Another fried food stuff today. Another vegetarian food lingo as well, can you still recall my previous Kurkuri Bhindi/Crispy Fried Okra in which much has already been spoken about frying crispiness? What else should I say when I have already rolled out a fair bit of fried goodies (Indian Potato Rolls)? Shall we just drop the topic of fried crispy delightfulness, instead head to the recipe for the day? I reckon that will be the best safe bet (Tuna Cutlets & Fried Shrimp Wantons). Joining the string of vegetarian dishes I have showcased is now these Mushroom Rolls (Bonda). Crisis management my saviour, saving me when I need was a tin of button mushrooms and of course, our Indian style of cooking must require spices and all things Indian nice.
Ingredients
For the rolls
1 can (300g) button mushrooms - drain out water and spin mushrooms in the food processor or finely chopped.
1 medium size onion - chopped
1 stalk spring onion - chopped
A pinch of garam masala or mix spice
1 tsp plain chilli powder
1 tsp coriander powder
1 tsp cornflour
1 tsp rice flour
A tiny bit of water
1 tsp cornflour
1 tsp rice flour
A tiny bit of water
Salt to taste
Oil for frying
For coating
1 cup bread crumbs
For yogurt dip
2 tbsp yogurt
2 tbsp yogurt
1/4 inch ginger - chopped
1 stalk coriander leaf - chopped
Salt to taste
Method
Add all ingredients for the rolls except oil into a bowl.
Mix well and shape into medium size rolls.
Roll over bread crumbs and deep fry till golden brown.
Stir all ingredients for yogurt and serve alongside mushroom rolls.

ReplyDeleteThe common way of frying mushrooms here is whole and in a wet batter. This means that the juices collect in between the pocket of batter and the mushroom. When you take a bite, the hot juice can really burn your mouth and they can be a bit messy.
ReplyDeleteYour preparation of making a blend with the chopped mushrooms and then using bread crumbs is much better! There is so much more flavor and no hot juice. Well done.

ReplyDeleteDeep fried mushrooms are so good. I love biting into them to feel the warm mushroom explode in my mouth. Everyone in my family hates them except me, so I rarely ever make them. I just order them out.Yours look divine!
