Pucuk Kacang Goreng Cili (Pea Shoots Stir Fried With Chilli)


Alright foodies. Today, its another sambal/chilli stir fried vegetable galore. Of course. Has to be because we Malaysians, we just so love our local vegetables stir fries. We do. We absolutely welcome a spicy vegetable dish (Chicken Sambal Sandwich). Anything for the matter. As long as its up and bold with saltiness, sourness and spiciness, or even some simple tastes, we pride into our local vegetable dishes (Kangkung/Water Spinach BelacanSweet Potato Leaves Chilli and Kerabu Kacang Botol). Always and forever, I think I have told you before, Malaysians are hard core chilli eaters. We rock and roll must have spiciness (Sambal Sotong, Gado Gado, Ikan Asam Pedas, Soup Ikan & Chilli Prawns). For me, when vegetables are a concern, I stick to our local produce. I don't believe in paying more for imported vegetables. What should I? What should I unnecessarily rocket my cooking budget? I go to our local hypermarkets and I pick veggies for a couple of dollars only.


On this day, I picked up a good bunch of Pucuk Kacang, aka Pea Shoots. Luscious and akin awaiting me. Pea Shoots can be cooked in a jiffy. In fact, aplenty garlic quick fried with pea shoots is wondrous. I on the other hand decided that I want to cook Pucuk Kacang alongside belacan/shrimp paste, chillies and ikan bilis/anchovies for packing a punch of our Malaysian tastes. Oh-so for kicking waking up your tastebuds, all your need is a plate of rice for tucking in with Pucuk Kacang Goreng Cili (Pea Shoots Stir Fried With Chilli). Sounds insanely totally joyous isn't it? I believe so (Malaysian Fried Chicken, Prawn Petai Sambal, Ikan Masak Kicap & Sambal Ikan Bilis).


Ingredients
3 cups pea shoots - rinse and pat dry.
2 tbsp tiny anchovies - soak for 10 mins and drain out excess water.
Lime juice -as needed
1 tsp sugar (optional)
3 tbsp oil
Salt to taste (if needed)

For the chilli paste
1 small piece belacan - roasted
5 shallots
1/2 inch ginger
4-5 dried red chillies
** pound/blend these ingredients together.

Method
In heated oil, fry anchovies, remove and keep aside.
Add chilli paste, fry and stir till aromatic and oil splits.
Put in shoots, sugar, lime juice and salt.
Increase the heat and fry till a texture you prefer.
Add fried anchovies, stir again and remove from heat.
Trend alongside "nava-k", possibly on every other social media please. Your support is my success. Thank you everyone.

  4. Hi Nava, this is interesting. I have yet to try pucuk kacang with cili and belacan. Just the look of it, I know that I must give this a try. I usually stir fry this with baby anchovies or shredded dried scallop. Just our usual Chinese stir fry. However, your version definitely add that extra oomph to this dish; cili + belacan = yummy!

  13. Pea shoots are more colorful than bean sprouts .I saw bean sprouts not pea shoots .Looks so yummy ..
