Butter Cocoa Cake


Every now and then, I do the extra mile. Extra mile akin fast-forwarded and fast tracked when my baking skills are almost down to the floor rusty. Usually, as most of you most probably know, I am a lazy dessert queen. Always the easiest to put together, mostly Malaysian desserts (Mango Coconut Jelly, Nescafe Ice Cream, Coconut Red Bean Ice Cream & Pumpkin Sago), sometimes I do kick in world desserts, but still within the limit of my limited baking technics (Cherry Vanilla Rice Pudding, New York Cheesecake, Cream Puffs & Soft Rolls). Anyway, after a long brekkie, out came this Butter Cocoa Cake. Fantastically waffling while baking, impressively moist and soft after just a touch of icing sugar atop. Recipe pinched from  bbcgoodfood and ingredients portioned out for a smaller cake. I am really happy. I achieved the extra mile to baking. Deeply look at this Butter Cocoa Cake and you will understand why (Marble Cake, Butter Cake, Lemon Squares & Eggless Mandarin Orange Cake). 
   
Ingredients
113g butter (softened)
113g caster sugar
113g cake flour
2 eggs
1 1/2 tbsp carton milk
1 tbsp cocoa powder
1/2 tsp vanilla essence
Method
Cream butter and sugar till light and fluffy.
Add eggs one at a time in the mixture, followed by vanilla and milk.
Sift flour and fold in.
Divide mixture into two portions.
Stir cocoa powder into one while the other remain the same.
Add butter into a greased baking pan, after which cocoa mixture over it.
On top of it, add cocoa mixture.
Bake at 165C for 40 mins or until cake is cooked.
Remove from oven and let it cool down.
