Eggs. The egg story in my house is a never ending story (Egg Rasam, Egg Vindaloo & Egg Curry Masala)? For a matter of fact, say what you want, we are egg dependant. Maybe I won't say daily, but when the need warrants for. Especially for a side dish for our rice meals. Tofu Scrambled Eggs? Tofu scrambled alongside red capsicum, onion and spring onion. Easy-preasy yet satisfying.
Ingredients
2 eggs
1 red capsicum - remove seeds and cubed into small pieces
1 white firm tofu - cubed into small pieces
1 (about 80g) onion - chopped
2 sprigs spring onion - sliced thinly
2 tbsp of oil
Salt and pepper for taste
Method:
Lightly fry tofu on both sided in heated oil.
Remove and keep aside.

Into the same oil, saute onion.
Add eggs and season with salt and pepper.
Scramble over high heat and add fried tofu, capsicum and spring onion.
Stir in and dish out.

My hubby eats eggs every day, so coming across a new recipe on how to serve it is a welcome sight. Also, slipping so tofu into the diet is a good thing. Your picture here does catch the eye-vibrant colors! Have a great Monday!

ReplyDeleteI combine my tofu with other things as I do not like the taste of it on its own. Tofu scrambled eggs is the perfect dish for me.
