Yam Basket (Vegetarian)

The vegetarian version to a Yam Basket. Not like a rare food item. Yam Basket Vegetarian for a fact is available in most Chinese eateries (Chick Kut Teh) and we can make at home as well. However, the shaping of boiled/simmered and mashed yam into a basket? Quite a thing. I struggled actually. Maybe because you need to master the art and I personally think, after a few rounds of making, you will be there. So, the start is moulding yam into basket and then giving it a fry for a coating of crispiness on the outside. Next, we saute and season the vegetables which then will be tipped atop the fried yam basket. I did it to this my version of home made yam basket and I am sure you can as well.

Ingredients
For yam basket
1/2 yam (boil/simmer and mash)
1 tsp cornflour
Salt to taste
Oil for deep frying

For vegetable filling
3 tbsp diced red capsicum
3 tbsp diced green capsicum
3 tbsp diced Chinese bitter gourd
2 tbsp chopped onion
1 tbsp light soy sauce
1/2 tsp Chinese wine (optional)
1 1/2 tbsp oil
Salt and pepper to taste

Method
For the yam basket
Mix yam with cornflour and salt.
Gently shape the mixture into a hallow round shape (thin or thick as you prefer).
Deep fry, remove and keep aside.
For the vegetable filling
Heat oil and when heated, saute onion.
Add bitter gourd and cook to soften. 
Put in red capsicum and green capsicum, pour soy sauce and Chinese wine, and season with salt and pepper.
Stir and cook to a texture you prefer. 
Spoon into the yam basket.

Look at this earthen pot and in it thick, salty, spicy and vibrantly exciting to our palates and eyes  Mochakottai Karuvadu Kulumbu (Field Beans Salted Fish Curry). By the third day, Iphone 7 started showing its dark side. Really a terrifying-horrible shocking discovery, it kept rebooting every now and then for no apparent reason. Obviously, I couldn’t believe my eyes. Duh! Keeping my fingers crossed, hoping it’s just a minor teething problem, I went ahead with shopping nearby Plaza Shah Alam and Plaza Masalam. Accompanied by my niece, we bought a couple of things and then of course, naturally, shopping is more or less regarded as synonymous with hunger throne.
