Malaysian Banana Pancake


I like to think about food differently. I like to localise whatever I make with cheaper ingredients compared to spending more and replicating Western dishes. While occasionally I don't mind, most of the time it is the local ingredients. Take for example these pancakes - made with bananas (Banana Cake,  Banana Bread and Banana Chocolate Cake) and served with banana slices, grated coconut and palm sugar that cost a couple of dollars only, of course banana pancake with maple syrup and exclusive butter (Rome, Florence, Verona, Norway and Turkey) at five star hotels in Europe is undeniable fantastic. At home?? Well, it is being practical without compromising on the deliciousness - either for breakfast or as sweet note to end your meal.


Ingredients
For pancake
3 ripe bananas - mashed
1 cup self raising/cake flour
(Note: for all purpose flour, add some baking powder)
Milk - as needed
1 egg - lightly beaten
A pinch of salt

To serve
Fresh grated coconut - as needed
Palm sugar - as needed. Simmer with some water for a thick syrup and can include with some white sugar.
Banana slices

Method
Whisk and mix all ingredients for pancake to a thick but not too runny batter.
Scoop a little at a time and pour over a heated non-stick frying pan.
Brush a little butter/oil if you prefer.
Cook on one side or both sides.
Remove and serve with grated coconut, palm sugar syrup and banana slices.

  13. Cannot agree with u more on people so caught up with replicating. Here if I think local I may end up with some corn ,beef and carrots or pumpkins :) but Malaysia is not like that its a heaven for fresh produce.Yummy pancakes Nava.

  19. Love all the flavours here. You're right about replicating food from the West. I look for local cheaper versions as well. It's only once in a while that I indulge. Your pancakes look most tempting! About your question on my blog, yes, keema stands for minced meat.
