Bitter Gourd Chips

Bitter Gourd Chips or Pavakkai Chips. Trust me, even those who can't stand bitter gourd I bet will truly love these crispy fried bitter gourd chips. Maybe I shouldn't speak on behalf of others, in my house, oh-my-god, the moment these chips are out of my frying pan, they just disappear even before anything else (Lotus Root Chips, Crispy Fried Okra & Mushroom Rolls). Hands will just crawl just like that. Even myself, I myself can't help putting some in my mouth (Cauliflower Fritters). To make bitter gourd chips, lemme tell you that its  really simplified. Yes. But make sure you slice bitter gourd to utmost thinly which by far is crucial (Valakkai Chips). Otherwise, I'm afraid chips will not be as crispy as you expect and believe me, somehow its like magical that once bitter gourd is fried, its bitterness just vanishes in thin air (Bitter Gourd Puli Curry, Bitter Gourd Prawn Curry & Bitter Gourd Sambar). Bitter Gourd Chips? Ahhhhh! Just so good. Oh, what is unique and out of this world for this my version Bitter Gourd Chips? Curry leaves fried together. You should try and trust me, you won't regret.

Ingredients
4 medium size Indian bitter gourd - remove seeds and slice thinly. Soak in water for 10 minutes and squeeze to remove excess water.
1/2 tbsp plain chilli powder
1/2 tbsp plain curry powder
1/4 tsp garam masala
1 tsp turmeric powder
1/2 tbsp cornflour
1 tsp rice flour
3-4 sprigs curry leaves - shredded
Salt for taste
Oil for frying
Method
Into a bowl,  mix all the ingredients together.
Sprinkle a little water if needed.
Heat oil and fry gourd in batches till crispy and light brown in colour.
Remove and drain on kitchen towel.
Garnish with more curry leaves before serving.

  5. Wow, how crispy and crunchy it is. Love it.
You know, one way or the other, everybody would have hated Bitter Gourd at some point of time. But once they get to know how to get rid of the bitterness, it works out well. I love the fries now!!
The only ingredient I never added was, "fish or meat curry powder", otherwise my version is similar to yours. I'm sure the curry powder would have given the extra kick.

  8. Hello dear...thanks a ton of roses for stopping by my humble space and leaving your precious views! Your words made my day even brighter...thank you!

Like you, I was one of the millions who ran away from bitter gourds during my younger days. My Amma sometimes would just give up with me. I only started eating fried bitter gourds after getting married, that too in a restaurant. I did say "ewww" at the first bite...but continued eating after that. Lol.

Your fried version looks very tempting...I need to grab some now, hope you don't mind. Glad to meet you and your delicious space! Have a Super Sunday and gorgeous week ahead :)

  26. Definitely a must try, adding new touches to an already popular Indian vege (sure beats Chinese bitter gourd dishes anytime-don't like the 'in-your-face' bitterness of the Chinese versions)
