Salted Egg Chicken

No, no. Not an Indian dish. Salted egg and Indians? I really don't know how many Indians and how many salted eggs for them, but this Indian lady? She and salted eggs? They go back many years down the memory lane. In fact, even my dad? Both of us just so love salted eggs. Pretty much says it all. Why I made Salted Egg Chicken. Ask the Chinese and they will reveal all of it about not only salted egg, but salted egg chicken (Kam Heong PrawnsChicken Wanton Soup & Chicken Black Vinegar Ginger). Even I can tell you right now. Crispy fried chicken cooked alongside salted egg yolk, chillies, shallots and scented by coriander leaves.  

Ingredients
400g chicken - cut into bite sizes
1/2 tbsp corn flour
3 salted eggs - microwave for 3 mins. Once cool down, break and lightly mash the yolk. Only the yolk please. 
4 shallots - slice thinly
3 red chillies - slice
1 small bunch of coriander leaves - slice
Oil as needed
Salt to taste

Method
Mix cornflour and a bit of salt into chicken.  Deep fry chicken, remove and keep aside.
Leave about 2 tbsp oil in the same wok.
Saute shallots and add the rest of ingredients, including fried chicken.
Stir all together and remove from heat.

Look at this earthen pot and in it thick, salty, spicy and vibrantly exciting to our palates and eyes  Mochakottai Karuvadu Kulumbu (Field Beans Salted Fish Curry). Like immediately can trigger our hunger throne right? I know. I am definitely a big fan of this Indian style salted fish curry and salted fish on the whole by itself ( Spicy Ikan Bilis Potato , Sambal Tumis Ikan Bilis  &  Sambal Kentang Ikan Asin ), can drive me crazy because I so love saltiness. In fact, every day can be a salted fish meal day for me ( Salted Fish Pickle , Bean Sprouts Salted Fish  & Steamed Pork Salted Fish ). But, I think we all know it? Too much of saltiness and salt can ruin our health? Of course. Then again, there is such a thing as every now and then saltiness as our best friend? How do make this salted fish curry? By the third day, Iphone 7 started showing its dark side. Really a terrifying-horrible shocking discovery, it kept rebooting every now and then for no apparent reason. Obviously, I couldn’t believe my eyes. Duh! Keeping my fingers crossed, hoping it’s just a minor teething problem, I went ahead with shopping nearby Plaza Shah Alam and Plaza Masalam. Accompanied by my niece, we bought a couple of things and then of course, naturally, shopping is more or less regarded as synonymous with hunger throne.
