Rava Kesari

Rava Kesari, or Semolina Kesari, aka, Indian Semolina dessert. But if you are expecting a typical, authentic and traditional Rava Kesari, I think you will be not pleased. Why, are you asking me? Well, if you can remember me telling you that I like to play around with recipes? I like to tweet recipes and I like to break free from recipes which may have existed down the generation. Please don't get me wrong (Watermelon Sorbet, Creme Caramel, Cream Puff & Fried Apple Fritters). Of course, we must hail and respect handed down from generation to generation original recipes, but is there anything wrong if we want to coin another version? For me personally, as I have already told you, I prefer some thinking of mine included for traditional recipes(Sago Gula Melaka, Chocolate Rum Tart, Mango Cheesecake & Honeydew Sago). For this my version of rava kesari, I am sure you must be wondering why you are not seeing those yellowish kinda and alike generally kesari? Basically, I am not fond of coloring unless it can be affirmed that coloring is of quality. Otherwise, I rather do away with coloring and for this my version Rava Kesari, I added saffron strands (Saffron Poached Pears) which by far as you know or don't, you got to pay more compared to the bottle of yellow color. Of course, the choice is yours and instead of cardamom, I decided to go along nutmeg powder for scent. Nevertheless, nothing should stop you from using this idea of mine and then coming up or using other ingredients for your own version (Pandan Cheesecake) of Rava Kesari. Having said that, wouldn't you agree this Rava Kesari is a dessert show stealer?

Creamy Mushroom Soup

Cold weather calling dish. Of course, when weather is cold, don't you think we yearn for a bowl of hot piping soup? Of course. Any kinda of soup by far will be good for warmth and the list is endless. So many times of soups we can make and if we are speaking about simplicity, then we must refer to those light soups (Mixed Vegetable Soup, Corn SoupTomato Spinach Soup & Lentil Vegetable Soup) & or even Chinese soups (Chinese Chicken Herbal Soup & Burdock Root Soup) in which whatever ingredients you prefer can go in (Chicken Vegetable Soup & Vietnamese Fish Soup) and all you got to do is slow simmering. This Creamy Mushroom Soup on the other hand is not the same (Tom Kha Gai & Onion Soup). First we sweat/saute garlic, shallots and mushrooms in butter. Next is pouring water and then pulsing/blending these ingredients, before pouring back into the pot for simmering and adding milk, salt and pepper for this Western style creamy soup. Of course toast will be good for a complete, wholesome meal. Recipe for toast is attached as well. Butter, rosemary and garlic toast for dipping into this thick, creamy and absolutely favourable mushroom (Mushroom Veggie Burger & Mushroom Rolls) soup. Fab right?

Nyonya Lam Mee

Indulge in the exquisite flavors of Nyonya Lam Mee, a tantalizing Malaysian delight that will transport your taste buds to culinary nirvana. You might wonder about this dish, but let me assure you - it's a noodle sensation that you won't soon forget.

Nyonya Lam Mee holds a special place in my heart; it's a favorite whenever I visit the hawker stalls. Visualise this: plump yellow egg noodles swimming in a velvety gravy, each bite bursting with savory goodness. While each stall may have its unique twist, the essence remains - a comforting bowl of noodles and gravy, paired with the fiery kick of sambal belacan.

Prawn Curry Laksa

Various ways, various styles and various types of Curry Laksa availability. Of course. In fact, I myself I think have already shared a fair bit (Home Made Curry Mee, Curry Chicken Noodles, Malaysian Lamb Curry Noodles & Nyonya Curry Laksa). Curries by far too, what should we say? There's a huge collection and I bet you will not be short of those different kindas between in-country and out of Malaysia countries. Wouldn't you agree? If you are asking me, in my Indian house, curries are a food stealer, maybe not so much for me, but for my other half-half especially (Assam Fish Curry, Indian Chicken Curry, Lamb Kofta Curry, Devil's Curry & Vegan Potato Curry). I can go on and on about curries, then again, my point is that curry is the main highlight for this Prawn Curry Laksa. Basically, curry broth made from prawn shells and heads, and we also need some fresh prawns for assembling alongside the rest of the ingredients. I think I have told you before? Why I save prawn heads and shells (Prawn Cocktail, Fried Prawn WantonsGrilled Spicy Prawns, Chinese Prawn Fritters & Prawn Petai Sambal)? Obviously, each time I wanna make prawn curry broth (Tamarind Prawn Curry & Prawn Mango Curry), or even for other dishes, these will be handy (Prawn Noodle Soup) and Curry Laksa can't be perfected without coconut milk (Coconut Salted Fish & Shrimp Coconut). Prawn Curry Laksa? Amazingly vibrant and will be exciting to our palates right?

