Tomato Rice

Rice again? Indeed yes. I love our Malaysian rice. Rice, the love of my food life and one which I won't compromise. Rice for me is a must daily. I must have rice and as a rice eater, believe me, I am still in shape. Its just people and their mentality to thinking that people who consume rice must be rolly-polly. Who actually told you? You are heavy weight because you don't exercise or you are a couch potato. Stop blaming rice please. Rice in fact is a source of energy, but like we all know, anything over consumed will be glued to your tummy, butt and thighs. Other than that, you should be at the save beauty shape at the food helms of rice. Let me give you another choice to another rice dish today (Chinese Fried Rice, Belacan Fried Rice & Jeera/Cumin Rice). My style, as usual, the uncomplicated style, rice elevated by tomato, shallots, ginger and spice powder. In the rice cooker style of cooking.

2 cups rice - wash and drain off excess water
2 (abt 230g) tomato - sliced thinly
6 shallots - sliced
1 inch ginger - sliced
1/4 tsp garam masala/all spice powder
3 tbsp oil
Salt to taste
Water as needed

When oil is heated, saute the shallots, tomatoes and ginger.
Add in the rice, garam masala and salt.
Fry for another 3-4 mins and then tip rice mixture into rice cooker.
Pour water as needed (generally 3 cups for 2 cups of rice) and let it cook.
Once cooked, fluff up.
