Instant Curry Laksa


Instant noodle - okay! okay! I know. Not healthy and I shouldn't eat (Instant Asam Laksa and Instant Tom Yam Noodle Soup). But can't help it. Instant noodle isn't always, yet the saviour when there's no food and no matter how you try to control hunger, hunger is still hunger and eating is unavoidable. So, I stock up instant noodle and I try to flavour up, usually with what's in the pantry and fridge. For this version, coconut milk the central ingredient and added with egg, curry powder, fish sauce and cabbage, a revelation of tastes  - creamy, rich and tangy.

Ingredients (for 1 person)
1 cup curry laksa instant noodle 
3 garlic - chop
3 shallots - chop
1 tsp curry powder
1 egg
1 small portion of cabbage - shred
1 stalk spring onion - slice thinly
1/2 tsp fish sauce
1/4 cup thick coconut milk/cream
1 tbsp oil
Method
Heat oil, sauté garlic and shallots.
Add curry powder and quickly stir.
Pour water (not too much because coconut milk will be added later) and add the seasoning (that comes in the cup) and fish sauce. 
Stir, simmer and gently break the egg inside.  
Simmer and add the noodle. 
Once noodle is soften, pour coconut milk, stir and off the heat. .
Combine in cabbage and garnish with spring onion.
