My-my! Me and my baking. Still on-going. Llike they say, when the going gets tough, the tough gets going. True enough. I wouldn't keep quiet and I got down to making Semperit Cookies from the family group of Malay cookies. Nothing more did stop me and all went on well (Vanilla Butter Cookies, Cayenne Chocolate Cookies, Nyonya Pineapple Tarts & Chinese Peanut Cookies) until I had to pipe out the dough from the stringent and short tight tunnel like cookie mold. Oh-hack! Such a time consuming thing for ensuring that the long piece of dough didn't break in between and crumble and I also had make sure the size and shape were in balance with each other. What a killer go. In the end regardless, these buttery and vanilla scented Semperit Cookies were worthiness. I am sure you are agreeing and the more you will agree once you make.
55g caster sugar
1 egg yolk
1 tsp vanilla essence
120g all purpose flour
50g corn flour
80g custard flour
Sugar sprinkles (for decoration)
Combine the 3 types of flour and keep aside.
Cream butter and sugar till light and fluffy.
Add yolk and vanilla, continue to cream.
Sift flour mixture over.
Fold/beat on low speed till combined.
Pinch out a bit of the dough and insert into the mould.
Press out the long ribbon shape(s) individually on a baking tray lined with baking paper.
Do the same to the rest of the dough.
Decorate with sugar sprinkles.
Bake at 160C for 20 minutes or till golden yellow.

Hi Nava, I love this cookies, one of the best. Yours look so lovely cos your recipe consist custard powder, made the color look so pretty. But agree with you, the plastic pump really give us hell lot of problem when pump out the dough. I think the cookies press would be easier to make this samperit cookies.ReplyDelete
