallots, fresh burst of mint leaves and of course crunchiness of nuts, all coming together? My-my! Can't get enough right? And Kerabu Mangga by far is a great pairing for rice and other side dishes or as a start-up before your main course. So, tell me, why slog in your kitchen for a veggie side dish when mango salad is the wonder easiness. Oh, before I forget, its a vegetarian version as well without compromising on deliciousness.

Sambal Petai Ikan Bilis (Stink Beans And Anchovies in Chili Gravy)

Petai projection and petai cooking again. That's right foodies. Remember, I have already told you (Sambal Udang Petai)? In my the other, other petai recipes (Sambal Sotong Petai, Sambal Tumis Ikan Bilis & Sambal Bilis Petai) as well? Bilis/anchovies combination again (Anchovies Long Beans Fried Rice & Anchovies Fried Mee Hoon). How far further can a petai sambal recipe go, you tell me? I really couldn't think. I went like, should I add this, should I add that, so on and so forth, back and forth. Finally, I thought of boiled eggs. Boiled eggs? Why not? Anything wrong? I mean, we Malaysians do, from time to time make Sambal Telur/Egg Sambal? Just that I merged petai, bilis and telur together. Far out fab. Trust me. Simply irresistible right? I reckon.

Prawn Curry Laksa

Various ways, various styles and various types of Curry Laksa availability. Of course. In fact, I myself I think have already shared a fair bit (Home Made Curry Mee, Curry Chicken Noodles, Malaysian Lamb Curry Noodles & Nyonya Curry Laksa). Curries by far too, what should we say? There's a huge collection and I bet you will not be short of those different kindas between in-country and out of Malaysia countries. Wouldn't you agree? If you are asking me, in my Indian house, curries are a food stealer, maybe not so much for me, but for my other half-half especially (Assam Fish Curry, Indian Chicken Curry, Lamb Kofta Curry, Devil's Curry & Vegan Potato Curry). I can go on and on about curries, then again, my point is that curry is the main highlight for this Prawn Curry Laksa. Basically, curry broth made from prawn shells and heads, and we also need some fresh prawns for assembling alongside the rest of the ingredients. I think I have told you before? Why I save prawn heads and shells (Prawn Cocktail, Fried Prawn WantonsGrilled Spicy Prawns, Chinese Prawn Fritters & Prawn Petai Sambal)? Obviously, each time I wanna make prawn curry broth (Tamarind Prawn Curry & Prawn Mango Curry), or even for other dishes, these will be handy (Prawn Noodle Soup) and Curry Laksa can't be perfected without coconut milk (Coconut Salted Fish & Shrimp Coconut). Prawn Curry Laksa? Amazingly vibrant and will be exciting to our palates right?

Tom Kha Gai

Tom Kha Gai? The other side to another Thai Soup (Seafood Tom Yum Soup), or can be said as another style to Tom Yum Soup basically (Tom Yum Chicken). Whatever you like to add into Tom Kha Gai, in other words, ranging from seafood, poultry and meat, though I can't say if beef is suitable, the rest I have already mentioned should be food fine (Thai Green Fish Curry, Shrimp Pad Thai Salad & Thai Steamed Fish). Of course, when we speak about Thai cuisine overall, what should we expect? Obviously, the big, bold and power packing tastes (Spicy Thai Noodles & Thai Carrot Soup)? Sure. We shouldn't dispute, should we? Of course not. Herbs, fish sauce and chillies naturally are some of the key ingredients, for this Thai Soup, Tom Kha Gai, we crucially need a good run of coconut milk (Thai Vegetable Curry, Shrimp Coconut & Creamy Coconut Lentil Curry) and I opted for fish as well (Thai Fish Noodle Soup). Tom Kha Gai. The burst of Thai tremendous deliciousness.

Navratan Korma

Navratan Korma or shall we also call it Nava Korma? Just kidding. Jokes aside, Navratan Korma made by Nava K is a truly inspiring thick, rich and fantastically flavorful Muglai and North Indian (Rice Pilaf) influenced curry basically (Cauliflower Curry, Drumstick Sambar & Vegan Potato Curry). Unlike the simplicity of Mutton Kurma and Vegetable Kurma I have shared before, Navratan Korma is an outcome of a home made paste, a combo of veggies and of course, ghee and curry leaves for the sensational aroma. What else should I say or must I include? Trust me and believe me, Navratan Korma is all about really pleasurable deliciousness. Whether you are a vegetarian (Vegetarian Sandwich, Mulligatawny SoupVegetable Biryani) or not, Navratan Korma I reckon will put a big broad smile on your face and pairing it is endless. Either for a full course vegetarian meal or what should stop you from pairing alongside whichever other dishes (Cashew Masala Chicken, Lamb Rogan Josh, Chloe Masala & Eggplant Tikka).

