Eggplant Stir Fried With Curry Leaves & Saffron

Its all back and well and good with nava-k. Blog is back in action after making a disappearing act due to my fault. I actually forgot to update my latest credit card on my google account. Completely forgotten after my ordeal of robbing, thereafter running around to sort out my documents (more at Nasi Lemak - Store Bought And Upgraded). Still in a panicky stage because my house got robbed as well thereafter, I completely forgot about updating my new credit card particulars. Nevertheless, all is back to normal (more at Okra Fish Soup),  thanks Google team, here's the key pointers on what you should or can do if your blog goes missing for reasons you yourself can't compute.
  • Log into your Google apps ever now and then.
  • Set your account at auto renewal if you wish to continue with your current domain.
  • Do not believe everything you read when searching for information because not everything is applicable for everyone. Some people too like to over-exaggerated things, some even are not genuine and honest. 
  • Expired domain can be renewed and will not be auctioned.
  • Keep sending reminders to Google apps team until you receive a reply. 
  • Due to the time difference between your location and Google, be prepared to burn the midnight oil.
  • Make sure you also update your billing information. 
Alright everyone, lets now grab this recipe for the day. Eggplant Stir Fried With Curry Leaves & Saffron. Absolutely tempting right? I know. Not only tempting, assured that its a fulfilling side dish. Eggplant/aubergine/brinjal and curry leaves are the highlights, in case you can't get hold of the rather expensive saffron, turmeric powder will not let you down (Brinjal Anchovies Stir Fried, Eggplant Spicy Sauce, Curry Leaves Grilled Salmon, Vegetarian Mutton Curry Leaf, Curry Leaves Fried Mee Hoon, Curry Leaf Cashew Nut Rice, Bitter Gourd Curry Leaf, Curry Leaf Chilli Lala, Tomato Chutney, Indian Fish Curry, Curried Mutton Bone Marrow & Ney Sambar).
2 eggplant (about 400g) - cut into bite sizes.
1 red chilli - chopped/sliced thinly
1 green chilli - chopped/sliced thinly
4 shallots - chopped/sliced thinly
1/2 inch ginger - chopped/sliced thinly
1/2 tsp saffron strands/turmeric powder
3-4 sprigs curry leaves
1 tsp cumin seeds
2 tbsp oil
Lime juice (optional)
Salt for taste

Heat oil and sauté chillies, shallots, ginger and cumin seeds. 
Add eggplant and saffron/turmeric.
Stir and sprinkle some water - to cook and soften eggplant. 
Add curry leaves and lime juice and season with salt. 
Stir a couple of times and remove from heat.

  14. I was so disappointed on Monday when I dropped in to the vegetable market to buy Okra and it was not there. I wanted to make your fish and okra soup. Now at least I have a plan B because I want to make this too. Eggplants and saffron...Wow! And looks like a restaurant dish...not that they will have all these flavours at a restaurant.
