Instant Curry Laksa


At the rate the world is spinning, and we, we are trying to spin faster, I am really unsure what's the outcome gonna be. Scary though. One thing is obviously certain, we are all pressured for time because we are chasing after our success dreams, money dreams and maybe even love dreams. I believe so. Look around you, and you will clearly see how we are fighting battling time until some people hardly cook, some are resorting to prepacked ingredients (Green Fish Curry, Curry Chicken Noodles & Chilli Chicken), whereas people like me still appreciate home cooked meals.(Tomato Vegetable Soup, Prawn Wanton Soup & Cumin Rice), but kept to the basics (Kampung Fried Rice, Coconut Milk Stew & Malaysian Fish Soup), I too want something instant and tasty, without wailing my time away in the kitchen (Chicken Wanton Soup, Kangkung Belacan, Carrot Cucumber Salad & Mint Rice). But remember, instant cooking is not all about just cooking, it comes with preparing the ingredients and cleaning up thereafter. So, my advice is multi-talking as well in the kitchen. Do this, do that, let it cook (Old Cucumber Wolfberry Soup & Mee Siam),  meanwhile clean up as much as we can, so on and so forth. This Instant Curry Laksa recipe (Prawn Curry Mee) I am sharing today, some of you may regard as unhealthy because I've use instant noodles. So, my advice is either you straightaway ditch my recipe aside, or tweet it for a healthier version (Mushroom  Yee Mee Soup & Asian Green Pea Soup), or when time is really crisis until you have no mood to eating out, this recipe (Egg Mayonnaise Sandwich) is definitely a keeper (Instant Asam Laksa and Instant Tom Yam Noodle Soup). Instant Noodle heightened and elevated to an extremely tempting level, with coconut milk, egg, curry powder, fish sauce and cabbage. A revelation of rich, creamy, spicy and tangy tastes. Indeed.

Ingredients (for 1 person)
1 cup curry laksa instant noodle 
3 garlic - chop
3 shallots - chop
1 tsp curry powder
1 egg
1 small portion of cabbage - shred
1 stalk spring onion - slice thinly
1/2 tsp fish sauce
1/4 cup thick coconut milk/cream
1 tbsp oil
Method
Heat oil, sauté garlic and shallots.
Add curry powder and quickly stir.
Pour water (not too much because coconut milk will be added later) and add the seasoning (that comes in the cup) and fish sauce. 
Stir, simmer and gently break the egg inside.  
Simmer and add the noodle. 
Once noodle is soften, pour coconut milk, stir and off the heat. .
Combine in cabbage and garnish with spring onion.
