Ghee Rice (Nei Choru)

Ghee Rice, aka Nei Choru! Walla! Imagine the scent and richness of ghee and also spices in ghee rice (Tomato Rice & Cumin Rice). Furthermore, ghee rice made from basmati rice? What a mini or major revelation of tastiness right? Pairing for ghee rice? Endless (Mutton Dalca, Mutton Kurma, Masala Mutton Curry, Ayam Masak Merah, Chicken Curry Potatoes & Bitter Gourd Prawn Curry). Oh, add some cashew nuts as well.   

2 cups Basmati rice
2 tbsp ghee
5 shallots - slice
Spices - 2 sticks of cinnamon, 2 star anise & 4 cloves
60g (1/2 handful) cashew nuts
3 sprigs of coriander leaves (cut into long pieces)
3 cups of water
Salt for  taste

Rinse rice under water, drain and keep aside.
When ghee is heated, fry cashew nuts until crispy.
Remove and keep aside.
Do the same to the shallots (fry and keep aside).
Into the same heated ghee, saute spices.
Add rice and stir a couple of times..
Tip into rice cooker and pour water.
Stir and let it cook.
Once cooked, fluff up and combine in fried shallots, cashew nuts and coriander leaves.

  2. That's a very flavorful rice, Nava! I love it more because it has cashews in it!

  3. This is one of my favorite. Around my parents place in Kerala, where I grew up is highly Muslim populated and this is the second favorite item there after Biriyani. It is usually served with Chicken fry or chicken masada. Oh my god you just reminded me of it. Last time when I went to Kerala I went to a local muslim restaurant just to have this. We call it "NeiChoru"
