Vegetarian Potato Varuval (Urulaikizhangu Varuval)

Pure, authentic, traditional, exciting or even sex-citing like Nava K, "Vegetarian Potato Varuval, Urulaikizhangu Varuval, Potato Fry or Potato Simplicity.  Vegetarian Potato Varuval. Oh yes please. Such a delight to or in your mouth. Yes. Of course. Believe me. And potatoes, also known as "Aloo" in Hindi (Dum Aloo, Saag Aloo & Jeera Aloo). Aside to vegetarian potato varuval now, potatoes by themselves? Remember, I told you before? The kilos I buy weekly and no matter, how you cook potatoes? Potatoes as in, being the central, core or main highlight in a dish (Indian Potato Balls) or into other dishes (Mutton Meatball Soup, Egg Potato Curry & Spicy Potato Anchovies) and curries (Mutton Chukka & Indian Masala Chicken Curry)? My-My! Nope. Trust me. You can't go wrong with potatoes.


In my house, yea, my one and only house, no matter what. No matter how simple a potato dish. Even my fussy, my one and only husband of mine. He won't complain. Maybe, that's why, perhaps, it is the major logical reason or reasoning why I cook potatoes more often than anything else under the sun or moon. Alright, all you gorgeous people. Enough said. Enough of my potato story and enough as well to my marriage cooking story. Let us now get down to cooking. Lets cook Vegetarian Potato Varuval. Indeed, obviously, a vegetarian dish (Vegetarian Potato Sambal, Potato Mixed Vegetable Soup, Aloo Gobi & Chilli Aloo). A vegetarian dish which will be one of the best pleasers and teasers for not only vegetarians, but also, as far as I know, if I am not mistaken, a yummy side dish food factor for non vegetarians as well. 

Ingredients
4 potatoes - simmered to soften, remove skin and cut into pieces
Spices - 1 star anise, 3 cloves, some black mustard seeds and 3 cinnamon
1 large onion - chopped
Some curry leaves
Plain chilli powder - as needed
Turmeric powder - as needed
Some lime juice
Oil - 2 to 3 tablespoon
Salt to taste

Method
Heat oil
Add spices, onion and curry leaves.
Stir and cook, or temper.
Now, ad the rest of the ingredients - potatoes, chilli powder, turmeric powder, salt and lime juice.
Stir and fry over high heat, for, let's say, 3 to 4 minutes.
Dish out.
