Petai projection and petai cooking again. That's right foodies. Remember, I have already told you (Sambal Udang Petai)? In my the other, other petai recipes (Sambal Sotong Petai, Sambal Tumis Ikan Bilis & Sambal Bilis Petai) as well? Bilis/anchovies combination again (Anchovies Long Beans Fried Rice & Anchovies Fried Mee Hoon). How far further can a petai sambal recipe go, you tell me? I really couldn't think. I went like, should I add this, should I add that, so on and so forth, back and forth. Finally, I thought of boiled eggs. Boiled eggs? Why not? Anything wrong? I mean, we Malaysians do, from time to time make Sambal Telur/Egg Sambal? Just that I merged petai, bilis and telur together. Far out fab. Trust me. Simply irresistible right? I reckon.
Ingredients
400g petai/stink
beans - slide into two or three pieces
1 cup dried
anchovies/ikan bilis - soaked and drained
4 hard boiled eggs
- peel off the shell
1/2 tbsp lime
juice
1/2 tbsp palm or white sugar
Salt for taste
Oil as needed
For the chilli paste - blend/ground
10 dried red chillies
5 garlic
5 shallots
1/2 inch roasted
belacan
Method
Heat enough oil
and fry the eggs for a crispy outer layer.
Remove and keep aside.
Remove and keep aside.
In the same oil, fry anchovies till light brown and crispy.
Remove and keep
aside.
Leave about 3 tbsp
of oil in the same wok/pan.
Add chilli paste
and fry till aromatic and oil splits.
Add petai and
cook for a texture you prefer.
Combine in all the
other ingredients, including the fried anchovies and eggs.
Stir well and
remove from heat.
Definitely one of my fave beans too! The stinkier the better!

ReplyDeletewhat is the stink beans Nava, I don't think I get it here. But your dish looks gorgeous. I just love the idea of eggs with anchovies. My amma makes gravy of anchovies like the korma and breaks the egg directly to the gravy and get it cooked.

ReplyDeleteThanks for the comments. I should have taken a picture of the beans and attached but it was just forgotten. The beans can be somewhat bitter. Once you combine them with the rest of the ingredients, that taste is not felt so much.
never heard about stink beans.. anchovies and egg?? thats an interesting combo.. will try this combo next time..

I checked in the internet to see how stink beans look like. I don't think I've ever tried it. But this dish looks so appetizing, Nava! I have never thought of combining anchovies and hard boiled eggs in one dish.

A very interesting dish which has beans, egg and fish!! Looks drool worthy and would be perfect with white rice. Also frying the boiled egg is a good idea, the texture looks lovely.

And the vegetarians can substitute anchovy with may be soya chunk.

I have not come across stink beans yet, but the platter makes me hunt some down & prepare this.. Anchovy & eggs are favs !! So, I think I can manage this healthy beans along with it ;)
