From Ghee Rice (Ghee Rice, Tomato Rice & Jeera/Cumin Rice), lets proceed to Lamb Fried Rice. Of course rice story in my house will forever be on the go. After all, we Malaysians? I don't know about you, I must admit I am the biggest fan of rice and when we speak about fried rice on the whole, there will be on end (Kampung Fried Rice, Belacan Fried Rice & Chinese Fried Rice). Lamb Fried Rice (Lamb Pho/Vietnamese Noodle Soup)? Leftover cooked rice, minced lamb, potato, red capsicum and we Malaysians, how can we say no to spiciness.
3 cups cooked white rice
150/1 cup minced lamb
1 large potato - remove skin, cubed and fried
1 red capsicum - dice
5 shallots - slice
1 tsp chilli powder (or as per taste)
1 tsp ginger paste
1 tsp garlic paste
2 sprigs coriander leaves - slice
2 tbsp oil
Salt for taste
Method:
Combine and mix lamb with ginger paste and garlic paste.
Keep aside
Heat oil and saute shallots.
Add lamb. Fry while breaking up to prevent lamb from lumping together.
Once crunchy, add rice, salt and chilli powder.
Stir to combine.
Add capsicum, fried potato and coriander leaves.
Give a good stir and off the heat.