Butter Prawns

Herbs (Chicken Herbal Soup) and spices are like forever a must for practically most of the dishes I cook. They can either be from my garden (Curried Lemongrass Fish, Nasi Dagang, Rosemary Cheesy Potatoes) or the other choice is obviously buying (Assam Laksa. Assam Fish Curry, Watermelon Mint Salad & Cumin Rice), I am particularly fond of coriander leaves (Grilled MackerelFish Chilli Lime, Ghee Almond Rice, curry leaves (Spicy Crab Parathal, Prawn Devil Curry, Cili Padi Fish) and spring onion (Bean Sprout Salted Fish & Mutton Ball Soup). Every now and then I also reach out to dried herbs (Lamb Burger), sometimes the powdered spices and sometimes I grind the spice mix (Prawn Mango).

Indian Masala Chicken Curry

Guys, especially those of you who cook regularly, tell me. What can potentially be different for any kinda Indian Masala Curry? If you are asking me, masala is basically a composite of various types of spices. You can of course opt for ready made spice mixtures (Butter Chicken) or even you can mix the types of spice powders (Mutton Bone Marrow Curry & Cashew Masala Chicken) and definitely nothing like a home made masala (Navratan Korma) or curry paste (Thai Chicken Green Curry). Certainly. For me personally, it all depends. Depends on my mood, depends on time I have in hand and depends too on what's already stocked up at home. It all basically depends and depends on country or area specific as well. Some spices are more in popularity in certain countries or region or each individual state. What about this Indian Masala Chicken Curry of Malaysia (Malaysian Chicken Chop) by this Malaysian (Chicken Curry With Potatoes, Curry Chicken Noodles & Indian Chicken Curry)? Alright. I was definitely in the mood for some extra work and I made the curry paste. The aromatic and full bodied curry paste in which chicken (Sweet Chilli Chicken, Ayam Masak Merah & Grilled Chicken Wings) was cooked to the right texture. Indian Masala Chicken Curry (Indian Mango Chutney)? Believe me. Oh-my-my. Just so appetizing and kicking in the customary, beautiful and lovable tastes (Baked Cornflakes Chicken, Braised Chicken Feet, Easy Chicken Kebab & Baked Lemon Chicken).

Mutton Bone Marrow Curry

This thing about cooking mutton during weekends? I really can't compute why only during weekends. Maybe from back then? During my growing up years and mutton can only come into our food picture during weekends? I think so. Back then, for a poor family like mine, in fact, mutton dish is only once a month. Basically because mum had to stretch her dollars and cents. Mutton not affordable for us. Maybe that's why its like an automatic tuning till this day that I too decide on mutton dish for weekends. Potentially and possibly. On this particular weekend, I couldn't think of none except a thick, spicy and really bang-on Mutton Bone Marrow Curry (Mutton Parathal, Indian Mutton Meatball Curry, Mutton Soup & Mutton Kurma). Not really very much different within the context of ingredients as in for the rest of the mutton dishes I have cooked before (Dalcha, Mutton Keema, Pepper Mutton Curry & Mutton Varuval). Then again, what can be potentially different for an Indian mutton curry or even lamb curry (Lamb Rogan Josh & Lamb Kofta Curry) regardless where it originates from. Am I wrong? I don't think so. We just vary the spices and ingredients to our taste or for fitting mutton as another Indian dish style (Mutton Pepper Masala & Easy Mutton Curry)? Mutton Bone Marrow Curry? Wouldn't you agree is an absolute winning temptation? Just so inviting and packing major punches of Indian quintessential bold tastes?

Thai Steamed Fish

Honestly, I actually am appreciating the steaming style to cooking (Hong Kong Style Steamed Fish, Teowchew Steamed Fish & Nyonya Steam Fish). I won't say quick and easy, but potentially, don't you think the healthiness and can be quite a basic cooking technic? I reckon. And when Thai dishes are a concern, us being the Malaysians who love Thai food (Tom Yum Fried Rice, Thai Green Fish Curry, Seafood Tom Yum Soup & Thai Fish Noodle Soup)? Pretty much nothing much should I say? Moreover, most of the staples already at home when you cook Thai food every now and then? I believe so (Thai Chicken Green Curry, Thai Carrot Soup, Thai Vegetable Curry & Shrimp Pad Thai). So, how do we go about making this Thai Steamed Fish? Not as straightforward as those simplified versions because there's two levels. Firstly steaming the fish alongside eggplant and then making the sauce before tipping onto fish. Still, I believe Thai Steamed Fish is rather achievable. I mean not a brain cracker if you follow this nava-k's recipe. Thai Steamed Fish. Steamed to a perfect texture seabass and seated in a spicy, tangy and aromatic sauce/gravy, garnished with coriander leaves and chilli curls.

