Vegan Tom Yum Soup
Thai cuisine or even tom yam/tom yum for the matter. A big Thai matter actually for me. You name it, I have it (Thai Fried Chicken, Thai Steamed Fish, Thai Crispy Fish & Shrimp Pad Thai Salad) and tom yum by itself has been a good and great making exploration on the whole. Basically, because we simply love slurping into tom yum soups or other Thai conclusive soups. Just so satisfying to our palates mind you, especially for their big, profound and utterly magical spicy, tangy and aromatic tastes (Thai Tomato Soup, Tom Yam Goong, Tom Kha Gai, Thai Carrot Soup & Thai Fish Noodle Soup). Today, ladies and gentlemen, its Vegan Tom Yum Soup. In fact, can be regarded as a vegetarian version as well. Make the broth and then go ahead by adding the rest of the ingredients as listed for a sincerely appreciated Vegan Tom Yum Soup (Tom Yam Fried Rice, Tom Yam Chicken & Tom Yam Mee Hoon).

Kerabu Taugeh
Kerabu? Remember those kerabu or Malaysian raw salads I have already shared with all you guys (Kerabu Kacang Botol, Kerabu Mangga & Kerabu Kaki Ayam)? Plus of course, the rest from this and that part of Asian Continent (Cambodian Green Mango Salad, Sri Lankan Carrot Salad & Asian Watermelon Salad) and me, the Indian who just so love our ulam, local herbs and Malaysian local produce for my cooking and eating pleasure (Nasi Ulam, Kacang Buncis Cili, Sambal Belimbing, Gado Gado & Nasi Dagang)? Tell me please and I will return willingly tell you on this Kerabu Taugeh, aka, Bean Sprouts Salad. Obviously, point blank said, you need beansprouts which you just need to break the brown bottom of them and then, if you asking me, just buy the kerisik (pan fried and pounded grated coconut). What's next? Quickly blanch bean sprouts (Bean Sprouts Omelette & Bean Sprouts Salted Fish) and tossed alongside kerisik, shallots, red chillies, coriander leaves, spring onion, lime juice, sugar and salt. Refreshing, crunchy, spicy, tangy and aromatic Kerabu Taugeh/Bean Sprouts Salad is ready. Go ahead everyone. Devour in.

Chocolate Genoise
On the go. Baking is still on the go? Looks like it, but perhaps sooner or later, most probably sooner I foresee I will be pulling the brakes to baking (Easy Banana Bread & Cocoa Butter Cake). Enough. I think enough of practice and trying to make perfect, and also putting some much of effort on baking. Done it and I am quite satisfied actually (Lemon Bars, Mandarin Orange Cake, Milo Cake & Sujee Cake). Pretty much satisfaction attained, but I thought I will still do one for the road and out came from the oven this Chocolate Genoise. The other side of the coin to Classic Genoise. Of course the intention was also for finishing up the box of cocoa (Chocolate Cheesecake & Cayenne Chocolate Cookies). Chocolate Genoise as you can see is an ultimate sweet delight right? And the technic to making? Remember, the folding must be done daintily and without rushing. Otherwise? You tell me please (Traditional Butter Cake).
Ingredients
3 eggs (room temperature)
80g sugar
30g warm melted butter
70g cake flour
15g cocoa powder
15g corn flour
Method
Create a double boiler (a bowl placed on top of a pan simmering with water)
Whisk eggs and sugar (on the bowl) till slightly warm and foamy.
Remove from heat.
Whisk to the ribbon stage (drop to see a line)
Combine/mix cake flour, corn flour and cocoa together.
Sift the flour mixture over the egg mixture.
Carefully fold in. Do not over fold but ensure there's no lumps.
Stream warm melted butter inside and fold in.
Tip cake mixture onto a greased baking pan (size depends on how thick or thin you prefer the cake)

Bake at 170C (preheated for 5 mins) for about 40 mins or until cooked.
(Note; adjust heat according to your oven and baking time, depending on the size of the pan).
Remove from oven, cool down and optional - dust some icing sugar atop.

Bergen - Norway (Day 2 & 3)
Down to the last two days before curtains are permanently drawn on our Denmark and Norway tour. On this second last day, our sightseeing started at Bergen's waterfront port (Bergen Norway Day 1). Vessels, ships and boats, we actually had the chance to being nearest to the sea. I loved it. Honestly. I am crazy about anything that water "gotto" to do. Sea, river, waterfall or even ponds (Vossestrand, Gol, Fjord & Flam). Basically, I am a nature lover, nonetheless, I can also truly immerse myself in history (Oslo Norway). Undoubtedly, for keeping me wise as I grow older, in my book of knowledge. Already a few volumes, one which is close to my body, mind and soul for stirring me up in the most tantalising, teasing regards (Copenhagen Day 2, Copenhagen Day 1 Part 2 & Copenhagen Day 1 Part 1). Henceforth, at this Bergen port, I stood so close to the edge, I threw in me, my, myself moment of fun clowning, simultaneously I pictured for memory external drive.

