Sambal Goreng Teri

What is Sambal Goreng Teri? Sambal Goreng Teri basically is an Indonesian Ikan Bilis/Anchovies Sambal. That's right. Says it all right? The popularity of crunchy and dried in the sun, salty tiny fish in Indonesia (Sambal Terasi & Ikan Balado) and we Malaysians? Oh-my, ask this typical Malaysian and she will unveil all of it (Malaysian Fish SambalAsam Pedas Ikan & Sambal Sotong) on ikan teri, or ikan bilis and sambal too (Sambal Petai Ikan Bilis, Nasi Goreng Ikan Bilis, Ikan Bilis Mee Hoon & Sambal Udang Petai). Of course, even salted fish/ikan asin/ikan masin is an undisputed love for Malaysians and I think must be the love for Indonesians as well.  However, if you are expecting a typical Sambal Goreng Teri, either you will be disappointed or you will truly fall in love for my version. Different, unique and spicy power packed, some kacang panjang/long beans as well, and scented by serai/lemongrass Sambal Goreng Teri (Salted Fish Soup, Masak Lemak Ikan Masin & Sambal Kentang Ikan Asin). 


Ingredients
1 cup anchovies - soak for about 10 minutes and drain off excess water.
10 long beans -cut into 1 inch length.
2 tbsp dried chilli paste
1 lemongrass - smashed/crushed
1 large onion - slice into rings
3-4 garlic - sliced/chopped
Lime juice - as needed
Some Gula Melaka/palm sugar
Oil as needed
Salt for taste

Method
Heat oil, fry anchovies till crispy and crunchy.
Remove and keep aside. 
Leave about 2 tbsp of oil in the same pan.
Add garlic, lemongrass and onion.
Fry for about 1 min.
Put in chilli paste.
Fry till oil splits.
Add long beans; pour lime juice and season with salt.
Cook the beans for a texture you prefer.
(Note: pour a bit of water if needed)
Lastly add fried anchovies.
Stir in and remove from heat.

  22. I wonder how you manage it all. And manage so well. I have been a banker for 7 years before I became a mother. Loved it, though it was hectic. So, I can imagine how difficult it must be to balance it all. Like always, the flavours are perfect and the dish looks stunning!

Look at this earthen pot and in it thick, salty, spicy and vibrantly exciting to our palates and eyes  Mochakottai Karuvadu Kulumbu (Field Beans Salted Fish Curry). Like immediately can trigger our hunger throne right? I know. I am definitely a big fan of this Indian style salted fish curry and salted fish on the whole by itself ( Spicy Ikan Bilis Potato , Sambal Tumis Ikan Bilis  &  Sambal Kentang Ikan Asin ), can drive me crazy because I so love saltiness. In fact, every day can be a salted fish meal day for me ( Salted Fish Pickle , Bean Sprouts Salted Fish  & Steamed Pork Salted Fish ). But, I think we all know it? Too much of saltiness and salt can ruin our health? Of course. Then again, there is such a thing as every now and then saltiness as our best friend? How do make this salted fish curry? By the third day, Iphone 7 started showing its dark side. Really a terrifying-horrible shocking discovery, it kept rebooting every now and then for no apparent reason. Obviously, I couldn’t believe my eyes. Duh! Its a brand new phone I paid from  my savings ( Da De Bak Kut Teh Subang Jaya ), never ever have I encountered such a problem with my previous faithfully yours 6 year old Iphone 5. Absolutely heart wracking, I really couldn’t find the time ( Karaikudi Chicken Curry & Fikcles Cafe Taman Tun ) to rush to the service centre amidst the busyness of getting ready for the family wedding and another travel venture ( Oats Fried Prawn s ). Keeping my fingers crossed, hoping it’s just a minor teething problem, I went ahead with shopping nearby Plaza Shah Alam and Plaza Masalam. Accompanied by my niece, we bought a couple of things and then of course, naturally, shopping is more or less regarded as synonymous with hunger throne.
