Asian Egg Mayonnaise Sandwiches

Sometimes, or maybe even every now and then, we should ditch our regular meals aside for a simply put together home style sandwiches. I however, honestly and sincerely, am not at all a bread person (Tomato Rice Pilaf). And despite me having had tried really hard, I somehow still can't swallow any, whichever type of bread made. Usually, a bread meal is prepared for my other half-half, which in return must be interpreted as, he and bread are best friends (Tuna BurgersMushroom Veggie Burger & Lamb Burgers). Then again, since I am not a fussy eater and when I am hungry anything goes, and when I have to prepare a meal after a tiring working day, let it even be bread. Furthermore, can you imagine how much of time I have to spent in the kitchen if I have to prepare a bread meal for my other half-half, followed by a meal for myself (Dried Shrimp Sambal SandwichFish Sandwich & Vegetarian Sandwich)?  


On this particular day, after being stalled on the road due to rain and traffic jam, the moment I hit home, all I could think of was using up the bread  (Pineapple Bread Pudding & Sardine Roll) in my kitchen and of course, there's always stock of eggs. Eggs of course are forever a delight for both of us. The outcome to bread and eggs in tandem (Eggs Benedict, Egg Potato Curry & Egg Curry Masala)? These Asian Egg Mayonnaise Sandwiches. Like a quick fix meal - egg, mayonnaise, spring onion, butter, pepper and salt mixed together and filled between toasted bread slices, and decked by tomato and cucumber, plus some chili sauce atop (Creamy Avocado Yogurt Dip). I did it yea! How about you? 

Ingredients (estimate -minus or plus as per taste)
3 hard boiled eggs - chop the whites and keep the yolks intact.
2 sprigs spring onion - chopped
2 shallots - chopped
1/2 tbsp butter
1 tbsp mayonnaise
Crushed pepper and salt for taste
6 slices of bread - toasted (with or without the crust)
Cucumber slices - as needed
Tomato slices - as needed
Cheese slices - as needed
Method
Add the first six ingredients into a bowl.
With a fork, mix and stir all together.
Spread the egg mixture on the toast.
Top with cucumber, tomato and cheese.
Then another toast.
Optional: chilli sauce for spiciness.

  8. Guess what, Nava? I just made a tub of egg mayo today too! I make these every week, cause they're so convenient to eat. My hubby & son can help themselves to the egg mayo in the fridge anytime they feel hungry.
