Spice-Kissed Drumsticks & Eggs

When you have a moringa tree, the possibilities in the kitchen are endless. The leaves and fruits are staples in my cooking, and I absolutely love using both. Before diving into today’s dish, let me share a bit about the moringa tree. Often hailed as a superfood and known as murunggakai in Tamil, the moringa plant offers a wealth of health benefits through its leaves, flowers, and fruits. The nutrient-packed leaves are rich in vitamins A, C, and E, iron, calcium, and protein, making them fantastic for boosting immunity, improving digestion, and supporting bone health.

The flowers, loaded with antioxidants and essential amino acids, reduce inflammation and enhance skin health. Meanwhile, the fruits, commonly known as drumsticks, are a great source of vitamin C, potassium, and dietary fiber, promoting cardiovascular health and helping regulate blood sugar. Moringa truly is a nutritional powerhouse, contributing to overall well-being (SUN-DRIED MANGO CURRY).

 



In my kitchen, the leaves often find their way into stir-fries and pair beautifully with rice dishes (TURKISH CARROT YOGURT SALAD). The fruits, or drumsticks, are typically added to curries - from lentil to mutton, fish (SOUTH AFRICAN FISH CURRY) and prawn curries. Today, however, I’m featuring drumsticks in an egg curry. Combined with aromatic spices and creamy yogurt, this dish is a thick, spicy, and luscious treat that truly celebrates the flavors of moringa. Plus, it’s not just a superfood - it’s a triple superfood.

 

Ingredients

4 to 5 drumsticks/murunggakai (remove skin and slice)

4 boiled eggs

Spices: bay leaves, star anise, cloves, & cinnamon

5 shallots (sliced)

1/2 tbsp ginger paste

1/2 tbsp garlic paste

Some sliced curry leaves

Curry powder (as needed)

Whisked yogurt (as needed)

Oil (as needed)

Salt (as needed)

Water (as needed)

 

Method

Heat oil in a pan.

Sauté the spices, shallots, ginger paste, garlic paste, and curry leaves until fragrant.

Add the sliced drumsticks and give a couple of stirs.

Add the curry powder and mix everything together.


Pour in water and simmer the drumsticks until they soften.

Season with salt, and add the boiled eggs. Stir everything together.

Remove from heat and stir in the whisked yogurt.

Done!