Chocolate Cheesecake

What an emptiness to desserts in this precious space of mine. In fact, when was the last time I shared a dessert recipe? Oh my godness! Been quite a while (Watermelon Sorbet). Well, you can't blame me. Basically, there are no takers for desserts in my house. Between the two of us, we don't desire sweetness and also, shall I say the focus is mostly our daily meals instead of sweet rush or sweet crush (Saffron Poached Pears, Citrus Poached Pears, Fried Apple Fritters & Bake Rice Pudding). When I bake, whatever I bake is given away to friends, colleagues or neighbours (Lemon Buttermilk Cake, Lemon Cream Pie & Coconut Panna Cotta). Anyway, time was in hand and I decided I should bake. Not those major rocker kinda desserts, but the familiarity I have done before (Pandan Cheesecake & Mango Cheesecake). I mean what can be different for a cheesecake if you are considering simplicity? Biscuit bottom layer and for this latest version cheesecake, I did the cocoa powder chocolate and of course, the top must be the creamy and sweet cheesy layer? Of course.

Dalcha (Dhal Mutton Curry)

You know what? I made another version of Dalcha. Remember the previous? Dalca - Mutton Dhal Curry? That's right. But before you jump the gun, lemme assure you that its not the same. Not similar basically. Another, the other side of mutton and dhal being celebrated as the two core ingredients. Mutton of course, as you know or don't, I won't deny is one of those we long for every now and then until, the various types of mutton dishes I have already shared with all of you (Mutton ParathalIndian Mutton Meatball Soup, Mutton Soup, Mutton Kurma, Masala Mutton Curry, Mutton Keema & Devil's Curry) speaks for themselves. In fact, if you are asking me, you can go ahead and use lamb as well (Lamb Kofta Curry & Lamb Spaghetti) for dalcha or maybe beef or you think chicken it can be? Of course, like I have already told you, lentils or dhal for our Indian cooking undeniably? You tell me (Mysore SambarDhal Rice, Drumstick Sambar, Fish Sambar & Bitter Gourd Sambar). So, how do we make Dalcha? Listed below are the ingredients. Dhal, mutton, spices, veggies and for the creamy touch, instead of coconut milk, I added yogurt (Vegetarian Mulligatawny Soup).

Nasi Goreng Tom Yam Ayam (Tom Yam Chicken Fried Rice)

This thing to cooking sometimes can wreck my life. Yes. It can. What to cook is the main dilemma and then, what about the ingredients? When I can't really decide or I really don't have the time to think so hard, I will decide. I decide on Fried Rice (Kampung Fried Rice, Lamb Fried Rice & Belacan Fried Rice). Remember, I told you before? Anything goes? Anything literally. Any ingredient and as long as you have cooked rice on standby (Anchovies Long Beans Fried Rice)? In my house, I should say there is no short of cooked rice (Malaysian Fried Rice & Anchovies Fried Rice). Well, what can you expect when both of us just so and must have rice daily?  Of course, a Thai style fried rice is appreciated too (Tom Yum Prawn Fried Rice). Who wouldn't especially us typical Malaysians? We so love those, pretty much, about the same, more or less tastes like our Malaysian dishes? Especially spiciness and aroma (Thai Green Fish Curry, Spicy Thai Noodles, Thai Fish Noodle Soup, Thai Chicken Green Curry, Thai Carrot Soup, Thai Vegetable Curry & Shrimp Pad Thai Salad). Nasi Goreng Tom Yam Ayam/Tom Yam Chicken Fried Rice? Have I not said enough before (Seafood Tom Yum Soup, Tom Yam Chicken & Tom Yam Fried Mee Hoon)? Tom Yam. The wonder to Thai cuisine. The ever loved tom yam paste for chicken and leftover cooked rice frying. Oh, of course, chillies, shallots, kaffir lime leaves, fish sauce and French beans for this Tom Yam Chicken Fried Rice.

