Jacket Potatoes With Chicken Mince

One of the things I've learned so far from blogging is that I shouldn't talk about myself all the time, in all sharing until your ears and eyes I reckon will blister fall apart. I realise that if I continue being a self-centered eccentric person, my followers will basically label me as a female chauvinist. Can't be my story all the time right? Or the love of my life, my other half-half also right? I know. Will sound as though I am an attention seeking person, regardless of the fact that this is my blog and there's no limitation to blowing my own trumpet? So, how about me asking you if you love Jacket Potatoes? Baked potatoes basically and can be filled with, most probably any ingredient as per your liking or as per this recipe, chicken mince. Do you love this kinda meal for a change? I think I hear you saying yes, or maybe my imagination is running wild, nevertheless, as I have communicated with you before, potato is a favourite)? I know assumption is a major "F" Up, still, I can't help assuming (Aloo Gobi, Dum Aloo & Curry Chicken Potatoes). I am sincerely believing that these jacket potatoes, crispy crunchy chicken (Cornflakes Baked Chickenmince filled (Sweet Chilli Chicken), yogurt atop and salad leaves paired, will be an absolute delight to your tastebuds.

Ingredients
For potatoes:
2 large (each about 200g) US potatoes - simmer till tender with the skin on
2 tbsp olive oil
Salt for taste

For chicken mince:
300g minced chicken
1/2 tbsp dark soy sauce
2 tbsp oil
Salt for taste (use sparingly)
(Note - for a vegetarian version, omit this please)

Other ingredients
Lettuce/salad leaves
Chopped spring onions
Yogurt/sour cream

Method
For potatoes:
Place potatoes in a baking tray, sprinkle salt and drizzle oil all over.
Baked at 180c for about 20 mins or until cooked/tender with a crispy skin.

For  chicken mince
In heated oil, add chicken, soy sauce and season with salt.
Fry while breaking with a spatula.
Once crispy and crunchy, remove from heat.

To Serve:
Gently scoop out the center of potatoes.
Fill with chicken mince.
Serve with lettuce leaves and sprinkle spring onion over.

  2. Here in the US it seems like restaurants have no imagination when it comes to baked potatoes. Each and every time you get that question "do you want them loaded" which is the cheese/chive/sour cream/bacon topping. Also, if it is a meal, you can bet it is taco meat on top with that. Glad to pop in and see a different preparation with the chicken mince and soy-delicious!

    Omg.. you are making me very hungry (I love potatoes too!)

    This recipe is good! I never thought of using minced meat as a topping! I always just put butter on before baking!

    If you live in Singapore, I might be thick skin to come down to your house to eat the potato =P

    I have a few question:
    1) Do we need to use a fork to poke the potato?
    2) How come we still need 20 minutes to bake? As we have already boiled it previously, hence baking will take about 10minutes

    here's the answer to your questions:
    I did not poke the potatoes bc the baking next does the job of giving the smooth taste. So the second question is also answered together and the baking is also for the crunchy crunch which the olive oil does a good job.

  13. I have always ordered this Ms.Nava in Wendy's..I love potatoes and my kids too..this is a unique way because it has minced chicken and using olive oil..it is a healthy dish..passing by Ms.Nava ;)

  25. I have a similar love for potatoes too! :) I don't get why my parents always love buying a couple of potatoes at once by the kilo, when we could easily finish off one of those huge 10g bags within a few weeks haha..... Your jacket potatoes look delicious!
