Tapioca Stir Fry

The humble tapioca. Wouldn't you agree tapioca is a humble from under the ground root digging? If you are asking me, I must say humbleness of tapioca is forever for me. From those years when I was growing up and till this day. Energy giving and sustaining, but somehow forgotten until recently when I couldn't help picking up tapioca again at the hypermarket and the dish had be? Tapioca Stir Fry (Brinjal Stir Fry). My Indian me style of cooking, some anchovies added and those customary Indian ingredients as well (Aloo Gobi, Curried Ladies Fingers, Carrot Poriyal & Eggplant Tikka Masala). Never ever rule out Tapioca Stir Fry for Sambar and ever loved Egg Rasam or Sodhi


Ingredient
500g tapioca - remove skin, simmer to soften and cubed to medium size pieces
1 tbsp anchovies/ikan bilis - soak in water for about 5 mins, drain and snip into smaller pieces.
1 red chilli - sliced thinly
1 green chilli - sliced thinly
4 shallots - sliced
1 tsp turmeric/kunyit powder
2 sprigs curry leaves
1 tsp mustard seeds
1/2 tsp crushed black pepper
3 tbsp oil
Salt for taste
(Note; for vegetarian version, omit anchovies)
Method:
When oil is heated, fry anchovies till crispy and crunchy.
Add in chillies, shallots and mustard seeds.
When mustard seeds starts to pop, add tapioca and the rest of the ingredients.
Stir continuously for about 5 mins or so before removing from heat.

  2. Your mom sure knew how to make use of "extras" around the kitchen! The use of tapioca in a savory stir fry dish is very unique-it would not have crossed my mind.
    That picture is really amazing and vibrant. Definitely worth a try-glad your mom inspired you to make this dish! Great post.

  8. Wow, very interesting - I've never had spicy tapioca, but this looks quite delicious. Since I love anchovies, I am very tempted to try this dish.

  9. I use tapioca pearls and tapioca flour but I don't know if we get this in vegetable form. May be in the freezer section. I wonder how it will taste like.

    I enjoy tapioca as dessert and use it as a thickener for soups and stews but never like this before. Thank you for sharing. I will be sure to try this in the future.

I just browsed on what is tapioca Ms.Nava..because here in our country tapioca is a salad recipe dish..so tapioca is a cassava..another new way to cook tapioca and I never had it cooked this way..it is worth a try and with those anchiovies I know it will be a superb new dish..thank you for this post Ms.Nava..how are you on your new home? *hugs* and good morning I just woke up..coffee ;)
