An impromptu visit to Penang, don't ask me why, what and how. Please don't. Its a long story I don't want to dwell upon. Gonna be rather complicated, I am sure won't make sense to you as well. So, skip, lets skip the reason to Penang, let me speak on this dining experience in Coffee Lane Cafe. Accompanied by my cousin, he, in fact is the one who suggested Coffee Lane Cafe he has visited, maybe, lets say two or three times. I of course was extremely keen, why not? Sounded like my kind of food love, we parked, oh god, parking is quite a thing in Georgetown. Blame it on the usual hustle and bustle, rapid development and Georgetown by itself is a major tourism parade and paradise. We managed, we parked, not really close, within a 5 minutes walking distance, prior to crossing the junction for the entry to Coffee Lane Cafe.

Thai Fried Chicken
Honestly, fried chicken is not a regularity in my house. Most of the time, fried chicken is trended when we have a gathering and also, when family pops by, though I do from time to time cook chicken when its a meal on my own (Chilli Chicken, Chicken Kebab, Sesame Chicken & Sweet Chilli Chicken). Of course, like I have repeated donkey times (Sichuan Noodle Soup), my other half-half will not come any close to chicken and maybe that could be one of the reasons why fried chicken is like every now and then when he is travelling (Tandoori Chicken, Baked Lemon Chicken, Curried Roast Chicken, Baked Cornflakes Chicken & Spicy Chicken Wings) What was the occasion why I made a different style of fried chicken on this particular day? Family popped by and the kids in the family, in fact, kids these days just so love fried chicken (Ayam Goreng Berempah). What is the supporting reason for making Thai Fried Chicken? Pretty much I had stock of the Thai ingredients. You know me right? Me and my love for Thai cooking (Lamb Massaman Curry, Tom Yum Goong, Thai Vegetable Curry & Thai Green Fish Curry). Thai paste made, tipped into chicken and simmered to half cook chicken and then fried to utter crispy on the outside and soft tenderness inside, and aroma taking center stage of my kitchen

Chinese Ginseng Chicken Soup
Roots, barks, herbs and chicken. Pretty much the centrality for Chinese Ginseng Chicken Soup. Of course, we do have a choice to the high rank and grade Korean ginseng (Korean Radish Soup), but for me personally, its a big no due to its bitterness and strong content. I in fact have tasted Korean ginseng tea and soups which I really couldn't digest and trust me, I almost not only throw up, I actually felt as though my body is on fire. Chinese ginseng (Chinese Chicken Herbal Soup) on the other hand is mild even in soups and I also fancy those home made healthy and nutritious Chinese soups, including the vegetarian variants (Chinese Vegetable Noodle Soup, Old Cucumber Soup, Chinese Tofu Soup & Burdock Root Soup).

Tandoori Chicken
Honestly guys, if you thinking that you can't make tandoori chicken at home because you don't own a tandoor oven, you are definitely outrightly wrong (Grilled Chicken Wings). Who told you so or you yourself have concluded? Ask me and I will tell you that you can bake tandoori chicken in your oven, (Baked Lemon Chicken) or grill over a BBQ pit, and for those of you can't possibly do both, you can use the portable over the stove grill. Yes you can. I know what I am saying. In fact, I initially thought I will use the grill, then again, unless you cut chicken to small pieces, most probably you will be spending much time in being concern if tandoori chicken is cooked inside, of course, the outside char won't be an issue. Alright, so much for the cooking technic (Moroccan Chicken Stew & Chilli Chicken), can we get down to the recipe. Sure.

