Moroccan Chicken Stew

Guys, I think I am trying to achieve international status cooking style. I think so. God! I am actually going all over the world, but not as in being in different countries. What I am trying to say is that I am trying recipes of different kinds from, this and that part of the world. Of course, Malaysian dishes are part and parcel of my cooking style and when we speak about Malaysian food, its not just my own kind dishes (Indian Masala Chicken CurryChicken Curry Potatoes & Chicken Varuval), I must also include other races and religion food delight (Chicken Devil Curry, Ayam Masak Merah & Easy Chicken Kebab). Furthermore, didn't you notice my Thai, Vietnamese, Japanese and the rest of the dishes from other parts of the world too (Thai Tomato SoupVietnamese Fish, Unagi Kabayaki & Bengali Fish Curry)? Of course, the list goes on and I can go on and on, so on and so forth, and quote other recipes as well (Egg Vindaloo, Hong Kong Style Steamed Fish, Egg Benedict, Prawn Cocktail, Rice Pilaf & Aloo Gosht). Much has already been spoken about, wouldn't you agree? Much has been unveiled on how far I have come and gone, and today, let's do this Moroccan Chicken Stew. As usual, let's work with the ingredients we already have in hand, maybe you need to get if not all, some of the ingredients? That too depends on you or you can look for the substitute in your kitchen as well. Moroccan Chicken Stew? Waking up your palates thick stew and succulent chicken deliciousness!

Ingredients
400g chicken - cut into bite sizes
1 large red onion - chopped
Spices - 1 stick cinnamon, 1 star anise & 3 cloves
2 sprigs rosemary - remove leaves (can be replaced with other suitable herbs)
3 tbsp butter
Lemon juice - as needed 
Salt for taste

To blend/ground
2 tomatoes
3 red chillies
5 garlic
1 inch ginger
5 shallots 
1/2 tsp turmeric powder
1 tsp roasted cumin 
1 tsp roasted fennel
Paprika - as needed
A tiny bit of pepper

Method
Sauté onion and spices in heated oil.
Add grounded/blended ingredients.
Stir and simmer till oil splits.
Add chicken and stir. 
Pour 1/2 litre of water.  
Simmer till chicken is cooked.
Season with lemon juice and salt. 
Combine in rosemary. 
Stir and remove from heat.

    It happens to me quite often that I either read the recipe missing out on something or I forget.. :-)

  2. yum....that chicken stew is super delicious. Nava u r simply great, u can manage so many things at time. I find balancing everything so difficult and i often forget doing one or the other thing despite i have lots of time while my kid sleeps..... :-(...anyways great shot, love the colours...it luks as if the chicken stew is alive and is calling me to eat it... :-)

  3. Ohh yes, cutting veggies and forgetting to add due to something going on inside the small head of mine happens once a week, so been there done that!! The chicken stew looks yum, the stew color says it all - I think you used a real good ripe red tomato(nowadays tomatoes here are slightly orangish and sturdy..hmm..not good...never get the right color in recipes).
    Love the simple flavor and the rosemary addition is a good variant.

  4. Hahaha! U're so cute, Nava! Nevertheless, the dish looks appetizing. I'm like u too, getting more & more forgetful these days. The other day my whole pot of barley went down the drain cause I forgot to turn off the fire :< There goes my WMF pot too! Lol!

  12. Managing home & work is sometimes really difficult. Forgetting things to add to my dishes. this happens all the time with me.

  13. Tell me about it Nava.. It happens with me all the time.. Sometimes I'm very organised, sometimes very forgetful too.. And in my case I'd like to add - sometimes very lazy :D

  15. Haha.. That happens to me too very often.. Mostly I forget to add the curry leaves ;) This stew is rich in itself without the addition of potatoes :) I wud love to have it with bread !!
