Potato Sambal Recipe: Vegetarian

Spicy dry style potato, made with dried chili paste, shallots, lime juice, oil and salt.
No Malaysian meal is complete without sambal – the spicy chili gravy that flavors everything from rice to noodles and stir-fries. Made from dried chilies, fresh chilies, or a combination of both, sambal is a staple of Malaysian food culture (KERABU BENDI/OKRA SALAD VEGETARIAN).

Potatoes are another favourite ingredient in Malaysian cuisine, and when cooked with sambal, they create the delicious Potato Sambal. This vegetarian version is full of bold, spicy flavors, balanced by the natural sweetness of shallots and the tang of lime juice.

 

Ideal as a side for rice or as a main accompaniment, Potato Sambal is loved by vegetarians and non-vegetarians alike (ACAR TIMUN/CUCUMBER SALAD).

Ingredients
3 potatoes - sliced to a preferred size
3 shallots - sliced
Dried chili paste - to taste
Lime juice to taste
2 tbsp oil
Salt (to taste)
2 tbsp oil
Some water

Method
Heat oil and saute onion. 
Tip in chilli paste and cook until oil separates
Add potatoes and stir, adding a little water as needed.
Cook until the potatoes are softened.
Season with lime juice and salt. 

Give a couple of quick stirs and dish out.
