Shahi Mutton Curry, or Mughlai Mutton Curry. Rich, creamy, thick and call it a royal mutton curry (Navratan Korma & Lamb Rogan Josh), Shahi Mutton Curry simply packs bags and bags of flavours (Mutton Devil's Curry, Masala Mutton Curry & Mutton Parathal) which will wake up your taste buds almost instantly until you most probably will long for more or you just can't stop eating. Believe me. And in my house, can you imagine how it would have been after I made this really attractive and eye popping Shahi Mutton Curry? Eaten alongside Cumin Coriander Rice and Stir Fried Turmeric Cabbage. Oh my goodness! Truly a royal meal and after eating by taking our own time, we could hardly move. Then again, each time I cook mutton (Mutton Soup, Mutton Dalca, Indian Mutton Meatball Soup & Mutton Kurma), mostly of course as a dry or thick masala based curry (Mutton Bone Marrow Curry, Easy Mutton Curry, Mutton Varuval & Mutton Keema) its the same story as well and we love it as well when we actually bite and ripe the meat out of mutton bones and then we will still continue with nibbling the bones and also helping ourselves to rice and stir fried veggie. Sounds familiar? The same thing in your house too? Shahi Mutton Curry as I have already told you is full of spices and ghee richness, fabulous deliciousness.
For the mutton curry
400g mutton - cut into bite sizes
1 tbsp ginger paste
1/2 tbsp garlic paste
1 1/2 tsp turmeric powder
1 1/2 tsp turmeric powder
1 large red onion - slice
2 tomatoes - slice
3 potatoes - remove skin and cut into chunks
2 tbsp plain chili powder
1 1/2 tsp coriander powder
1 tsp cumin powder
1 tsp fennel powder
Spices - 1 stick cinnamon, 3 cloves, 2 star anise & 2 bay leaves

1/4 cup yogurt
3-4 sprigs curry leaves

2 sprigs coriander leaves - slice
4 tbsp oil
Salt for taste
For cumin coriander rice
2 cups white rice
1 tbsp salted butter
1 large onion - sliced
3 sprigs coriander leaves - shredded
1 1/2 tsp cumin seeds
3 cups water
Salt for taste
For turmeric cabbage
1/2 (about 400g cabbage) - sliced into long medium size pieces
1 small red onion - sliced thinly
2 sprigs curry leaves
1 tsp black mustard seeds
1 tsp turmeric powder
3 dried chilies - cut into 3 pieces
2 tbsp oil
Salt for taste
Method
For mutton curry
Mix chilli powder, coriander powder, cumin powder and fennel powder with some water for a thick masala paste.
Keep aside.

Mix mutton with turmeric powder, ginger paste and garlic paste
Keep aside.

Into heated ghee, add onion and spices.
Fry for a minute, add curry/masala paste and cook till aromatic.
Add tomatoes and stir till slightly mushy.
Tip in mutton and also potatoes.
Stir, add salt and pour in 1/2 liter of water.

Simmer and cook till mutton and potatoes becomes soft and gravy thickens.
Off the heat and slowly stir in yogurt, and then curry leaves and coriander leaves.
For rice
Wash rice and drain off excess water.
Into heated butter, add onion and cumin seeds.
When seeds starts to splatter, add rice.
Stir and fry for a couple of minutes.
Add rice and 3 cups of water into rice cooker.
Season with salt.
Once cooked, fluff up and stir in coriander leaves.
Off the heat and slowly stir in yogurt, and then curry leaves and coriander leaves.
Wash rice and drain off excess water.
Into heated butter, add onion and cumin seeds.
When seeds starts to splatter, add rice.
Stir and fry for a couple of minutes.
Add rice and 3 cups of water into rice cooker.
Season with salt.
Once cooked, fluff up and stir in coriander leaves.
Into heated oil, sweat onion, curry leaves, mustard seeds and dried chilies for a minute or two.
Add cabbage, turmeric powder and salt.
Stir and fry for a texture you prefer.
(Note: sprinkle water if needed)

ReplyDeleteThat looks like a traditional mutton curry, I have never seen potatoes in mutton curry though! Amazing combo with the flavorsome rice and cabbage curry - I'm sure, the curry tastes good with appam too, kerala style.
ReplyDeleteWhen you talk about mutton, I remember a small town called Sankarankovil in southern Tamil Nadu, where you get the best mutton biriyani & curry in the world. NV eaters passing by that area, would definitely stop by for some.
I used to eat meat at my parents. This reminded me those days.