Tari Wale Aloo

I wish. I sincerely wish I don't have to make curries as regularly as I do. Then again, when you are married to a typical Indian man who will most probably flip and flop if curies are not part of his meal almost daily, I guess then (Pavakkai Puli Kuzhambu, Drumstick SambarCauliflower Curry)? Do I have to say anything more? I don't have to right? When marriage and food love are a concern, I think most of us women will go with the flow? We generally and usually give in to what pleases our husbands? Potentially. Thank god on the other hand my other half-half does not mind a vegetarian curry which by far I am don't mind because such a curry logically pretty much can be paired alongside many other sides for a full house meal (Vegetable Biryani, Chloe Masala, Carrot Poriyal & Eggplant Tikka Masala). And potatoes which you can cook in millions of ways are always a favourite (Indian Potato Balls, Bonda, Aloo Gobi, Chilli Aloo & Dum Aloo)? Today, ladies and gentlemen, it is this Tari Wale Aloo, or Vegan Potato Curry (Egg Potato Curry). Some like automatically walking inside the curry, plus, obviously, potato is the central ingredient and the rest of the ingredients, trust me, nothing out of this world. Coconut milk of course as you know or don't, does bountiful of creaminess and deliciousness and ghee is the other for a North Indian, Tari Wale Aloo.

Kenchin Jiru

Quite an achievement I have to say. So far so good with Japanese dishes. After three dishes (Japanesse Eggplant SauteSimmered DaikonTeppanyaki Salmon)? Look, I am not saying I know it all nor I am pro. But I have picked up the vital Japanese cooking tips by myself and I must credit those tv cooking programs as well. Then again, what can different for a Japanese soup but those customary Japanese ingredients? You tell me. Don't you think the ingredients potentially can be either miso paste, mirin, dashi stock/powder and sake? Or even Japanese soy sauce, garlic and ginger which took a back step for this Kenchin Jiru Soup. Kenchin Jiru Soup by the way is a vegetable soup (Onion Soup & Lentil Vegetable Soup) and obviously the Japanese way to a vegetarian soup (Chinese Vegetarian Noodle Soup & Vegetarian Chinese Winter Melon Soup).

Shrimp Pad Thai Salad

Honestly guys, I don't know what else should I say when Thai cuisine is our food card. I think much we have already spoken about before? In my previous recipes (Thai Vegetable Curry)? I sincerely believe so because I have been taking you back and forth, to and fro, from Thailand and back to our mother land (Thai Carrot Soup & Seafood Tom Yum Soup). Today, lemme share with you this Shrimp Pad Thai Salad (Shrimp Pho). Obviously a noodle dish and one which I made due to I still had some spaghetti in hand after making Lamb Spaghetti. Of course, you can use, please go ahead and use other type of noodles. As you wish, as for your pleasure or as what's already available at home (Tom Yam Fried Mee Hoon, Spicy Thai Noodles & Thai Fish Noodle Soup). In fact, when we speak about home cooked meals, there is no right and wrong. Its you basically and you don't even have to replicate recipes as they are. That's how it is for me personally. Shrimp Pad Thai Salad? So easy. In fact, just a tiny fraction of cooking. Simmering the prawns in water just for a minute or two, and then, toss all the ingredients together. In a jiffy meal and trust me, Shrimp Pad Thai Salad  (Thai Mee Hoon Salad) will not let you down. I sincerely reckon each and everyone of you will joyously tuck in. Succulent prawns, spiciness from green chillies, aroma of kaffir lime leaves, fresh burst from ginger and tat tinge of saltiness and tanginess from fish sauce and lime juice.

Phuket, Thailand (Super Star Libra Cruise) - My Solo Cruising

Disappointing. Disappointed. Disappointment. Phuket shore excursion (Super Star Libra Cruise Solo Cruising) didn’t take off until after 1.00pm. Due to magic show at the poolside. Actually, magic action was inside the pool itself. All locked key locked up magician eventually emerging from water for proving his critical success factors. How did it go with me? Dang! Neh! I basically out of no choice was amongst the hundreds who seemingly were all excited, trilled and frilled. I, in fact wasn’t even aware that magic show is gonna be part and parcel of this cruise holiday. Honestly, such a waste of my time. I would have actually appreciated Phuket sightseeing. Then again? Lunch too by 12.00pm didn’t go down with me. Just two hours ago, I had tucked into breakfast, and food again? Of course, without a doubt, there were still aplenty takers for the buffet lunch. I on the other hand just nibbled some side dishes. Thank god, an hour later, the moment I have been patiently waiting arrived. Phuket sightseeing. The same procedure, the same way out of ship and the same coach driven journey (Krabi Shore Excursion).

Verona, Italy: A Journey Through Romance and History

As the days dwindled down to just two left in Italy ( Venice ), a feeling of reluctance settled in ( Florence ). How I wished our tour could...
