M & M Muffins


For the couple of days, I've be slacking on updating my blog. Ahhh!!! blogging is such - you start, you continue, you persevere and then, you just don't feel like doing anything about it. Today after the long break, I am back with this muffin recipe. Before that, let me say this - some women I know (I actually know) have nothing better to do in life or they want to so badly compete with me. So I guess accusing me of copying recipes they had to start with.

To those women, please think because what you say will have implication not on me but your own character. I know I don't bake often but that doesn't mean I don't know how to bake. As I have said before, once you have the basic knowledge, you should be able to invent your own recipes. The more you explore, the better you are. I don't like to brag, no I don't just for the sake of doing it. Nonetheless. I have to open up the brains of those who feel I'm a copycat. I do have credentials on baking. Oh-well, then again no point trying to put sense into small brains. Thus, enough said and now here are the soft moist colorful muffins. Made with those essential ingredients, yogurt and M & M choc buttons, because these muffins are super moist with oil and yogurt, they can't last. So best to tuck in within the day.  
Ingredients
1 1/2 cup all purpose flour
3 tbsp cornflour
A pinch of salt
*sift these three ingredients together
1/2 cup icing sugar (sugar is minimal but you can add more)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup vegetable oil
1/2 cup yogurt
1 1/2 tsp vanilla essence
3/4 cup M & M (keep 1/4 portion for topping)

Method
Sift cornflour, all purpose flour and salt together.
In a mixing bowl, whisk sugar and yogurt ( to dissolve sugar).
Add baking powder and soda.
Stir and bubbles will appear.
Add vanilla and oil, stir and mix.
Incorporate flour mixture.
Gently fold in M & M.
Divide and scoop batter into cup cake cases (placed in a muffin tray).
Press a few M & M on top of each cake (from the 1/4 portion kept aside).
Bake at 175C for about 30 minutes or until cooked.
Remove and cool down.

  4. I also baked muffin last week. Did Vanilla chocolate chip muffins. My chocolate chip melted and sunk down all the way to the bottom!

  19. So cute! I have packets of M & Ms in my house at all times. Somehow kids never grow tired of them. Actually, I munch on them sometimes too. I wish I had these muffins at home...what a awesome snack it would make:-)
