Malaysian Lamb Curry Noodles

If there is without a doubt, of course there is, I know what I am not doubting, if there's already Penang Curry Mee in this previous space of mine, why can't there be a curry noodle dish showcasing lamb (Lamb Pho/Vietnamese Noodle Soup) as the main highlight? Why not? What must it mostly must be a familiarity (Home Made Curry Mee & Vegetarian Curry Mee)? Regardless, I really can't decide nor should I speak on your behalf, but obviously, I have already accomplished within the context of a Malaysian Lamb Curry Noodles (Penang Assam Laksa & Bee Hoon Soup). Malaysian? Malaysian meaning from my Malaysian kitchen (Malaysian Fried Rice & Malaysian Fried Mee). Yep, you are right. If it is not always Malaysian, at least every once too often (Malaysian Lamb Stew) Malaysian food for this Malaysian foodie. Lamb of course (Lamb Fried Rice & Lamb Burgers), in fact even mutton (Sup Kambing, Mutton Keema & Mutton Varuval), is forever a favorite amongst Indians right? You bet and I bet. So, how should the cooking story go-to for this my nava-k's version Malaysian Lamb Curry Noodles? Minced lamb fried to crispiness separately and once we have made the spicy creamy curry and after assembling the whole composite to Malaysian Lamb Curry Noodles, crispy lamb and soft boiled egg atop. For the lamb
300g minced lamb
1/2 tbsp ginger paste
Salt to taste

For the curry
To blend/ground
1 large onion
5 garlic
1/2 inch ginger
6 dried red chillies (or as needed)

3 (about 300g) potatoes - remove skin and cut into medium size pieces
1 1/2 cups carton milk or thin coconut milk
1 cup thick coconut milk
1 cup water
3 sprigs curry leaves
Mee hoon noodles (as needed) - blanched in hot water to soften and rinsed in cold water
Soft boiled eggs (as needed) - remove shells and cut into two
4 tbsp oil
Salt for taste
Combine and mix all ingredients for the lamb.
Heat oil and fry lamb while breaking into smaller pieces.
Stir and fry till crunchy and crispy.
Remove and keep aside.
In the same oil, fry blended/grounded ingredients till aromatic and oil splits.
Add potatoes, curry leaves and 1 cup of water.
Once potatoes are cooked, pour in the carton milk and coconut milk.
Season with salt.
Let it simmer.
Once curry is heated through, pour over noodles assembled in a bowl.
Atop with fried lamb and add egg(s).
Serve immediately.

  16. Normally i ll cook curry chicken to go with rice. Normally will have curry noodle outside...Urs simply looks delicious

  17. Oh, Nava! This looks amazing! I am not a huge fan of lamb, but would be more than willing to try it in this dish. It's the eggs that put this over the top! There's something about them that make a dish so decadent and delicious! YUMMY!
