No Bake Cheesecake

No Bake Cheesecake. Not the stylishly decked and reaching the sky no bake cheesecake. This is the simplicity, minimal ingredients cheesecake. For the bottom layer, it's not the expensive digestive biscuits, but the ordinary my growing up years famous cream crackers. Crushed and crumbled with butter and pressed into a greased pan. Its rather crumbly. For a compact non crumbly version, your please for adding more butter please. Whereas for the top layer, its cream cheese, lemon juice and condensed milk whisked together. That's about it for the ingredients and that's about all to making this No Bake Cheesecake. Set it in the fridge for at least 24 hours and here we have this creamy, lemony cheese atop the crumbly, buttery biscuit layer.

For the crumble
160g cream crackers - crushed to a fine consistency
70g melted butter (add more if you prefer)

For the cheese topping
200g cream cheese - soften
1 cup condensed milk
2-4 tbsp lemon juice (or per taste)

Sliced red and green cherries. 
Crumble crushed crackers and butter together.
Press into a greased springform pan. 
Flatten to ensure its firm.
Leave in the fridge to set for an hour.  
Whip or whisk all ingredients for topping for a smooth mixture.
Bring out the crumble from the fridge and spread cheese mixture on top.
Use a fork to score the cheese mixture for a simple pattern.
Gently press cherries over. 
Let it set overnight in the fridge.

By the third day, Iphone 7 started showing its dark side. Really a terrifying-horrible shocking discovery, it kept rebooting every now and then for no apparent reason.