Mathi Achar
Mathi Achar. Kerala Sardine Fish Achar or Kerala Sardine Fish Pickle. Says it all. Me and my love for fish achar (Nyonya Acar Fish) or even salted fish pickle (Pada Salt Fish Pickle & Salted Fish Pickle). And so, you think I would have had major kitchen struggle in making Mathi Achar? I don't think so because I have to some extent, mastered my cooking skills towards Kerala cuisine (Nadan Meen Curry, Fish Puttu, Tuna Thoran & Malabar Fish Curry & Kerala Fish Fry). Of course, I must admit I did refer to a couple of recipes, but at the end of it all, I decided I will stay true to my own Mathi Achar cooking invention and fish by themselves, do I have to repeat myself again and again (Fish Ball Noodle Soup, Malu Kirata/Sri Lankan Fish Coconut Stew, Indonesian Fish Balado, Mauritian Fish Curry & Ikan Masak Kicap)? Moreover, sardines are not only a popularity in Kerala, but here in Malaysia too. So, sardines they were. Masala enhanced fried sardines tipped into a spicy and full of utmost power packed vinaigrette. Oh-My! What a fish pleasure. Made ahead and having Mathi Achar as you wish whenever you yearn for, for your rice meals (Sardine Masak Lemak).

Norway - Vossestrand, Gol, Fjord & Flam
Throwback Norway and Denmark (Oslo Norway, Copenhagen Day 2, Copenhagen Part 2 & Copenhagen Part 1). Consecutively, a morning kick jump start all the way to Vossestrand. Of course, must be interlinked alongside comfort breaks. First brekkie at one of the road side cafes for easing and hot coffee, some preferred ice cream which they believe will keep them warm during winter. Beats me though. Back on the road, at about, roughly 1pm, we lunched in Solstad Hotel, Gol. Salmon alongside potatoes and veggies rated as okay, for me nonetheless, nothing is a meal unless its rice and spicy dishes. Regardless, tummy filling was essential and then, as we walked before hopping into the coach and also, while journeying, there was no short of crystal clear view of Gol. In fact, all the way from where we started, Norway by itself, from any angle you look at, even from this side is sensual. Calm and serene, non pressured life, albeit service with a smile is yet to be affirmed, but, our driver, who hardly spoke, was totally nature free with his smile.

Copenhagen (Denmark) - Day 2 (Frederiksborg Slot & Kronborg Castle)
Fruitful first day. Utter but there's still 7 days for positively shattering us. Admittedly quite a tiring day as well. Sightseeing walking within the next 2 hours after almost a day of sleep deprivation due airport in and out, and also being up in the air, indeed, tiredness eventually caught up on us. Nevertheless, in all genuine fairness, Copenhagen couldn't at all be faulted. Copenhagen remarkably opened up in its most starling, calm and serene as ever regards (Copenhagen Part 2 & Copenhagen Part 1). Having said that, as tired as we were, we couldn't shut down for the day. Never easy-peasy I believe when you are in a totally new environment. Unfamiliarity or because we can't contain our far travelled overwhelming happiness, sleep might trouble us. Aside to whether we slept, or just catnapped, or we didn't sleep at all, sightseeing the following morning must go on. It must. I guess you won't even have a choice to staying behind, if there's a switch in hotel. So, everyone must get ready by 9.00pm. Whether you skipped or heartily tucked into the hotel buffet breakfast, that's beside to the point. Time is still essence for sightseeing. We did, prior to arriving in Frederiksborg Slot. Stupendous! What a super duper morning start. Nature breather huge garden walkway, huge trees overshadowing tadbit of sunshine from god's heaven, and colorful flowers gently dancing in the faint breeze as we walked while inhaling fresh air. Conquering and immersing me instantly. So lovable. A long walk obviously till where the castle is.

Malu Kirata
There is Kiri Hodi and there is also Malu Kirata, or Sri Lankan fish coconut stew. Furthermore, when we speak about Sri Lankan food on the whole, how can not include coconut milk mostly (Sri Lankan Carrot Salad) for whichever dish for the matter (Sodhi)? You bet. Of course, we Asians pretty much love the concept of coconut milk tipping into our cooking as well. In fact, why go so far. Even for our Malaysian savory dishes (Salted Fish Pineapple Coconut Stew & Shrimp Coconut Milk) and even for our desserts (Pumpkin Sago Dessert) and I think fish is a diet for maybe everyone around the world regardless whether we are surrounded by sea or not. Over in Malaysia too (Malaysian Fish Sambal) and in my house particularly, we are fish dependent at least twice or once a week and who can be a better Malaysian to speak about fish except Nava K. Various types of fish dishes from near and far beyond has already been my cooking skills (Nadan Meen Curry, Malabar Fish Curry, Meen Puttu & Thai Fish Noodle Soup) and I don't think there will be a full-stop to fish for as long as forever (Burmese Fish Biryani, Mauritian Fish Curry, Vietnamese Fish Soup & Bengali Fish Curry). This Malu Kirata was the latest trended in my kitchen. Perhaps not really the authentic kinda, but trust me, without compromising on Sri Lankan food fab. Masala fried fish tipped into a creamy and tangy coconut milk stew.

