Vegetarian Noodle Soup

Wheat rolled noodles, with vegetarian soup, straw mushrooms, salad leaves and dried wolfberries.

Some dried wolfberries added to the stock bring natural sweetness and health benefits. The vegetables are simple. Straw mushrooms and salad leaves, but you can add more of your choice.

Crunchy noodles in a mildly sweet, aromatic soup with mushrooms, salad leaves, and wolfberries make this one of the best vegetarian noodle dishes (MEE REBUS VEGETARIAN). 


Ingredients for Vegetarian Noodle Soup (for 2 person)

Vegetable stock - as needed 

6 cloves garlic - crushed

1 ½ tbsp wolfberries - soaked in water to soften

1 can straw mushrooms - drain off the liquid

Salad leaves - as needed

2 rolls Yee Mee
Spring onion - sliced 

2 tbsp oil

Crushed black pepper and salt to taste


How to Make Vegetarian Noodle Soup - Chinese Style

Heat oil and saute garlic to release the aroma.

Pour in vegetable stock , add salt and pepper and simmer.

Once simmered, add wolfberries and mushrooms. 

Pour over noodles and salad leaves.

Garnish with spring onion.
