PIneapple Tarts Recipe

Baked pineapple tarts. In cannister and individual pieces. Made with buttery crumby pastry, and spiced pineapple jam.
Golden and mildly crispy pastry filled with spiced pineapple jam,   that’s the  captivating  pineapple tarts. This recipe features the open-face version, also known as Nyonya pineapple tarts, a favorite during festive seasons and special occasions. Making pineapple tarts may be a tedious job, but homemade tarts are always worth the effort (TEA GOJI BERRY JELLY). 

What makes these homemade pineapple tarts unique compared to other fruity tarts?

 

Butter

Creates an extra crumbly, melt-in-the-mouth texture (BUTTER CAKE RECIPE). 

 

Corn flour

Binds the dough, making it tender and crisp, while enhancing the filling and extending shelf life.

Rock Sugar

Adds subtle sweetness to the jam, dissolves slowly, and gives a slight caramel hue.

 

Spices

Not just cinnamon, but cloves too, for that distinct Nyonya twist in the pineapple jam.

Ingredients for Homemade Pineapple Jam

1 medium pineapple - remove skin and grated

1 cinnamon stick

2 cloves

Rock sugar to taste


How to Make Homemade Pineapple Jam

Combine all ingredients in a pan. 

Cook over low heat until the mixture dries out.

Cool, then roll into small balls.

 

Ingredient for Crumbly Buttery Pastry

75g all-purpose flour

1 tbsp corn flour

50g cold butter

1 tbsp icing sugar

1/2 tsp vanilla essence

2 egg yolks (1 for brushing)

3 tbsp milk (or as needed)

 

How to Make Pastry for Pineapple Tarts

Combine all ingredients (except one egg yolk). 

Use fingers to rub and crumble them together.

Gradually add milk to form a dough.

Roll out the dough and cut into round shapes.


How to Make Pineapple Tarts - Nyonya Style

Place pastry on a lined baking tray and press pineapple balls atop.

Brush with remaining egg yolk.

Bake at 160°C for 20 minutes or until golden brown.
