Bee Hoon Soup

Various ways, various style, and literally hundreds of recipes will pop up for Bee Hoon Soup. Of course, why not? After all, there is none-no absolute recipe (Egg Rasam & Chicken Black Vinegar Ginger) for any dish, including how you want to put-together a noodle dish (Curry Chicken Noodles & Mutton Mee Hoon Soup). This style also can, that style can also, by far, the key for a tasty and flavorful noodle soup is definitely the broth (Mee Rebus, Assam Laksa & Prawn Mee). Ready made, store bought stock can be one of the options, of course, nothing can beat a home made version. Beef stock, pork stock or chicken stock, trust me, ikan bilis/anchovy stock is not any interior either, and its cheaper as well. Simmer a handful of anchovies over low heat and extract the stock. That's it for a simplified version. For this my version of Bee Hoon Soup, its slightly different in the sense that I fried the anchovies in oil and they were also added once the ingredients were assembled together, prior to generously pouring the broth over.
