1 medium-sized mango - slice with skin on, include the seed
3 tbsp oil
1 tsp mustard seeds
4 shallots – chopped
Some chillies
Some curry leaves
1 tsp turmeric powder
Palm sugar to taste
Salt to taste
Water as needed
How to Make Mango Chutney
Heat oil, add mustard seeds and shallots.
Stir until mustard seeds pop.
Add chillies and curry leaves.
Stir everything together.
Add mango and continue stirring.
Pour water (enough to soften the mango to preferred texture).
Once mango has softened, remove from heat.