Asian Watermelon Salad

Watermelon for a savory salad (Watermelon Sorbet)? Why not? Why shouldn't we give a go (Prawn Cocktail & Shrimp Pad Thai Salad)? In fact, already proven. I made and I can't be food happier. The Asian style to a watermelon salad and when we speak about Asian savouries, what else you think they can be? Obviously, we Asians, don't you think we love loudness and boldness in dishes? Of course, if you are asking me. Unlike Western salads, as far as I know, Asian salads are a different matter food lingo all together? Take this Asian Watermelon Salad as an example and even our veggies stir fried. Whether the simplicity or profoundness with more than enough ingredients veggie dishes (Tofu Green Beans Stir Fry, Red Cabbage Thoran, Bean Sprouts Salted Fish, Kailan Oyster Sauce & Chloe Masala) and when refer to Asian tastes, what can possibly be? Vegetables by far and by themselves (Vegetarian Sandwich) are the fiber and nutrients for our overall well being? And Asian Watermelon Salad is also no short of the appreciated sweetness, tanginess, tadbit of spiciness and aroma of mint leaves. Wouldn't you as well agree that Asian Watermelon Salad is an ultimate stand up and pop up in terms of color vibrancy and excitement? Pleasing to our eyes and to all our food senses? Of course without a doubt (Apple Cucumber Salad, Mango Cucumber Salad, Cucumber Yogurt Salad & Vegetable Raita).

Chocolate Cheesecake

What an emptiness to desserts in this precious space of mine. In fact, when was the last time I shared a dessert recipe? Oh my godness! Been quite a while (Watermelon Sorbet). Well, you can't blame me. Basically, there are no takers for desserts in my house. Between the two of us, we don't desire sweetness and also, shall I say the focus is mostly our daily meals instead of sweet rush or sweet crush (Saffron Poached Pears, Citrus Poached Pears, Fried Apple Fritters & Bake Rice Pudding). When I bake, whatever I bake is given away to friends, colleagues or neighbours (Lemon Buttermilk Cake, Lemon Cream Pie & Coconut Panna Cotta). Anyway, time was in hand and I decided I should bake. Not those major rocker kinda desserts, but the familiarity I have done before (Pandan Cheesecake & Mango Cheesecake). I mean what can be different for a cheesecake if you are considering simplicity? Biscuit bottom layer and for this latest version cheesecake, I did the cocoa powder chocolate and of course, the top must be the creamy and sweet cheesy layer? Of course.

Vegetarian Nasi Lemak

Options. We like options, we prefer options, we want options and I of course must agree. I must give you options as well. Nasi Lemak Sambal Udang, Nasi Lemak or this Vegetarian Nasi Lemak (Thai Green Vegetable Curry). Precisely. We definitely need options and I won't deprive you. What is this whole thing to this Vegetarian Nasi Lemak? Remember my previous recipe - Vegetarian Mutton Stir Fry? Yes. The same mushroom stalks vegetarian mutton. Nasi lemak on the other hand? Our Malaysian coconut rice. Rice (Vegetarian Rice Pilaf, Vegetable Briyani & Turmeric Rice) basically cooked alongside coconut milk. Henceforth, I am not, no, not attaching the recipe for coconut rice because? You tell me why? How many different types of coconut rice are there? Not as far as I know. Neither was I interested in testing or coining. Basically, lemme repeat myself again. You can grabbed the recipes from my previous two nasi lemak recipes I have already linked above. Rice matter (Coriander Rice, Lemon Cashew Rice & Dhal Rice) sorted out, time now we speak about vegetarian rendang. In fact, almost the same style as Chicken Rendang  but I reduced the amount of ingredients. Why? Cooking is not always about using hundreds of ingredients remember? Making do with what we already have instead of spending on ingredients? Right. Condiments for this Vegetarian Nasi Lemak? The standard of course? Cucumber and instead of fried anchovies or fried peanuts, I opted for really thinly sliced fried shallots. Why not right?

Shrimp Pad Thai Salad

Honestly guys, I don't know what else should I say when Thai cuisine is our food card. I think much we have already spoken about before? In my previous recipes (Thai Vegetable Curry)? I sincerely believe so because I have been taking you back and forth, to and fro, from Thailand and back to our mother land (Thai Carrot Soup & Seafood Tom Yum Soup). Today, lemme share with you this Shrimp Pad Thai Salad (Shrimp Pho). Obviously a noodle dish and one which I made due to I still had some spaghetti in hand after making Lamb Spaghetti. Of course, you can use, please go ahead and use other type of noodles. As you wish, as for your pleasure or as what's already available at home (Tom Yam Fried Mee Hoon, Spicy Thai Noodles & Thai Fish Noodle Soup). In fact, when we speak about home cooked meals, there is no right and wrong. Its you basically and you don't even have to replicate recipes as they are. That's how it is for me personally. Shrimp Pad Thai Salad? So easy. In fact, just a tiny fraction of cooking. Simmering the prawns in water just for a minute or two, and then, toss all the ingredients together. In a jiffy meal and trust me, Shrimp Pad Thai Salad  (Thai Mee Hoon Salad) will not let you down. I sincerely reckon each and everyone of you will joyously tuck in. Succulent prawns, spiciness from green chillies, aroma of kaffir lime leaves, fresh burst from ginger and tat tinge of saltiness and tanginess from fish sauce and lime juice.
