Penang Acar

Penang food? What should I say? I think the best will be saying nothing about Penang Food which of course has tremendously made its name and your truly too is not alien to Penang food. Can you still recall her Penang recipes (Penang Curry Mee, Penang Assam Laksa & Penang Mee Yoke). Of course, there are other recipes which can be trended in the category of Penang Food? More or less (Nyonya Lam MeeYong Tau Foo, Sambal Udang Petai, Nyonya Curry Laksa & Dried Shrimp Sambal)? Today, ladies and gentlemen, its this Penang Acar. Acar (Mango Chutney) or can be regarded as pickle. Now, if you are expecting a spectacular acar, I am certain you will be disappointed. In fact, I must stress that this is the easy and simplified acar. Obviously, showcasing the two central ingredients? Cucumber (Cucumber Yogurt Salad) and carrot (Carrot Soup & Carrot Poriyal)? And the rest of the ingredients  - by far, you must use vinegar, chillies, ginger, shallots, vinegar, sesame seeds, sugar and salt, and I added some cumin seeds for my twist to Penang Acar.


Ingredients
1/2 cucumber - slice into 1 inch long stripes with the skin on
1/2 carrot - remove skin and slice into 1 inch long stripes
1/2 inch ginger - remove skin and slice into thin stripes
1 red and 1 green chilli - remove skin and slice into 1 inch long stripes
7 shallots -remove skin
7 garlic - remove skin
1 tsp cumin seeds
1 tsp turmeric powder
1 1/2 tbsp roasted sesame seeds
1/2 cup vinegar
Sugar and salt for taste
3 tbsp oil
Method
When oil is heated, sauté ginger, shallot, garlic and cumin seeds. 
Add vinegar, turmeric powder, sugar and salt. 
Stir and let it simmer.
Put in cucumber, carrot and chilli stripes.
Stir and close with a lid. 
After 10 mins, open the lid and sprinkle sesame seeds. 
Stir gently, cover and keep aside for another 30 mins before tucking in.

  4. Great idea use sesame seeds in this achar,looks delicious and simple to make I love Asian acar as my side dish in noodle or rice :)

  10. The pickle looks fresh, crunchy and colorful. Love the simple seasoning. I love any food item that can be made and eaten immediately than waiting for weeks, I'm kinda lazy in this area!!
    Although never made pickle in my life, I would give this a try owing to the fact that is it so easy to make and can be eaten immediately. Love the roasted sesame seed usage, they add a serene snowy layer to the colorful pickle!

  17. Nava I love this pickle... The first time I had this was near my office in a vietnamese resturant. I cant tell you that I still have this flavour fresh in some cornver of my tastebuds. I havent tried making this yet but now lookinf at your post I should defenitely give it a try. BTW what brand vinegar have you used here in this recipe?

    Yes, you can also use mango, but taste for flavors and adjust esp on vinegar and sugar.
    I find that local/artificial vinegar very strong. I have said bye to it long time ago, now I use Apple Cider Vinegar, pricey but it gives the natural taste, also you don't have worry if you have added more. The taste will be strong but not as sharp as artificial white vinegar.
