Indian Chicken Soup


The rain has been lashing and mum's antics has been lashing me well. Goodness gracious!! Who ever said taking care of the elderly unwell parents is easy. It is not! I know and sure, I shouldn't complain because its the birth right of mum. But trust me, if not all, some days I am helpless. I don't know what will keep her happy since there's more cannot than anything else. Hopefully we both can pull through together. Anyway, this chicken soup (fish ball noodle soup, tomato vegetable soup, dhal vegetable soup, Asian green pea soup, Japanese radish soup, potato bok choy soup and Chinese chicken soup) with spices and all things nice as she took the first few sips, she said not tasty but after I told her its her recipe, wahhh!! Every drop finished off.

Ingredients
(A)
400g/1/4 chicken - cut into bite sizes
2 potatoes - cut into medium size pieces
1 medium size carrot - cut into medium size pieces
1 tomato - sliced
1 1/2 tsp turmeric powder
5 shallots - crushed
1/2 inch ginger - crushed
Salt for taste

(B) - Spices
1 1/2 tsp coriander powder
1 tsp cumin powder
1 tsp fennel powder
Crushed black pepper - as needed

(C)
3 shallots - thinly sliced
1 cinnamon
1 star anize
3 cloves
2 tbsp oil
2 sprigs coriander leaves - sliced thinly

Method
Add all ingredients listed in A with enough water (about 1 litre) into a pot.
Simmer to cook chicken, potato and tomato.
Add spices and season with salt.
Stir and keep it in simmering over low heat.
Fry shallots in 2 tbsp of oil till light brown (see ingredients C)
Add the rest of the ingredients (as per ingredients C)
Quickly fry, tip into soup mixture and stir.
Serve piping hot, by itself or with rice.

  1. Wishing your mother good health and am sure there is nothing at all to worry about her health. Mothers are really the most precious bonds we have in our life and I can understand exactly how you are feeling currently.
    The soup is delicious and perfect for the rainy weather.

  19. Nothing like a chicken soup to warm the cockles of your heart in winter!! Love this-I tend to add more veggies so that it becomes a healthy meal by itself.