Ayam Pongteh
Me and my Nyonya cooking. Guess there is no end and if you are asking me, I don't think I will put a bracket to Malacca or Penang calling and coming Nyonya dishes. We did speak about Nyonya cuisine in quite a length previously (Chicken Vindaloo, Kuih Buah Melaka & Penang Assam Laksa) and in other recipes as well? Henceforth, lets just put a stop to speaking further on the same thing over and over again (Devil's Curry, Dried Shrimp Sambal, Masak Lemak Ikan Asin Nenas & Nyonya Lam Mee) instead of getting to the gist of this Ayam Pongteh. What is Ayam Pongteh or Pongteh Chicken? Basically, chicken cooked alongside potatoes, taucheo/fermented soy paste, chilies, vinegar and other kitchen friendly user ingredients, and for the end result of broad and wide burst of spiciness, saltiness and and nuttiness (Ayam Masak Tiga Rasa, Chilli Chicken, Ayam Goreng Berempah, Ayam Masak Merah & Chicken Devil Curry).

Ayam Masak Tiga Rasa
In case, just in case you are wondering what is Ayam Masak Tiga Rasa, of course we Malaysians don't need any explaining, but to the rest of you, I must mentioned that Ayam Masak Tiga Rasa (Ayam Masak Merah, Ayam Goreng Berempah, Rendang Ayam & Sambal Serai Ayam) is known as Chicken Cooked Three Flavours, or even Chicken Three Tastes.Three flavours or three tastes (Ikan Asam Pedas)? Obviously, we Malaysian love spiciness, sourness and sweetness as one in a dish and specifically today, its in ayam or chicken. Of course, if you are asking me, there are hundreds of recipes for Ayam Masak Tiga Rasa and to each I suppose their best known style of cooking and ingredients too. How about my style to making Ayam Masak Tiga Rasa? I think its a totality of a different kinda and unique too. Why? If you take a look at the ingredients, I am sure you can understand why and I also didn't want to stick to the traditional type of Ayam Masak Merah. The common and as if we must follow the standard guideline to the ingredients (Sesame Chicken & Honey Chilli Chicken). I don't know about you, but I have never been comfortable with conforming to ingredients others opt for, as well as cooking technic because, like I always tell you, cooking begins with the ingredients we already have at home and we should set our own benchmark against our own cooking instead of comparing with others (Chicken Curry Potato, Butter Chicken, Chicken Varuval, Chicken Kebab, Masala Chicken Curry & Chicken Stew). Cantonese Fried Rice
Cantonese Fried Rice. Basically, the Cantonese, one of the Chinese styles fried rice. The Cantonese, at Chinese stalls style basically. The one sometimes we long for and sometimes we pack back as well. Various varieties, various styles, each to its own ingredients, can be like the previous Chinese Fried Rice, but this one I reckon is the classic. Porky-pork being one of the ingredients, you can opt for chicken bacon if you prefer a halal Cantonese Fried Rice. The rest of the ingredients? Of course, cooked rice is the core and we need garlic (Nasi Goreng Tom Yam Ayam, Nasi Goreng Ikan Bilis, Malaysian Fried Rice & Belacan Fried Rice), chillies are needed as well for us Malaysians? I definitely need chilli-chilli spiciness. Either incorporated in fried rice or at the side in soy sauce and lime juice (Tom Yum Prawn Prawn Fried Rice, Lamb Fried Rice, Kampung Fried Rice & Anchovies Long Beans Fried Rice). What else should I say? Pretty much nothing much except go ahead, pleasure into this bacon, water chestnut, chillies and garlic Cantonese Fried Rice.

