Lemon Butter Salmon

So, a different kinda fish recipe today though fish is still the central ingredient. Yes foodies. Looks like there will be no end to my fish story and fish supposedly will forever be trended in my house (Nyonya Steamed Fish, Malabar Fish Curry & Thai Crispy Fish). Regardless, I broke free from those traditional and typical Asian style fish recipes. Yes I did. We need the change right? Of course. And the change in this form of a Western style dish (Tuna Burgers, Batter Fried Fish, Fish Sandwich & Baked Cornflakes Chicken), I decided to do Lemon Butter Salmon. Lemon Butter Salmon (Butter Prawns) baking basically (Baked Lemon Chicken). Of course when we put together salmon especially (Indian-Spiced Salmon & Grilled Salmon) alongside lemon (Thai Lemonade & Lemon Cashew Rice) and butter, we must include rosemary for the beautiful smell as well right? I know. As if these four ingredients must be in tandem? You bet. What else did I do? Pairing gorgeous and mouthwatering baked lemon butter salmon alongside baked potatoes and coleslaw. What a perfect, complete and simply inviting salmon platter food right? 

Ingredients
For the salmon
2 pieces (about 200g each) salmon - pat dry
2 sprigs rosemary - chopped 
4 garlic - chopped 
1 1/2 tbsp olive oil
Crushed pepper and salt for taste
4 lemon slices
For baked potatoes
4 small US potatoes - boil till half cooked
1 tbsp grated Parmesan cheese
1 tbsp salted butter

For coleslaw
1 cup chopped cabbage
1/2 cup chopped carrot
1 onion - chopped
1 red chilli - chopped
1/2 tbsp yellow mustard
1 tbsp mayonnaise
3 tbsp milk
Sugar, pepper and salt to taste

Method
For the salmon
Except for salmon and lemon slices, mix the rest of the ingredients together for a paste. 
Pat paste over salmon and place two lemon slices on top.
Wrap in tin foil.
Do the same to the other piece of salmon. 
Bake at 160C for 25 mins or until fish becomes tender and soft.
For baked potatoes
Score the top of potatoes, gently open out and fill in with cheese.
Place on tin foil and before wrapping, add 1/4 portion of butter (for each of the potatoes).
Do the same for the other 3 pieces of potatoes. 
Bake alongside with fish for 10 mins.
Remove and keep aside.
(Note: you can place potatoes in the same baking pan with the fish. Remove after 10 mins and continue to bake the fish)

For coleslaw
Combine and mix all the ingredients together.

  27. We eat a lot of Salmon here because its abundantly available and its quite a versatile fish. I do not like the smell though. Herbed Salmon is one of my favourite ways to eat it and this dish sounds fantastic. And the photos are so gorgeous with all the colourful sides.
