Anchovies (Ikan Bilis) & Long Beans Fried Rice

Fried rice is never a failure. It’s a quick fix filling meal, and as I have already said before (kampung fried ricebelacan fried rice Chinese fried rice), okay, you can add any ingredient you like into fried rice, also, anyone for the matter can fry fried rice. Easy. That's why there's loads and loads of recipes for fried rice, various types as well. But we Malaysians still prefer our local ingredients, bilis is one of them (Anchovies/Bilis Fried Mee Hoon). How about trying this version?  Leftover cooked rice fried with ikan bilis/anchovies, long beans, eggs and spring onion. Teamed with cili padi/birds chillies in soy sauce and cucumber slices. Take over ladies and gentlemen. That's all for the day. Bye.

2 cups cooked white rice
2 tbsp anchovies - soaked for 10 mins, drained and cut into smaller pieces. 
10 long beans - sliced into thin rings
2 eggs 
5 garlic - chopped
2 stalks spring onions - sliced thinly
4 tbsp oil
Salt and pepper for taste

Heat oil, break eggs in, scramble till half cooked and remove.
In the same oil, fry anchovies till crispy and crunchy.
Remove and keep aside. 
Add garlic, saute and put in rice, season with salt and pepper. 
Stir all together over high heat.
Combine in long beans, scrambled eggs and spring onion.
Give a good stir and remove from heat.
Pair with cucumber slices and red/birds eye chillies (optional)

  13. Hi! Congrats on top 9! The dish sounds as wonderful and it looks. I love anchovies. Good idea adding them to fried rice. They must give the dish a nice flavor.