Chinese Chicken Noodle Soup
I think, if I am not mistaken, I have already told you that there's no right and wrong formula to cooking? For the food we cook at home? Basically, its pretty much up to us, though we like to gather some ideas on food cooking from tv programs and of course, these days, we shouldn't discount online search (Nyonya Lam Mee, Hakka Noodles, Chow Mein & Fried Mee Hoon). Let's forget about tv programs for the time being and speak about online recipe sharing. Oh my god. Millions of recipes will pop up, wouldn't you agree? Definitely (Chinese Vegetarian Noodle Soup, Char Kway Teow, Curry Chicken Noodles & Penang Assam Laksa). These recipes of course without a doubt are a guide to our cooking or for some of you, you like to follow exactly. Then again, basically its up to you and your choice. However or whatever, for me personally, even when I share my own recipes, I like to make it a point in telling all of you that if you feel you can substitute the ingredients because you feel you already have other ingredients which are equally good, go ahead. Use them instead buying just to replicate recipes. For this Chinese Chicken Noodle Soup, I didn't have to refer to recipes because I quite know how to make Chinese noodle dishes (Bee Hoon Soup, Penang Mee Yoke & Sour Spicy Fish Broth Noodle Soup) and what can be different with the ingredients, you tell me (Chinese Chicken Meatball Soup, Chinese Chicken Herbal Soup & Burdock Root Soup)? This Chinese Chicken Noodle Soup I must say is mine. In other words, I did it my way considering ingredients availability. Chinese Chicken Noodle Soup I must stress is a delight. A true delight for tummy delightfulness and make sure you tuck in alongside some sliced chillies soaked in soy sauce and lime juice.

Indian Masala Chicken Curry
Guys, especially those of you who cook regularly, tell me. What can potentially be different for any kinda Indian Masala Curry? If you are asking me, masala is basically a composite of various types of spices. You can of course opt for ready made spice mixtures (Butter Chicken) or even you can mix the types of spice powders (Mutton Bone Marrow Curry & Cashew Masala Chicken) and definitely nothing like a home made masala (Navratan Korma) or curry paste (Thai Chicken Green Curry). Certainly. For me personally, it all depends. Depends on my mood, depends on time I have in hand and depends too on what's already stocked up at home. It all basically depends and depends on country or area specific as well. Some spices are more in popularity in certain countries or region or each individual state.What about this Indian Masala Chicken Curry of Malaysia (Malaysian Chicken Chop) by this Malaysian (Chicken Curry With Potatoes, Curry Chicken Noodles & Indian Chicken Curry)? Alright. I was definitely in the mood for some extra work and I made the curry paste. The aromatic and full bodied curry paste in which chicken (Sweet Chilli Chicken, Ayam Masak Merah & Grilled Chicken Wings) was cooked to the right texture. Indian Masala Chicken Curry (Indian Mango Chutney)? Believe me. Oh-my-my. Just so appetizing and kicking in the customary, beautiful and lovable tastes (Baked Cornflakes Chicken, Braised Chicken Feet, Easy Chicken Kebab & Baked Lemon Chicken).

Chinese Chicken Herbal Soup
Chinese Chicken Herbal Soup. Nutritious and healthy soup. What's there we should be concern in making? Easy if you are asking me. Soups by far as I have told you before, are not complicated. Adding the ingredients in a pot or slow cooker and simmering. That's it and these days, if you wanna make a herbal soup, just head to the Chinese medical halls (Chinese Honeydew Sago Dessert, Teochew Steamed Fish, Vegetarian Chow Mein, Egg Foo Young, Yong Tau Foo & Fried Egg Oyster Sauce) or provision shops. They have it all for you. Either you decide which concoction of herbs you prefer or ask (Chick Kut Teh, Chinese Black Vinegar Chicken, Chinese Meatball Soup & Chicken Vegetable Soup). I am sure they will be glad in helping you out. That's what I do. I ask and all is spoken and unveiled. For this Chinese Chicken Herbal Soup, I came back home with a packet of the recommended herbs and then basically simmering alongside chicken (Sweet Chilli Chicken & Easy Chicken Kebab), ginger, garlic, wolfberries, and longan over low heat and seasoned with salt and pepper, and spring onion garnished. So easy right? Nothing complicated right? Deliciousness and as I have already said, utmost satisfying healthiness right (Chinese Vegetarian Noodle Soup, Tea Eggs, Chinese Tofu Soup & Vegetarian Chinese Melon Soup)?