Copenhagen (Denmark ) - Day 1 (Part 1)
My travelling bags, as well as my kept aside shoes for walking me while travelling screamed their lungs out when I gave them a broad smile to indicate that they will be put to good use (Krabi Libra Cruise & Perth My Knowledge Travel Venture). My smile pretty much indirectly told them that they will be travelling alongside me throughout this 9 days & 7 nights Denmark & Norway tour. Oh-mamma-mia! All of us happily grinned and glittered together, thanks to my other half-half for this our regarded as worked hard and rewarded globetrotting holiday. Our second in line, the first was (2 Days Of Rome). I of course have had my fair share of seeing the world on my own while other half-half was working his butt out. Potentially for reaping rewarding us towards this already planned a year ahead holiday. Our much eagerly awaited day arrived, off we left to KLIA prior to landing in Amsterdam for Copenhagen transiting. Stepping foot at the airport (Ho Chi Minh City & Bangkok Through My Canon) less than an hour for every clearance group, off we left to Slotsholmen for lunching at one of the Chinese restaurants along the row of shops. To the first floor, in all excitement I completely forgot to note down the name of the restaurant. Believe me, I was still pinching myself from the moment we walked from the main road. Unbelievable. Am I actually in Copenhagen? Yes, I am. Our early lunch, by 11.30pm, opened up invitingly.

Cambodian Green Mango Salad
Mango and salad? I already told you before right? I did (Kerabu Mango/Mango Salad). Maybe I could have repeated the same food story and mango I think like donkey times (Mango Cheesecake & Mango Mocktail)? Thus, mango is a favourite for all sort of dishes (Aam ki Achaar & Indian Mango Chutney)? If you are asking me, undeniably. But when salad is a concern on our dining table, most of the time it must be the Asian style. As long as salads packs our Asian and Malaysian customary tastes, oh-my, our meals will be truly a delight and we actually have salad as a side dish for our rice instead as a starter, nibbler or appetizer. That's how it has been for us for as long as I can recall and since I have already showcased mango in our Malaysian style, I decided I will take on the Cambodian side to a mango salad (Cambodian Sour Fish Soup). Pretty much not much of a difference in the ingredients. I mean, what can be different? Our Asian cooking is all about more or less the similar ingredients right? Of course (Kerabu Kacang Botol, Vegetable Raita, Asian Watermelon Salad & Shrimp Pad Thai Salad). Cambodian Green Mango Salad? Obviously, green mango, and then garlic, shallots, chillies, coriander leaves, sesame seeds, sugar, oil and of course, we must need salt for this vegetarian version Cambodian Green Mango Salad (Mango Cucumber Salad, Penang Acar & Cucumber Yogurt Salad).

Maggi Goreng Mamak
Maggi Goreng Mamak. The number fried noodle selling. In fact, each time we head to the mamak stalls, its like a habit or food lingo we must call for a plate of Maggi Goreng Mamak. My knees too can wobble for this style. Quickly fried on the spot, there and then noodles (Mee Goreng Udang, Char Kway Teow, Anchovies Fried Mee Hoon & Malaysian Fried Mee). Maybe not always, yet, I do yearn for and I usually request for lotsa veggies in Maggi Goreng Mamak. Can be a satisfying mind you even when we make it in our kitchen and of course, without compromising on cleanliness and according to our taste (Nyonya Mee Siam, Malaysian Fried Mee Hoon & Hokkien Mee). Whichever and whatever ingredients we prefer, regardless, the essentials have to be Maggi instant noodle or noodles, chillies, soy sauce, and like I have already told you, throwing in lotsa vegetables.

Mochakottai Karuvadu Kulumbu (Field Beans Salted Fish Curry)
As I
peer into the earthen pot, brimming with the flavorful Mochakottai Karuvadu
Kulumbu, my appetite awakens. I must admit, I have a soft spot for this
Indian-style salted fish curry. Salted fish has always held a special charm for
me, with its salty goodness. It's no surprise that I could happily indulge in
it every day. Yet, I'm mindful of the health implications of too much
saltiness.
But amidst these considerations, there's something comforting about a touch of saltiness, like an old friend. Making this curry is simple, without any fuss. My goal is always to make cooking a joy, not a chore.

Restaurant, family decided to part. In fact, all of them returned to Kuala Lumpur, whereas, we decided to extend our stay in Penang. Huh-huh! Joy to my travel venture, my other half-half literally couldn't say no when I slyly insisted that we stayed on. He also I think was trapped in our marriage love trap because he gave in, again, to our stay in Eastern & Oriental Hotel. Joy on this day, I have always wanted to experience a stay in this, one of the best among the rest, well known and back then to those years hotel (Rasa
Sayang Hotel). No booking whatsoever, at an ad-hoc basis, we tried our luck. We were actually only keen in a normal room, but since, we could get none, we agreed for the premium suite. Premium suite? Yes, believe me. So excited I was, not always, akin lottery stuck, of course, with my other half-half's hard earned money, while he sorted out payment and our particulars, we were served the punchy, fruity and extremely delicious juice. Wow! Honestly, the first quench into this juice was proven. I made sure I finished off every drop, thereafter, we were ushered to our suite by the butler.
