Baked Cheesy Potatoes

An oven is an investment for baking and grilling. Without a doubt. But like I have already said before (Grilled Chicken Wings), not all of us have the privilege to owning an oven? Then again, to those of you who have to stretch every dollar you have, I think you can still invest in a basic oven. These days, a portable small oven, cost like? For baking enthusiasts I reckon you must own an oven, to the rest of you, be contented with a portable one. Trust me, whether its the big, showy and built-in oven or portable, baking is basically baking. Today ladies and gentlemen, our focus is not only baking, but also potatoes (Dum Aloo, Potato Anchovies, Chilli Aloo, Aloo Gobi & Bonda). Oh-Wow-Walla? Potatoes. Always the love in my house and any which way. As a dish by itself, or into curries, or soups, or whatever and whichever (Lamb Potato Fried Rice, Indian Mutton Meatball Soup, Mutton Kurma, Masala Mutton Curry, Chicken Curry Potato, Curry Chicken Noodle & Pepper Mutton Curry).  Can we now daintily bite into these crispy on the outside and cheese oozy inside Baked Cheesy Potatoes? 

2 (abt 300g) potatoes - boil till tender, remove skin and mash
2 stalks coriander leaves - slice thinly 
2 stalks spring onion - slice thinly 
2 1/2 tbsp Parmesan grated cheese
1 cup bread crumbs
1 egg - lightly beaten
Salt and pepper for taste

Into mashed potatoes, add coriander leaves and spring onion.
Season with salt and pepper.  
Mix all together for a thick dough. 
Roll into small balls.
Press in the center for a space to fill up with cheese. 
Seal, roll again and flatten. 
Dip in egg and coat over with bread crumbs.
Preheat oven at 170c for 5 minutes.
Bake for 1/2 hour or until a nice brown outer layer.

  10. What an incredibly cool idea. It's a great way to use leftovers. I'd have never thought to turn them into cheese filled balls like that. Heck, I may not even be able to wait for leftovers. :)
