3 cups pea shoots - rinse and pat dry.
Lime juice -as needed
1 tsp sugar (optional)
3 tbsp oil
Salt to taste (if needed)
For the chilli paste
1 small piece belacan - roasted
1/2 inch ginger
4-5 dried red chillies
In the heated oil, fry anchovies, remove and keep aside.
Add chilli paste, fry and stir till aromatic and oil splits.
Put in shoots, sugar, lime juice and salt.
Increase the heat and fry till a texture you prefer.
Add fried anchovies, stir again and remove from heat.
