Thai Style Sea Bass & Apple Salad


Oh god! Oh no! Me and my never ending fish story. Sorry guys. I promise I won't repeat my old stories to new level because its back again to fish (Thai Fish StyleGrilled Unagi & Ikan Masak Belacan), back to Thai cuisine again too (Thai Salmon Noodle Soup, Lemongrass Prawn Mee, Thai Green Vegetable Curry & Tom Yum Seafood Soup). Quite a my invention, I actually figured out a special style to showcasing fish, for heightening and tightening our Thai deliciousness food catch. Shall we just get to the recipe now? Thank you. I want to anyway, I guess when you run out of interesting ideas for capturing the attention of your followers, you might as well keep it straight to the recipe. So, what about this Thai Style Sea Bass & Apple Salad are you asking me now (Grilled Mackerel Yogurt Dip)? Believe me, made with ingredients I already had in hand, my pantry and fridge most of the time spills over with ingredients. Good and bad. Good in the sense that you don't have to run to the market and grocers often, bad too because if you don't use up the ingredients, money dumped and wasted.

Therefore, seabass from my fridge came out, defrosted, prior to pan frying and seated on green apple onion salad (Watermelon Mint SaladCucumber Yogurt Salad & Apple Cucumber Salad) apple too was crying, asking me to use it as well. Of course, I did it a favour. Over the pan fried fish, a spicy, tangy and tad bit of salty Thai sauce (Thai Massaman Curry, Thai Fried Chicken & Thai Papaya Salad) was drenched. Yummilicious! Oh, if you feel you want to tuck into Thai Style Sea Bass & Apple Salad (Basil Tandoori & Longan Salsa) alongside rice, go ahead. Salivate your mouth and throat.

Ingredients
For the sea bass
300g (medium size) sea bass - remove bones and cut into two pieces.
Salt and pepper - as needed 

For the apple salad
1 green apple - cut into two, remove seeds and slice into long thin pieces
1 (about 80g) red onion - slice thinly
1 stalk of spring onion - slice thinly

For the Thai/spicy sauce
5 garlic - chopped
Chilli flakes - as needed 
1 tbsp fish sauce
Lemon juice - as needed 
Sugar and salt for taste
2 tbsp oil
1/4 cup water
Method:
Combine the 3 ingredients for the apple salad and place on a serving plate.
Keep aside. 
Season sea bass with salt and pepper.
Pan fry - crispy outer layer and to cook the inside as well. 
Dish out and place over the apple salad.
For the sauce, heat oil and when heated, sauté garlic.
Add the rest of the ingredients and give a quick stir.
Pour sauce over the fish and serve.
Trend alongside "nava-k", possibly on every other social media please. Your support will rocket my success.
