No Bake Oreo Cheesecake

Hi there,

Just to update you that I am still not back home. In fact I wrote this recipe before leaving for my holiday. Now that I am rushing for time, I am going to keep it simple without any long winded stories. The only thing I like to say is that its not the most prettiest and impressive cheesecake. Yet the easiest and cheapest to made - minimal ingredients and you save on electricity too.

I have also been trying to share this post for the past few days. I couldn't. The wifi connection in the hotels I have been staying in India isn't anything to be proud about. Its either available in the lobby or in the room and both are slow to a crawl until I almost fell asleep. Finally, here I am in another hotel and before the connection goes haywire, pull-stop for now.

Ingredients
2 packets (137g) blueberry Oreo biscuits (or any other you like)
2 tbsp soften salted butter
200g cream cheese
3 tbsp carton milk
1 1/2 tbsp gelatine - melted

Method
Scrape out the cream from the biscuits.
Keep the cream aside.
Crush biscuits - either in the food processor or add in a zip lock bag and bang and roll with a rolling pin.
Crumble it with butter.
Press into a greased baking pan.
Leave it in the fridge.
Meanwhile, whisk cream cheese and the blueberry cream (scraped out of the biscuits)
Pour in milk and melted gelatine.
Whisk vigorously and add on top of the biscuit layer.
Smooth it out - how ever you like.
Put back in the fridge and let it set overnight.