Nasi Goreng Tom Yam Ayam (Tom Yam Chicken Fried Rice)
This thing to cooking sometimes can wreck my life. Yes. It can. What to cook is the main dilemma and then, what about the ingredients? When I can't really decide or I really don't have the time to think so hard, I will decide. I decide on Fried Rice (Kampung Fried Rice, Lamb Fried Rice & Belacan Fried Rice). Remember, I told you before? Anything goes? Anything literally. Any ingredient and as long as you have cooked rice on standby (Anchovies Long Beans Fried Rice)? In my house, I should say there is no short of cooked rice (Malaysian Fried Rice & Anchovies Fried Rice). Well, what can you expect when both of us just so and must have rice daily? Of course, a Thai style fried rice is appreciated too (Tom Yum Prawn Fried Rice). Who wouldn't especially us typical Malaysians? We so love those, pretty much, about the same, more or less tastes like our Malaysian dishes? Especially spiciness and aroma (Thai Green Fish Curry, Spicy Thai Noodles, Thai Fish Noodle Soup, Thai Chicken Green Curry, Thai Carrot Soup, Thai Vegetable Curry & Shrimp Pad Thai Salad). Nasi Goreng Tom Yam Ayam/Tom Yam Chicken Fried Rice? Have I not said enough before (Seafood Tom Yum Soup, Tom Yam Chicken & Tom Yam Fried Mee Hoon)? Tom Yam. The wonder to Thai cuisine. The ever loved tom yam paste for chicken and leftover cooked rice frying. Oh, of course, chillies, shallots, kaffir lime leaves, fish sauce and French beans for this Tom Yam Chicken Fried Rice.

Sambal Ayam Serai (Chicken In Lemongrass Sauce)
I love my serai, aka, lemongrass. In fact, I must proudly profess that serai one of my favourite local herbs. I think I told you before? Unless and until, I want to spend on imported ingredients which by far is only seldom or every now and then (Baked Lemon Chicken). Otherwise, its all about our easily grown, even in our small plot of land or in pots local herbs. The easiest, shall I say is lemongrass? Most probably. So, for this sambal dish, yep, me and my sambal, do I have to say, its serai again (Sambal Udang Petai, Curry Chicken Noodles, Laksam Kelantan & Easy Chicken Kebab). Crushed or smashed serai cooked alongside a chilli based gravy and in which you will find juicy and succulent chicken pieces (Ayam Goreng Berempah, Rendang Ayam & Asam Pedas Ikan). Mouthwatering and such a pride to our eyes right? You tell me.

Rendang Ayam
Rendang Ayam. Chicken Rendang. How can we possibly forget about rendang ayam. How we possibly don't pay attention to this our, Malaysian, forever famed (Kangkung Belacan, Ikan Pari Sambal, Mee Rojak, Sambal Udang Petai & Nasi Lemak Sambal Udang) and I think world known dish. Its like a customary and much looked forward to dish during our festivals, regardless which religion and race in Malaysia. Of course, without a doubt, the best rendang I must vouch are those made by our Malay friends (Laksam Kelantan & Gado Gado). Of course. We shouldn't doubt it. Then again, anyone for the matter can make and trust me, stop believing those who claim rendang ayam is so difficult to make and its recipe is a guarded secret. Oh please. I used to fall for those crappiness until I started making. Who said you can't? Its matter of practice and of course, you can make an over-the-top rendang or simplicity can be your call as well for rendang ayam (Ayam Goreng Berempah, Malaysian Chicken Chop & Ayam Masak Merah), and for a simplified simple version, perhaps my recipe? I don't know. Really up to you, but I can assure you that my rendang ayam, let me repeat myself again, our Malaysian popularity (Malaysian Fried Rice, Malaysian Sour Spicy Noodle Soup & Malaysian Chilli Crab) will not fail you. Our Malaysian herbs, kerisik and all the ingredients listed below for an appreciated and delightful rendang ayam/chicken rendang.

Baked Lemon Chicken
When its a meal on my own, I can't think of none. It has to be chicken. The chicken my other half-half is anti about, or better to be said as he does not eat chicken (Butter Chicken, Sweet Chilli Chicken, Braised Chicken Feet & Chicken Varuval). So? Chicken does not come into my hunger and food picture unless and until he is away. Or when we are entertaining or when I want to try new chicken dishes which will be packed and handed over to our friends (Spicy Chicken Wings, Easy Chicken Kebab, Thai Yellow Chicken Curry & Malaysian Chicken Chop). Otherwise, there can't be chicken in my house. Actually, my other half-half does not mind if I cook chicken. Then again? I cooked chicken for myself and then cook another dish for him? God! Extra kitchen work. No way. On this day, obviously, my meal on my own and I decided to go for a Western style baked style. Baked (Baked Rice Pudding & Baked Bread Rolls) Lemon Chicken (Baked Cornflakes Chicken). Lemon, rosemary, chicken and baking? Pow! You tell me. Like a rocker the best combination right? Scent and fresh citrusy burst of lemon (Lemon Buttermilk Cake, Lemon Cashew Rice & Lemon Cream Pie), absolutely pleasing to our senses rosemary scent and tender succulent chicken, all in one as a wholesome meal. My-my! Paired alongside rice, fresh salad and yogurt. What do you think (Curried Roast Chicken)?

Malaysian Chicken Chop
My style to my chicken chop. Obviously. Being a typical Malaysian (Malaysian Lamb Curry Noodles) I named it as Malaysian Chicken Chop. Chicken Chop? Not always a fancy frilly food for us. In fact, we hardly. Maybe when we dine out? Otherwise, its the standard kind of chicken dishes. Of course, every now and then, every once in a blue moon or white moon, I won't mind exploring something new and something different and coming into my today's food picture is this Malaysian Chicken Chop. Just a meal for me, myself and I because, I think I have told you before? I am certain I did? My other half--half and chicken can't see eye to eye (Easy Chicken Kebab, Chinese Black Vinegar Chicken & Chicken Curry Noodles). He is anti-chicken? Yep. How did I go about making my Malaysian Chicken Chop? Honestly, no recipe guide whatsoever and (Salted Egg Chicken, Baked Cornflakes Chicken & Braised Chicken Feet) and I, as you know, always begin with what's already stocked up at home. Those sauces (Sweet Chilli Chicken) especially and maybe even fresh ingredients as well. Flour and egg mixture crispy fried chicken (Ayam Goreng Berempah), spicy sauce atop, and paired alongside my style mashed potato.

Ayam Goreng Berempah ( Spicy Fried Chicken)
Ayam Goreng Berempah. Wow! Walla! Bang! My all time favorite. I just so love ayam goreng berempah. One of those I can't resist at Malay Nasi Campur/Mix Rice Stalls or Nasi Kukus stalls (Ayam Masak Merah). Ayam goreng berempah lemme tell you is one of the best food regards of us. Our Malaysian Malay style spicy fried chicken (Spicy Fried Wings, Baked Cornflakes Chicken & Grilled Chicken Wing) and trust me, for years I have been debating within myself on how can I make ayam goreng berempah. A couple of attempts which definitely didn't get me for getting it right until I was so glad when my Malay colleague spilled it out. She spilling the secret to ayam goreng berempah. The recipe she in fact picked up from her neighbor. Oh boy! So glad I was until I wouldn't stop thanking her over and over again. So, how can we make this ayam goreng berempah? Of course for celebration chicken (Curry Chicken Noodles, Chicken Vegetable Soup, Sweet Chilli Chicken & Thai Green Chicken Curry). How? Chicken simmered and half cooked in our Malaysian herbs and later, crispy crunchy fried. Crispiness on the outside and soft meat inside (Chicken Varuval, Easy Chicken Kebab & Thai Yellow Chicken Curry).
